Steps:
- 1. Verser le sirop dans une casserole à fond épais pouvant contenir 2 litres (8 tasses). Déposer le thermomètre à bonbon sur le rebord, la sonde dans le sirop. 2. Porter à ébullition et amener le sirop entre 230 °F et 234 °F (110 °C et 112 °C). Compter environ 20 min. Ne jamais remuer pendant la cuisson. Retirer la casserole du feu et laisser tiédir quelques minutes. 3. Remplir un récipient en plastique ou en bois de neige ou de glace concassée. Étendre 15 ml (1 c. à soupe) de sirop épais sur la neige, attendre 15 s et rouler autour d'une petite palette en bois. Si le sirop épaissit trop, le remettre sur le feu doux.
