A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

1 tablespoon oil, or as needed
1 ¼ pounds lean ground beef
½ cup egg whites
⅓ cup chopped and drained oil-packed sun-dried tomatoes
3 ounces crumbled goat cheese, or more to taste
2 teaspoons sea salt
1 teaspoon steak seasoning
1 teaspoon dried parsley flakes
2 tablespoons liquid hickory smoke seasoning

Steps:

  • Lightly oil a large skillet and put over low heat.
  • Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
  • Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

Wanted to make a change to my hamburger patty and decided to try something different with ingredients that would surprise you and tastes delicious. There is no bun with this hamburger and it is accompanied with vegetables and plain salad.

1/4 lb ground beef
2 tablespoons red onions, diced
2 tablespoons green peppers, diced
2 tablespoons plain breadcrumbs
1 tablespoon low-fat yogurt (1%)
1 tablespoon orange juice
1 cup broccoli
1/2 cup iceberg lettuce
1 tablespoon Italian dressing, light
1 pinch garlic
salt and pepper

Steps:

  • Put all ingredients in a bowl; mix it all together and cook in a non-stick pan for 15 minutes. Turn over the hamburger after 7 minutes or depending on your stove heat. Keep on eye on your hamburger to make sure it is not under or over cooked. Cook your favorite vegetable on the side with a complimentary bed of iceberg lettuce with light Italian Dressing. Another time I tried a drizzle of light, 50 percent less calories maple syrup (table blend) on top of the hamburger which I thought the kids would love. It's a good way to get them to eat meat and it tastes really good. Not too much maple syrup as that is all you will taste. Makes 1 large hamburger.
  • Note: When it comes to spicing up this hamburger the list is endless. Add your favorite spice and you can even split to recipe and make 2 smaller hamburgers with different spices in each as maybe a family member would prefer it spicy. Just remember to split the measurements in half.

1 pound ground beef (I used 80/20 - fattier meat means a juicier burger!)
1/2 cup shredded Monterey jack cheese
1/4 cup BBQ sauce
1/4 teaspoon seasoned salt
pepper, to taste
1/4 teaspoon onion powder
3/4 cup mayonnaise
1/4 cup ketchup
1/4 cup pickle relish
2 Tablespoons Worcestershire sauce
5 hamburger buns (we like sesame seed buns)

Steps:

  • In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
  • Turn grill up to high and let it get hot.
  • Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
  • For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  • Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.

2 lbs ground round or 2 lbs ground sirloin
2 teaspoons salt
1/4 teaspoon pepper
1 1/3 cups red wine
1/2 cup medium onion, chopped
1 garlic clove, crushed
1 1/2 tablespoons butter
1 tablespoon lemon juice
1 tablespoon minced parsley

Steps:

  • Season meat with salt and pepper.
  • Combine wine, onion and garlic and cook until sauce is reduced to 2/3 cup.
  • Add butter, lemon juice and parsley.
  • Cool sauce, then blend into seasoned meat.
  • Mixture will be moist.
  • Shape into 8 patties.
  • Grill over hot coals.
  • Serve on buttered buns.

  • In a large bowl, add all of the ground beef. Use a large spoon to break it up, and then mix in the eggs. Mix until the eggs are fully incorporated to bring the ground beef mixture together.
  • Set up a workstation with parchment paper. Divide the ground beef into four equal portions. Roll each section into a ball, flatten into a patty, and then place onto the parchment paper. Create a well in the middle of each patty, divide the cheese, and then press it into the middle of the patty. Work the meat to cover the cheese. Place the patties in the fridge to cool and rest for 30 minutes.
  • While the patties are resting, slice the onion and tomato into thick slices. Mix the mayonnaise and Dijon mustard together in a small bowl and set aside.
  • Turn your grill on high. Remove the patties from the fridge to allow them to come up to room temperature just before grilling. Make sure the grill is very hot before adding your patties. Drizzle olive oil over each patty, and sprinkle with salt and pepper. Roll the sides of the patties to fully season every part of the meat.
