Creamy scrambled eggs in potato nests are easy to make and include all the elements of a hearty breakfast in one neat little package.

1-1/2 lbs Idaho potatoes (peeled and coarsely shredded (see notes))
Salt and freshly ground black pepper
6 tablespoons butter (divided)
4 large eggs
4 strips bacon (cooked and crumbled)
1 tablespoon fresh chives (chopped)

Steps:

  • Preheat oven to 400°F and lightly coat a standard-sized muffin tin with nonstick spray.
  • Place the shredded potatoes in a mixing bowl and season with salt and pepper.
  • Melt the butter in a small microwave-safe bowl, add 4 tablespoons to the shredded potatoes and combine well.
  • Divide the potatoes between the 12 muffin cups and, using your fingers, press them firmly to the sides and bottom to form little nests.
  • Bake until golden brown and crisp, 20 to 25 minutes.
  • Brush a little of the melted butter onto a nonstick pan and whisk the rest together with the eggs for about 30 seconds.
  • Place the pan over medium-low heat and after about a minute, add the eggs.
  • Leave the eggs undisturbed and wait for them to set (1/2 to 1 minute) before using a heat-proof spatula to begin gently pushing them from the edges of the pan toward the center.
  • Continue the process until the eggs have turned from a liquid to large, soft, shiny curds then remove from the heat immediately and set aside.
  • Do not stir, flip or break the eggs up into small curds.
  • Remove the potato nests from the oven and allow to cool for 5 minutes.
  • Carefully transfer the nests to a serving platter and spoon a portion of scrambled eggs into each one.
  • Top with crumbled bacon and a sprinkling of chives.

Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

6 to 8 medium russet potatoes
Salt and ground pepper
Nonstick cooking spray
24 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Bake the potatoes until tender, 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.
  • Adjust the oven temperature to 450 degrees F. Spray two 12-hole muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin hole. Use your fingers to gently press down the sides and bottom in each muffin hole to make a nest. Spray again with cooking spray. Then bake for 15 to 20 minutes. Watch and make sure they do not burn.
  • Allow the nests to cool and lower the oven temperature to 400 degrees F. Then crack an egg into each nest. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.

1 (3 1/2 cup) bag frozen hash brown potatoes, defrosted (we used Simply Potatoes)
1/3 cup vegetable oil or 1/3 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
6 eggs
2/3 cup milk
1/2 cup finely diced onion
1/3 cup finely diced bell pepper
3/4 cup diced cooked breakfast sausage
shredded cheddar cheese
chopped parsley (to garnish) (optional)

Steps:

  • Heat the oven to 400°.
  • In a large bowl, toss together the potatoes, 1/4 cup of the oil or butter, salt, and pepper.
  • Spoon about 1/3 cup of the potato mixture into each cup of a 12-serving muffin tin. Press the mixture into the bottom and up the sides of each cup, then bake until golden brown, about 30 to 35 minutes.
  • Remove the nests from the oven and allow them to cool.
  • Meanwhile, whisk together the eggs and milk.
  • Heat a large nonstick saut? pan over medium-high heat. Add the remaining oil or butter to the pan and heat.
  • Add the onions and peppers to the pan and saute until both are soft and the onions are slightly golden, about 2 to 3 minutes.
  • Add the sausage and cook until heated through.
  • Add the egg mixture and stir until the eggs have set and small curds have formed.
  • Season with salt and pepper to taste.
  • Remove the potato nests from the muffin tin and place them on an ovenproof platter or cookie sheet.
  • Fill each cup with some of the egg mixture, top with a sprinkling of the cheese, and place the nests in a 375° oven until the cheese is melted, about 2 to 3 minutes.
  • If you like, garnish each nest with a little parsley. Serve warm.

2 cups refrigerated hash browns
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 tablespoon onion, grated
1/2 tablespoon parsley
1 teaspoon butter, melted
3 tablespoons onions, minced
3 smoked link sausage, sliced
2 tablespoons red peppers, diced
2 eggs
2 tablespoons cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon parsley, chopped fine
1 tablespoon scallion, sliced thin
1/2 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 400 degrees.
  • Spray 4 cups of a regular size muffin tin with a butter-flavored cooking spray.
  • Combine the hash browns, salt, pepper, onion, parsley, and butter and add 1/2 cup of mixture to each muffin cup, pressing up the sides to top of cup.
  • Bake for 25 minutes.
  • While hash browns are in oven, sauté onions, sausage and red pepper for three minutes; cool.
  • Mix the eggs, cream, salt, pepper, parsley, scallions, and cheese.
  • Add sausage mixture and pour into hash brown cups.
  • Turn oven down to 350°F, and bake for an additional 20-25 minutes or until eggs are set.
  • Cool slightly, run a thin knife around the hash brown cup and gently remove from muffin tin with a rubber spatula.
