SAVORY WAFFLES SIX WAYS
Doctor up basic waffle batter to make these savory versions.

- Start with recipe for Top Notch Waffles:
- Whisk 2 cups flour, 1/4 cup confectioners' sugar, 2 teaspoons baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda in a large bowl. Whisk 1 1/2 cups milk, 1 1/2 sticks cooled melted butter and 2 eggs in a separate bowl until combined; pour into the flour mixture and stir until just combined. (A few small lumps are fine.) Preheat a waffle iron; lightly brush with butter, then fill with batter three-quarters full and cook until the waffles are golden and crisp.
- Sesame, Scallion and Sausage
- Add 1 bunch thinly sliced scallions, 3 thinly sliced dried Chinese sausages and 2 teaspoons each toasted sesame oil, sesame seeds and grated ginger to the batter. Top the waffles with a fried egg.
- Smoked Salmon and Chives
- Reduce the milk to 1 1/4 cups and add 1/2 cup sour cream. Add 4 ounces chopped smoked salmon, 1/4 cup minced chives and 2 tablespoons chopped tarragon to the batter. Top the waffles with more sour cream and chives.
- Bacon and Almond
- Add 8 chopped cooked bacon slices, 1/2 cup finely chopped marcona almonds and 2 teaspoons each ancho chile powder and chopped thyme to the batter. Top the waffles with maple syrup.
- Goat Cheese and Kale
- Add 4 ounces crumbled goat cheese, 1 cup finely chopped kale, 2 tablespoons chopped mixed herbs (parsley, basil and dill), 1 teaspoon grated lemon zest and 1/4 teaspoon cayenne pepper to the batter. Top the waffles with arugula salad.
- Chili Cornbread
- Replace 1 cup of the flour with cornmeal. Add 1 cup each thawed frozen fire-roasted corn and shredded pepper jack cheese, 1/4 cup chopped cilantro and 1 minced seeded jalapeno to the batter. Top the waffles with honey and hot sauce.
- Salami-Provolone
- Add 1/2 cup each shredded provolone and grated parmesan, 2 ounces finely chopped salami and 1 teaspoon pepper to the batter. Top the waffles with ricotta and olive oil.
SAVOURY SALMON AND THREE CHEESE WAFFLES
The basic waffle recipe is from my mother, I believe its an edited version from the Joy of Cooking's waffle recipe. Its a flexible recipe, but savory waffles are always delicious, they're like sandwiches all in one! Especially when you bite into one and the cheese is gooey and they're salty from the smoked salmon.

- Turn on your waffle iron so it gets hot in preparation for your waffles. I use pam oil spray to coat the iron between each waffles but butter or anything works as well.
- Melt the butter completely, dice the salmon, and chop/grate the cheese. You can really use any kind of cheese you prefer, but this is just the kind of cheese I usually use and is readily available.
- Sift and whisk the dry ingredients in a large bowl.
- Blend the wet ingredients in a medium sized bowl.
- Slowly pour the wet ingredients into the dry and whisk with a few strokes, don't over beat. When fully blended add the cheeses and salmon.

SMOKED SALMON WAFFLES

- Preheat your waffle iron. If you want to hold the finished waffles until serving time, preheat your oven to 200 degrees.
- Melt the butter and reserve. In a large bowl, whisk together the flour, baking powder, salt, and pepper. In another bowl, whisk together the milk and eggs until well blended. Pour the liquid ingredients over the dry ingredients and whisk gently to combine. Fold in the salmon, onion, dill, and melted butter.
- Lightly butter or spray the grids or your iron, if needed. Brush or spray the grids again only if subsequent waffles stick.
- Spoon out 1/2 cup of the batter (or the amount recommended by your waffle maker's instructions) onto the hot iron. Spread the batter evenly over the grids with a metal spatula or wooden spoon, stopping right before the edge. Close the lid and bake until golden and crisp. Serve immediately or keep the waffles, in a single layer, on a rack in the preheated oven while you make the rest of the batch.
- Serve with either a scoop of cream cheese and a sprinkling of chopped scallions, or a generous spoonful of creme fraiche (or sour cream) and some salmon caviar.
"EVERYTHING" SAVORY POTATO WAFFLES WITH SMOKED SALMON

- For the "everything" seasoning: In a small bowl, stir together the sesame seeds, poppy seeds, dried garlic, dried onion and salt. Set aside.
- For the waffles: Coarsely grate the potatoes on a box grater. Wrap the grated potatoes in a clean kitchen towel and squeeze out the excess moisture. Whisk the flour, baking powder, salt and 1 tablespoon of the "everything" seasoning together in a large bowl. Add the potatoes, eggs, milk, butter and scallions; stir to combine.
- Preheat a waffle iron. Using 1/3 cup batter per waffle, cook the waffles for about 4 minutes (or according to manufacturer's directions). With an offset spatula, flip the waffles and cook an additional 2 minutes, or until they're a deep golden brown. As you go, transfer the cooked waffles to a baking sheet and keep warm in a low oven.
- To serve: Top the waffles with smoked salmon and a dollop of creme fraiche, sprinkle with capers and "everything" seasoning, and garnish with a dill sprig.

- Heat the waffle maker according to manufacturer's instructions. Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, paprika, mustard powder, chives and season with salt and black pepper. Stir in the grated cheese then make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon.
- Heat oven to 180C/160C fan/gas 4. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up, placing your finished waffles onto a baking tray as you go.
- Once all the waffles are made, transfer to the oven for 5 mins to warm through and crisp. Delicious served with wilted spinach and a fried egg.

- Sift together flour, baking powder, and baking soda three times; set aside.
- In a medium bowl, whisk together eggs, 1 1/2 cups buttermilk, and butter until well combined. Add flour mixture and whisk until smooth. Batter should have a pudding-like consistency. If necessary, add more buttermilk, 1/4 cup at a time, until pudding-like consistency is reached. Stir in cheese, sugar, and salt; season with pepper.
- Preheat a waffle iron. Add 1/4 to 1/2 cup batter to heated waffle iron; close and cook until dark golden brown, 5 to 6 minutes, depending on your waffle iron. Repeat process with remaining batter and serve immediately.
BEST BASIC WAFFLE
After making these waffles, my sister said I had to post this recipe. We have tried many waffle recipes and this is our favorite. These waffles are light and crispy. I obtained the original from the manual of my first waffle iron many years ago. When my kids were little, it wasn't unusual for me to make a batch a couple times a week.
