LIGHT EGGLESS BANANA CAKE



Light Eggless Banana Cake image

Light and easy to make and oh so yummy. I invented it after having too many ripe bananas. Best eaten straight out of the oven.

Number Of Ingredients 8

3 cups cake flour, sifted
5 teaspoons baking powder
1 teaspoon bicarbonate of soda
375 ml milk
2 cups bananas, pureed
125 g margarine or 125 g butter, melted
1/2 cup light brown sugar
1 teaspoon vanilla essence

Steps:

  • Preheat oven to 160 degrees Celsius.
  • Sift first three ingredients together.
  • Whisk pureed bananas, milk and butter together. (It is important that the pureed bananas are smooth and there are no lumps). Add dry ingredients gradually into wet ingredients, mixing well.
  • Pour into well buttered rectangular pyrex or oven roasting pan and bake for 20 to 30 minutes or till lightly browned on top and skewer comes out clean.
  • Cooks Note: After reading a review from someone, I think perhaps they went for a high cake. Aim for a flatter rather than high cake. So your pyrex or roasting pan should be flatter rather than deeper or higher. Eggless cakes fare poorly when you try to bake them in deep/high dishes instead of flat, as they dont have eggs to help them rise. This could lead to rawness in the centre, whereas a flatter cake would cook evenly.

Here is a butterless cake, devised at that very time to help people all over the country come up with a bit of magic when there didn't seem to be any stardust." 1 egg, separated
2/3 cup sugar
1/2 cup evaporated milk
1 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
3/4 teaspoon lemon extract
2 tablespoons evaporated milk
1 cup powdered sugar
3/4 teaspoon lemon extract

Steps:

  • Put egg yolk in a mixing bowl and beat until light; gradually add the sugar and milk while beating continuously.
  • Sift your flour, baking powder, and salt together; set aside.
  • Beat egg white until stiff; fold dry ingredients into egg white.
  • Add egg white mixture and flavoring to sugar-milk mixture, blending well.
  • Pour batter in a prepared 8-inch square pan.
  • Bake at 375 degrees ("a moderately hot oven") for 30 minutes.
  • Icing: Warm the 2 tablespoons evaporated milk in a small saucepan, and add the 3/4 teaspoon lemon extract and 1 cup powdered sugar.
  • Top on cake.
  • If you'd like, you can color the icing with food coloring.

2/3 cup Crisco
1 pint water (2 cups)
3 teaspoons cinnamon
1/2 teaspoon nutmeg
2 cups sugar
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon salt
2 cups raisins
1 cup pecans
3 1/2-4 cups flour
1 cup candied cherry

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease & flour a 9x13-inch baking dish.
  • Mix Crisco, water, raisins, and spices. Bring to a boil for ten minute then let cool. Next dissolve 1 teaspoon soda in ½ cup boiling water and add to mixture. Add enough flour to make a stiff batter (3 ½ - 4 cups). Put in the glass baking dish.
  • Bake in the preheated oven for 40 minutes. Test in middle.

1/2 cup sugar
2 eggs
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon cinnamon

Steps:

  • Preheat overn to 325. Grease a loaf pan.
  • Mash the bananas in a large bowl and add the sugar.
  • Whisk in the eggs.
  • Sift in the dry ingredients. Stir until just combined.
  • Bake for about 1 hour or until a cake tester comes out clean.
  • Allow to stand and cool for 15 minutes before removing from the pan.

2 large bananas
250 ml orange juice
300 g self-raising flour
125 g brown sugar
1 pinch salt
1/2 teaspoon spices
1 egg
1 tablespoon oil

Steps:

  • Mash the bananas with orange juice.
  • Mix the flour, sugar, salt and spices in a bowl.
  • Add the banana juice mixture with the egg and oil. Combine together.
  • Pourt the mixture into a lightly oiled 900g loaf tin.
  • Bake at 170 C for about 1 hour. Check the cake is cooked by inserting a skewer or knife into the centre. It should come out clean.
