3 cups peach nectar
1 (1-inch) piece ginger, smashed
1/2 lemon, juiced
4 cloves garlic, smashed
1/4 cup Dijon mustard
1 cup brown sugar
1 (14-pound) precooked ham
3 whole peaches

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, simmer together peach nectar, ginger, lemon juice, and garlic cloves. Simmer for 20 minutes.
  • Strain out ginger and garlic.
  • Prepare ham for glaze. Rub Dijon mustard and then brown sugar on the ham.
  • Pour glaze on bottom of pan and throw in sliced peaches for additional peach flavor.
  • Place ham in oven for 1 1/2 hours. Every 10 to 20 minutes glaze ham with the glaze from bottom of pan to keep moist.

One 7- to 8-pound bone-in spiral cut ham
1 cup orange marmalade
1/2 cup bourbon
1/2 cup maple syrup
2 tablespoons unsalted butter
Pinch ground cinnamon
Pinch ground cloves
Nonstick cooking spray, for the foil

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a small knife to lightly score the fat in a crosshatch pattern, taking care not to cut into the meat. Add about 1 cup of water to the bottom of the pan. Bake the ham for 45 minutes.
  • Meanwhile, make the glaze. Combine the marmalade, bourbon, maple syrup, butter, cinnamon and cloves in a small saucepan over medium-low heat. Cook, stirring often, until the glaze is thick and syrupy, 20 to 25 minutes.
  • Brush the ham with about half of the glaze and return to the oven. Roast, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 45 minutes to 1 hour more. (The ham will get very brown, but if the glaze starts to burn, tent with a piece of foil greased with cooking spray. Let rest, tented with a piece of greased foil, for about 10 minutes before carving.

  • Trim fat and rind from ham. Score outside of ham in a diamond pattern; stud with cloves. Place ham on the rack of a broiler pan or roasting pan coated with cooking spray. Pour 1 cup water into pan; place rack in pan. Brush ham with 1/4 cup preserves mixture. Bake at 325 for 2 hours or until a thermometer registers 140, basting ham with remaining preserves mixture every 30 minutes. Transfer ham to a platter; let stand 15 minutes. Discard cloves before serving.

1 (28 ounce) can peach halves in syrup, reserving 1/4 cup syrup from peaches
1 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon ground cloves

  • Bake ham, fat side up, in a roasting pan, according to the timetable below.
  • Forty-Five minutes before the cooking time is up, remove ham from oven and pour off fat drippings.

1 fully cooked bone-in ham (6 pounds)
1 tablespoon whole cloves
1-1/2 cups packed brown sugar
3 tablespoons cider vinegar
1/4 to 1/2 teaspoon ground cloves

  • Drain peaches, reserving syrup (save peaches for another use). Place ham on a rack in a shallow roasting pan. 1/2 cup molasses
1/2 cup Bourbon
1/4 cup orange juice
2 tablespoons Dijon mustard
1 half ham, smoked, 6-8 lbs

Steps:

  • Microwave honey and molasses in a 1 quart glass dish at high 1 minute. Whisk to blend. Whisk in bourbon, juice, and mustard.
  • Remove the skin and fat from the ham. Place ham in a lightly greased 13x9 inch pan. Make 1/4 inch cuts in ham in a diamond pattern. Pour glaze over ham.
  • Bake on the lower oven rack at 350° for 2 to 2 1/2 hours or until a meat thermometer inserted into thickest portion registers 140°, basting every 15 minutes with glaze.
  • Remove from pan, reserving drippings. Cover ham, and chill, if desired. Chill reserved drippings.
  • Remove and discard fat from the drippings. Bring drippings to a boil in a small saucepan. Serve warm with the ham.

⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.

  • Preheat your smoker to 250 degrees F. Place the ham cut side down on an elevated roasting rack on top of a rimmed baking sheet.
  • Smoke your ham, uncovered, for 20 minutes per pound or until the internal temperature of your ham reaches 135 degrees F. In a small bowl or food safe spray bottle, combine the bourbon and peach juice for the mop sauce. Spritz or mop the ham every 30 minutes during the smoking period.
  • When your ham is near the correct internal temperature, prepare your glaze. Combine all ingredients in a medium saucepan over medium heat. Bring to a boil for 2-3 minutes. Set aside and allow to cool slightly.
  • Coat the ham on all sides with the glaze. At this point, you have three options for caramelizing the glaze on the outside of the ham. You can increase the heat on your grill to 400 degrees and roast the glazed ham for 8-10 minutes or until the glaze starts to bubble. For another option, you can turn your oven on to broil and place the ham in the oven for 3-4 minutes to caramelize the glaze. Finally, you can brush on the glaze and caramelize the crust by using a high output blow torch. For all of these options, be careful not to burn the sugar on the outside of the ham and reapply the glaze as needed to form a nice crust.
