ENGLISH PLAIN SCONES



English Plain Scones image

Simple english scones. Great straight from the oven. Cut them open, butter them. Add strawberry jam if you like. For a super indulgent english afternoon tea add clotted cream. Makes 6-8 scones depending how thin you roll the dough.

40 g butter
225 g self-raising flour
25 g sugar
2 pinches salt
5 fluid ounces milk

Steps:

  • Put the flour and salt in a bowl then rub in the butter.
  • Add the sugar.
  • Add the milk and mix to form a dough. You may want to mix with a knife as the dough gets very sticky as you add the milk.
  • Flour a board ready for the dough. EXTRA TIP: Using rice flour on your board at this stage will make your scones wonderfully crisp on the outside.
  • Knead the dough lightly on the board.
  • Roll with floured rolling pin (or press with your hand) the dough to about 2cm thick.
  • Cut rounds from the dough with a cutter (or use a glass with edges dipped in flour if you don't have a round cutter).
  • Place the rounds on greaseproof paper lightly dusted with flour on a baking sheet/tray. Or use a greased tray.
  • Gather up the odd bits of dough and lightly knead them together. Press/roll to 2cm thick again on your floured board, cut rounds and repeat until all the dough is used.
  • Optional: Brush the tops of the scones with a little bit of milk.
  • Bake in pre-heated oven for 12-15 minutes until they have risen and start to become golden. Gas mark 7, 220c.

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 cup cold butter, cubed
1 cup raisins
1/2 cup milk
1 large egg
Additional milk

Steps:

  • In a large bowl, combine the flour, sugar and baking powder. Cut in butter until mixture resembles fine crumbs. Stir in raisins. Beat milk and egg; add to dry ingredients, stirring lightly. , Turn onto a lightly floured surface; roll to 1-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Bake at 425° until golden brown, 10-15 minutes. Serve warm.

3 cups all-purpose flour
1/2 cup butter, room temperature
4 teaspoons baking powder
1/4 cup sugar
1 1/4 cups milk
1 pinch salt

Steps:

  • Combine flour and baking powder.
  • Cut in the butter until crumbly and butter is pea-sized or smaller.
  • Stir in the sugar and salt.
  • Stir in the milk.
  • Stick the dough together and turn out on a lightly floured surface.
  • Knead 4-5 times and roll out to 3/4 inch thick.
  • Using a 2 inch round cookie cutter, cut out as many scones as you can. Gather the scraps and roll out again. Cut out as many scones as you can. With the remaining scraps, form a ball and gently cut an "X" on the top.
  • Place all scones on an un-greased baking sheet. Brush the tops with an egg wash.
  • Bake at 450F fro 8-12 minutes until the tops are golden brown.

1 egg yolk
jam, as needed

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • In a large bowl, rub together the self-raising flour and cubed butter until you form fine crumbs.
  • Mix in the sugar, baking powder, and salt, and make a well in the middle.
  • Pour in the milk and gently mix together until just combined.
  • Tip the dough onto a floured surface and knead for about a minute. Be careful not to over-knead the dough.
  • Using a round cookie cutter or the rim of a glass, cut circles into the dough that are about 1-2 inches thick.
  • Place onto a baking tray lined with parchment paper and coat the tops of the scones with the egg yolk.
  • Bake for 12 minutes.
  • Serve with clotted cream and jam.

350g self-raising flour, plus more for dusting
1 tsp baking powder
85g butter, cut into cubes
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
squeeze lemon juice (see tips below)
beaten egg, to glaze
jam and clotted cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Tip the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, then mix.
  • Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the caster sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside for a moment.
  • Put a baking tray in the oven. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife - it will seem pretty wet at first.
  • Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep. Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
  • Brush the tops with a beaten egg, then carefully arrange on the hot baking tray. Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few minutes to refresh.

1 ¾ cups all-purpose flour
4 teaspoons baking powder
¼ cup white sugar
⅛ teaspoon salt
5 tablespoons unsalted butter
½ cup dried currants or raisins
½ cup milk
¼ cup sour cream
1 egg
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Sift the flour, baking powder, sugar and salt into a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until it is in pea sized lumps. Stir in the currants. Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended. Overworking the dough results in terrible scones!
  • With floured hands, pat scone dough into balls 2 to 3 inches across, depending on what size you want. Place onto a greased baking sheet, and flatten lightly. Let the scones barely touch each other. Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.
  • Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half. Serve with butter or clotted cream and a selection of jams - or even plain.

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons cold butter, cubed
2 large eggs, lightly beaten
1/3 cup plus 1 tablespoon heavy whipping cream, divided
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Whisk the eggs, 1/3 cup cream and vanilla; stir into crumb mixture just until moistened. Turn onto a floured surface; gently knead 6-8 times., Pat dough into a 6-in. circle. Cut into eight wedges. Separate wedges and place 1 in. apart on an ungreased baking sheet. Brush tops with remaining cream. , Bake at 400° for 12-14 minutes or until browned. Remove to a wire rack. Serve warm.

This is my go-to recipe whenever I need to rustle up baked goods quickly. Fast and easy to make, these scones are delicious warm or cold and for decadence split and spread with butter or with a dollop of sour cream or creme fraiche. They make a wonderful accompaniment to a bowl of soup, especially a nice tangy tomato soup.

Number Of Ingredients 8

1 lb all-purpose flour, with 8 teaspoons of baking powder added
4 -5 ounces butter (use margarine at a pinch but butter tastes better)
1 teaspoon red pepper flakes (can be omitted)
4 ounces grated parmesan cheese (use the stuff that comes ready grated not your good parmesan)
4 ounces extra strong cheddar cheese, grated
1/2 teaspoon salt
2 eggs, beaten
sparkling water or soda water, to mix

Steps:

  • Rub the butter into the flour until it resembles breadcrumbs and no lumps of butter remain.
  • Add the two types of grated cheese, the salt and the hot pepper flakes.
  • make a well in the centre and add the beaten eggs with the splash of soda or mineral water and mix all ingredients together until a soft dough is formed. Add a little more water if necessary but take care not to make the dough too sticky.
  • Place the dough on a clean floured surface and knead it very slightly until it is smooth.
  • Roll out with a rolling pin until approximately 3/4 inch thick, then use a round cookie cutter to cut out rounds.
  • Place the rounds on a baking sheet.
  • Bake at 200 degrees celsius for around 15 to 20 minutes or until the scones are golden brown on top.
  • Cool on a cooling rack.

1 teaspoon cream of tartar
½ teaspoon baking soda
1 pinch salt
