This Savoy Cabbage Salad combines fresh, crunchy savoy cabbage with corn, peas, and a creamy, healthy homemade ranch dressing - for a quick, simple, flavorful side salad to tons of meals! It's also a delicious savoy cabbage slaw (with a twist) to bring to picnics and potlucks, too!

1 lb savoy cabbage ((4 cups) finely shredded)
2 cups corn (canned, cooked or frozen (thawed))
1 cup peas (fresh or frozen (thawed))
1 cup plain regular or Greek yogurt (2+% fat)
2 tbsp water or milk (if using Greek yogurt)
1 tbsp white, white wine or apple cider vinegar
1/2 cup fresh dill (finely chopped)
1 small garlic clove (grated)
1/2 tsp onion powder
3/4 tsp salt
1/2 tsp Ground black pepper

Steps:

  • In a small bowl, add yogurt, water (if using Greek yogurt), vinegar, dill, garlic, onion powder, salt and pepper. Stir well and set aside.
  • In a large bowl, add savoy cabbage, corn and peas.
  • Pour dressing over vegetables, gently toss with tongs until combined.
  • Best served cold.

1 head Savoy cabbage
4 scallions
1/2 bunch fresh cilantro, torn
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons sugar
2 limes
Kosher salt and freshly ground pepper

Steps:

  • Shave the cabbage with a sharp knife or mandoline so you have thin ribbons. Cut the scallions long and on the bias so you have pieces similar in shape to the cabbage. Toss the cabbage, scallions and cilantro in a large salad bowl.
  • Make the dressing by combining the sour cream, mayonnaise, sugar and the zest of the limes in a medium bowl. Season with salt and pepper and finish with a squeeze of lime juice. Pour the dressing over the cabbage mixture and toss to combine.

1 teaspoon Dijon mustard
1/2 teaspoon salt
2 tablespoons apple cider vinegar
1 tablespoon applesauce
1/3 cup olive oil
4 cups savoy cabbage, sliced as thinly as possible
1 large bunch red radishes
3 or 4 Granny Smith apples
1 lemon, juiced
1 teaspoon mustard seeds
1/2 cup walnuts, toasted and chopped
Salt and black pepper to taste

Steps:

  • Put cabbage in a large bowl. Using the shredding blade of a food processor or a box grater, shred radishes until you have 1 cup. Add to bowl.
  • Core apples and shred in food processor or with box grater until you have 2 cups. Put shredded apple into a bowl filled with lemon juice and 2 cups water, to prevent apple from browning.
  • When ready to serve, gently squeeze water from apple, add to cabbage and toss slaw with vinaigrette. Add mustard seeds and toss again. Sprinkle walnuts on top of slaw. Season with salt and pepper.

Steps:

  • Combine red onion and vinegar in a small bowl; add ½-1 chile, depending on the heat of your chile and your preference; season with salt and pepper. Let sit 10 minutes. Whisk in garlic, yogurt, oil, and lemon zest and juice; set dressing aside.
  • Cut cabbage in half through core. Remove core; discard. Tear leaves into 2" irregular pieces and place in a large bowl. Season with salt and massage and scrunch firmly with your hands for a minute or so to soften. Pour reserved dressing over cabbage and toss with your hands to coat. Season with more salt if needed (cabbage can take a good amount of salt).
  • Toss in dill just before serving.
  • Do Ahead: Dressing can be made 12 hours ahead; cover and chill. Slaw (without dill) can be made 1 day ahead; cover and chill.

Extra-virgin olive oil
6 slices thick cut bacon, cut into lardons
2 red onions, julienned
Kosher salt
3 carrots, peeled and grated
1 medium head savoy cabbage, thick ribs removed, shredded
1 1/2 cups apple cider vinegar
3 tablespoons mustard seeds
1 bundle fresh thyme, tied with string
4 bay leaves
1/4 cup to 1/2 cup apple cider
1 small bunch fresh chives, cut into 2-inch pieces

Steps:

  • Coat a large, wide pot with olive oil and add the bacon. Render the bacon over medium heat. Add the red onions, season with salt, and sweat for 4 to 5 minutes. Add the carrots and stir to combine. Add the cabbage, cider vinegar, mustard seeds, thyme, and bay leaves. Season with salt and taste. This will taste very vinegary but the salt will help offset the sharpness of the vinegar.
  • Reduce to a simmer, cover, and cook until the cabbage is very soft, 15 to 20 minutes. Remove the lid, add the apple cider, and simmer until most of the vinegar has absorbed but the cabbage is still moist but not soupy, an additional 10 minutes. Serve right away or let it hang out in the refrigerator. It will probably be better in a couple of days. Garnish with chives.
