BASIL LEMON BUTTER CREAM SAUCE
This is a sauce recipe that was a frequent complement to chicken and fish during my study abroad residence experience with a french family in the Loire Valley region. Cream sauces are very popular paired with white and rosé wines in this geography, and this goes well over a thinly sliced breast of chicken, or a flaky whitefish. Although the sauce itself is somewhat fattening, if used conservatively it's actually a light and refreshing compliment to poultry and fish in the summer. If you absolutely feel the need to tone down the fat, be careful as you don't want the sauce to become too thin as it won't coat as nicely. Enjoy!

Steps:
- For preparation, juice the lemon into a ramekin or small mug, removing the seeds. Mince fresh basil leaves until really finely chopped.
- In a saucepan, heat butter over medium temperature until melted. Gently add heavy whipping cream while stirring with a whisk and bring to a low boil while constantly stirring. Slowly add lemon juice while stirring consistently until blended. Add chicken bouillon, basil, and pressed garlic and continue to stir until chicken bouillon is dissolved. Reduce heat to low and serve by lightly drizzling sauce with a spoon over fish or chicken.

BASIL CREAM SAUCE
After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

BASIL, PARMESAN AND CASHEW DIP
I'm totally addicted to this dip. It's a copycat of the current dips that are quite expensive to buy in the delis. It's fantastic served with rice crackers or used in your cooking as a pesto sauce. It's fantastic on pasta, chicken or fish.

SARASOTA'S SIMPLE YOGURT, BASIL, LEMON DIPPING SAUCE
This is so easy and quick. I made this for lunch today to go with steamed artichokes which I made with Recipe #332641. I was extremely short on time and almost canceled making the artichokes, but found this. What a great way to cook them in just minutes. And they were perfect. Now the sauce is a long time favorite which is just easy. It is wonderful on a vegetable platter, also with fried vegetables as a lighter fresh sauce, grilled asparagus as an appetizer, and of course my "chokes." What a nice light appetizer. There was 4 of us and we ate quite a bit, but I love to make the whole batch and during the week I will add some with steamed vegetables. This is also a nice condiment on soups (my favorite is pea soup), in pita pockets. So don't throw the leftover out.

Steps:
- Yogurt -- The best way to do this if you have time, is to put the yogurt in a piece of cheesecloth in a strainer or colander and then in a small bowl over night (wrapped with saran wrap. This allows the sour cream to drain, so the dip isn't wet or runny.
- Personally, I had no time, but I did buy the greek yogurt which is a bit thicker, mixed everything together and enjoyed. Also, I have used this with just everyday yogurt and did not take the time to let it set over night and it was fine.

- Marinate the pork: In a food processor, add turmeric, ginger, onion, garlic, fish sauce and coconut oil. Blend well. (If you do not have a food processor you can do this in a mortar and pestle or just chop up finely instead) In a sealable baggie or sealed container add your sliced pork tenderloins pieces and add the turmeric marinade and mix well, cover and place in the refrigerator for up to overnight or at least one half hour marinade time.
- Make Thai Basil Dipping Sauce: In a small bowl add chopped Thai basil (or regular basil), chopped cilantro, fish sauce, brown sugar or sugar alternative, lime juice, garlic and chili to taste. Set Aside or place in refrigerator up to 24 hours in advance.
- Soak your wooden skewers for at least 1/2 hour. Skewer the pork lengthwise like you are using the wooden skewer to sew on the pork. Spread the pork slices flat so they are not overlapping. Depending on the size of your skewer and pork slices, maybe only 2 slices of pork tenderloin per skewer.
- Prepare and oil your grill and preheat. Cook your turmeric pork skewers for about 3 minutes on each side until nicely charred and cooked through.
