PEACHY KEEN WINE COCKTAIL
A bushel of peaches gave me a reason to create a wine cocktail. I meant to serve it with our meal, but we "taste-tested" it while grilling. -Katie Ferrier Gage, Houston, Texas

Steps:
- In a large saucepan, combine sugar, water and ginger; bring to a boil. Reduce heat; simmer 10 minutes. Cool completely. Pour syrup through a strainer into a covered container; discard ginger., Place liqueur and 1/4 cup ginger syrup in a blender. (Cover and refrigerate remaining syrup for another use.) Add peaches; cover and process until smooth., Transfer mixture to a 2-qt. pitcher; stir in wine. Serve over ice, topping with ginger ale. If desired, serve with mint and peach slices.

The Peachy Keen is a complex, yet refreshing cocktail with the peach jam bringing out the sweetness in the bourbon and the aged tequila adding some nice earthy complexity.

- Heat the peach juice, brown sugar and four cinnamon sticks in a very large pot until boiling. Reduce the heat and simmer for 3 minuters.
- Remove the cinnamon sticks and add the peach schnapps. Serve in individual glasses with additional cinnamon sticks and peach slices.

PEACHY KEEN COBBLER
Out of all the cobblers I have tried, this is my favorite! I got this from one of my sisters, and changed it a litttle. Sometimes I add raspberries or blueberries, etc.

Steps:
- Preheat oven to 350°F.
- Place peaches in bowl, add 1 cup sugar. Stir and set aside for 30 minutes.
- Meanwhile, sift all dry ingredients together in another bowl.
- In separate bowl, add vanilla to milk. Stir dry ingredients into milk mixture.
- Melt butter and add to milk/flour mixture. Place peach/sugar mixture in 11"x 8" baking dish. Pour batter over top.
- Bake at 350*F. 30 minutes. Then turn up to 400*F. and bake another 15 minutes.
- Enjoy!

- Heat oven to 350°F Spray a 7x11-inch tart pan with butter-flavored cooking spray.
- Cut 1-inch square notches in the corners of the dough. Press 5 sheets of the phyllo into the pan; fold edges over toward the center of the pan. Spray dough with cooking spray; sprinkle with 1 teaspoons cinnamon-sugar, repeat. Press phyllo against sides of tart pan to secure.
- Bake 10-15 minutes, until golden brown. Cool toss fruit slices with remaining cinnamon-sugar, spoon yogurt into shell, top with fruit. In saucepan, over medum heat melt preserves and brush on top of fruit.

Ye'll be feelin' Peachy Keen after 'tis drink. Make a virgin version usin' a drop or a pair 'o rum extract 'n peach juice from th' canned peaches to equal 1/4 cup. Thank ye fer enjoyin' me feel jolly drink. Oh you ask why Hornswaggle because the canned peaches make it easy. Hornswaggle=cheat Also the blender makes it a cheating way so you don't have to muddle the goods. Woe ye all had as much a ruckas as I did wit' 'tis Contest? Raiders 'o th' Lost Pantry Cookin' Contest If ye didnt maybe ye need a drink? Yo-ho-ho and a bottle of rum!

- In a medium pan, boil sugar and 2 cups water for 3 minutes.
- Cool.
- In large non-metal container (a 1 gallon ice cream bucket works well), combine sugar-water mixture, concentrates, 3 cups water, schnapps, and lemon juice.
- Cover.
- Put in freezer until frozen. (about 4 hours).
- Before serviong, stir up.
- Spoon 1/2 cup slush mixture in a glass.
- Stir in 1/4 cup ginger ale, lemon lime soda, or slice. Or to taste.
