Fresh lime, cilantro, and smoky adobo gives these grilled cheese sandwiches serious kick.

2 tbsp. fresh lime juice
1 tsp. honey
3 tbsp. olive oil
kosher salt
Pepper
1 small Red Onion
1/2 c. chopped fresh cilantro
1 tbsp. adobo sauce
2 tsp. brown sugar
8 slice country bread
8 oz. extra-sharp white Cheddar

Steps:

  • In a medium bowl, whisk together lime juice, honey, 1 tablespoon oil, and 1/4 teaspoon each salt and pepper. Add onion and cilantro and let sit, tossing occasionally, until ready to use.
  • In a small bowl, whisk together adobo sauce and brown sugar.
  • Brush one side of each slice of bread with remaining 2 tablespoon oil. Form sandwiches with bread (oiled side out), adobo mixture, cheese, and onion-cilantro mixture.
  • Working in batches, cook sandwiches in a nonstick skillet, covered, over medium-low heat, until bread is golden brown and crisp and cheese has melted, 3 to 4 minutes per side. Transfer to a baking sheet and cover with foil to keep warm. Repeat with remaining sandwiches.

3 slices OSCAR MAYER Deli Fresh Oven Roasted Turkey Breast
1 tsp. fresh cilantro
1 KRAFT Big Slice Hot Habanero Cheese Slice
1 Tbsp. olive oil

Steps:

  • Heat panini grill.
  • Fill bread slices with salsa, turkey, cilantro and cheese.
  • Brush outside of sandwich with oil.
  • Grill 2 to 3 min. or until golden brown.

I made one of these tonight and it was good. If you have Thomas' Toasting Bread in your supermarket, check this one out. If not, use the bread of your choice.

2 slices thomas' toasting bread (Corn Flavor)
2 ounces monterey jack pepper cheese
2 -3 slices tomatoes (thin slices)
1 slice onion, separated (thin slices)
2 -3 black olives, sliced
1 1/2 tablespoons butter
paprika
black pepper
garlic powder
ground cayenne pepper

Steps:

  • Butter one side of each bread slice.
  • Dust buttered sides with seasonings to taste.
  • Build sandwich in this order: cheese, tomatoes, onions, olives, remaining slice of bread buttered side out.
  • Grill over low to medium low heat until bread gets golden brown and cheese starts to melt.
  • Carefully flip sandwich and brown other side.
  • Let sit for a few moments before cutting.
  • Eat and enjoy!
  • Do try to find the Thomas' corn bread if you like corn bread; it is slightly sweet and crumbly like regular corn bread and oh is it good!

1 small red onion, thinly sliced
1/2 cup fresh cilantro, chopped (or parsley)
1 tablespoon adobo sauce (from canned chipotles in adobo)
2 teaspoons brown sugar
8 thick slices country bread (I like whole grain)
8 ounces extra sharp white cheddar cheese, coarsely grated (or orange cheddar)

Steps:

  • In a medium bowl, whisk together the lime juice, honey, 1 tbls. oil and 1/4 teaspoons each salt and pepper. Add the onion and cilantro and let sit, tossing occasionally, until ready to use.
  • In a small bowl, whisk together the adobo sauce and brown sugar.
  • Brush one side of each slice of bread with the remaining 2 tbls. oil. Form sandwiches with the bread(oiled side out), adobo mixture, cheese and the onion-cilantro mixture.

Southwest Borscht and Tex/Mex Grilled Cheese image

This is soup and a sandwich, adult style. You won't get a tastier version in a restaurant, and this is easy and inexpensive but full of flavor. The sweetness of the beets goes well with the smokiness of the cumin and the tang of the green chile. You can use any artisan bread you like for the sandwich. We like rye bread because it goes with the borscht. Feel free to experiment.

2 (14 1/2 ounce) cans beets
2 carrots
1/2 cup green onion, chopped
2 (14 ounce) cans chicken broth
2 cups napa cabbage, finely chopped
1 tablespoon butter
2 tablespoons lemon juice
1 teaspoon rosemary
1 teaspoon cumin
1/4 cup cilantro, chopped
1/2 teaspoon black pepper
salt, to taste
8 slices rye bread
8 slices mozzarella cheese
8 slices monterey jack pepper cheese
1 tablespoon butter
1 tablespoon olive oil
1/4 cup mayonnaise
1/4 cup green chili pepper, diced
1/2 teaspoon cumin
2 tablespoons basil, chopped
1/2 teaspoon black pepper
2 tablespoons diced pimientos

Steps:

  • Using a food processor, shred beets, carrots, cabbage and green onions. Add to a large cooking pot
  • Add beet juice, chicken broth, rosemary and butter.
  • cook on low heat for 40 minutes
  • Add in lemon juice
  • Spoon into 4 bowls and garnish with freshly chopped cilantro, if desired.
  • For the sandwich.
  • Butter 4 slices of bread. Combine all six of the ingredients above to make the basil mayo. Spread the mayo on unbuttered side of the bread. Place an iron skillet on the burner at medium heat. Add olive oil.
  • Add one slice of pepper jack and one slice of mozzarella to each slice, place in hot skillet
  • Butter 2 other slices of bread. Put butter side UP on the top of each sandwich.
  • Cook about 2-3 minutes until brown. Using a spatula, carefully turn each sandwich over and cook 2-3 more minutes. Remove from pan. Let rest 5 minutes before slicing in half.
  • Serve with the soup and dip, if you like.
