A rich and creamy fish pie that's packed with hidden vegetables like spinach and tomato - a family bake

500g leaf spinach
butter, for greasing
about 500g (2 fillets) smoked haddock, skinned and cut into 4 portions
12 cherry tomatoes
200ml double cream or crème fraîche
juice ½ lemon
100g cheddar cheese, grated
2 spring onions, sliced
small grating nutmeg
handful dried breadcrumbs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place the spinach in a large colander in a sink and carefully and slowly pour over a kettleful of hot water to wilt it. Cool again under the cold tap then squeeze out as much liquid from the spinach as possible. Butter a medium gratin dish. Roughly chop the spinach and scatter evenly over the base of the dish. Season the spinach lightly with salt and pepper and lay the haddock fillets, skinned side down on top. Nestle the tomatoes among the haddock fillets.
  • Mix all the ingredients for the topping, except the breadcrumbs, in a small bowl and season with lots of pepper and a little salt. Dollop and spread the mixture over the fish and spinach. Scatter everything with the breadcrumbs and bake for 30 mins until bubbling and golden. If you like things really grilled finish for a few mins under a hot grill. Serve straight from the dish.

In need of a comforting dinner? Cook this easy fish and cheese gratin recipe for a low calorie midweek meal to feed the whole family

600g smoked haddock
350ml whole milk
1 onion, peeled and cut into quarters
6 black peppercorns
650g Charlotte potatoes, peeled and sliced into thick rounds
500g baby spinach, washed
50g butter, plus extra for the baking dish
3 tbsp plain flour
100g emmental, grated
100g mature cheddar, grated

Steps:

  • Put the haddock, milk, onion and peppercorns in a deep, lidded frying pan. Bring the milk to a simmer then put on the lid and turn off the heat. Leave for 10 minutes, then take out the haddock and flake into large chunks, discarding any skin and bones. Strain the milk into a jug.
  • Drop the potato slices into boiling water and cook for 7-10 minutes or until tender. Drain well.
  • Wilt the spinach in a large pan over a medium heat with a splash of water. Tip into a colander and cool, then use your hands to squeeze out as much liquid as possible. Tip onto doubled-up kitchen paper and pat as much water out as you can. This is important to prevent a puddle forming at the bottom of the dish. Chop the spinach then toss with lots of seasoning.
  • Heat the butter in a pan and, when foaming, stir in the flour. Stir for 3-4 minutes or until the mix has a nutty aroma. Gradually whisk in the strained milk a little at a time until you have a sauce. Simmer for 3-4 minutes then tip in the cheeses and stir until melted.
  • Heat the oven to 220C/fan 200C/gas 7. Butter a large ceramic baking dish and put the spinach in the bottom. Top with the haddock chunks and potatoes, then spoon over the sauce. Bake for 15-20 minutes or until the sauce is bubbling and the top golden. Serve with salad, if you like.

2 medium onions, halved lengthwise, thenthinly sliced lengthwise
2 tablespoons unsalted butter
1/2 lb smoked haddock fillet (finnan haddie), thawed if frozen, shredded with your fingers into 1/2-inch pieces, discarding any tough parts
2 tablespoons chopped fresh parsley
1 1/2 lb celery root (sometimes called celeriac), peeled with a knife
2 lb large potatoes (preferably russet or Yukon Gold), peeled
2 cups heavy cream
1/2 cup whole milk
1 teaspoon salt
1/4 teaspoon black pepper
Special Equipment
a Japanese Benriner* or other adjustable-blade slicer; a 13- by 9- by 2-inch or other shallow (2 1/2- to 3-quart) glass or ceramic baking dish

Steps:

  • Preheat oven to 375°F.
  • Cook onions in butter in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened and just beginning to brown, 7 to 8 minutes. Remove skillet from heat and stir in haddock, 1 tablespoon parsley, and salt and pepper to taste.
  • Halve or quarter celery root to fit slicer. Thinly slice potatoes and celery root (about 1/8-inch thick) with slicer. Layer one third of potatoes and celery root in buttered baking dish. Spread half of haddock mixture on top, then repeat layering with half of remaining vegetables, all of remaining haddock mixture, and then remaining vegetables. Stir together cream, milk, salt, and pepper and pour on top of gratin, then cover dish tightly with buttered foil.
  • Bake gratin in middle of oven until vegetables are just tender, about 1 hour. Uncover and bake, basting 2 or 3 times with pan juices, until top is golden, about 30 minutes more. Let stand 10 minutes, then sprinkle with remaining tablespoon parsley.

2 pounds haddock fillets
1 teaspoon salt
⅛ teaspoon ground black pepper
3 tablespoons butter
¼ cup minced onion
3 tablespoons all-purpose flour
1 teaspoon ground dry mustard
½ teaspoon salt
⅔ cup heavy cream
⅔ cup half-and-half cream
½ cup shredded sharp Cheddar cheese
½ cup shredded Monterey Jack cheese
¼ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.
  • Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.
  • In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.
  • Bake in preheated oven for 30 minutes, until brown and bubbly.

142 ml double cream
100 g gruyere, grated

Steps:

  • Preheat the oven to 190c/gas5. Cook the spinach in a large pan for a few minutes, until it wilts. Tip into a collander and remove excess water (press gently).
  • Put into an ovenproof dish or divide between 4 individual ovenproof dishes.Top the wilted spinach with the tomatoes and the smoked haddock.
  • Spoon the cream over the fish and season. Spirnkle with the cheese and back for around 20 minutes.

  • Scrub the potatoes clean. I never peel them as there’s so much goodness in the skin, but do as you prefer. Parboil them till almost cooked but still a little firm. You need to be able to slice them thickly so they need to remain a little undercooked. Drain and set aside.
  • Rub a teaspoon of butter around the inside of an ovenproof dish. Cut the haddock into cubes and place in the base of the dish, scatter with parsley and the finely sliced spring onion. Season with salt and pepper.
  • Heat the milk, cream and Dijon mustard in a pan till warm, and whisk to combine. Pour half this mixture over the fish.
  • Once the potatoes are cool enough to handle, slice them thickly. Arrange the potato slices over the fish and pour the remaining cream mix over the top. Season with a little salt.
