Categories     Main Course

Number Of Ingredients 12

6-7 in bone- skin-on chicken thighs
1 tbsp butter
1 tbsp vegetable oil
2 tbsp butter
7-8 cloves garlic smashed then roughly chopped
2-3 cups baby spinach
1 cup chicken broth
2 tbsp flour
1/4 cup heavy cream
1/3 cup freshly grated Parmesan
1/2 tsp to 1 lemon juice to taste
4 cups baby potatoes ( parboiled for 10 minutes )

Steps:

  • Pre-heat the oven to 400 F.
  • Melt butter and oil together in a large frying pan over medium-high heat. Add in the the chicken thighs.
  • Fry unti the skin is very crisp and brown on both sides. Drain the chicken and place into a large 9x13 baking pan of choice. Drain the fat from the pan and place back on the stove.
  • Melt the next two tablespoons of butter,
  • Add in all of the garlic and fry for 1 minute. Add in the spinach and then saute until the spinach shrinks.
  • Whisk in the chicken broth, cream, flour and Parmesan. Add in lemon juice to taste.
  • Cook for an additional 2-3 minutes, the flour should thicken the sauce.
  • Place the parboiled baby potatoes between the chicken in the 9x13 pan. If you have large chicken thighs, halve the baby potatoes, if you have smaller ones, quarter them so that they cook faster.
  • Pour the spinach and cream sauce over top of the chicken and potatoes.
  • Bake the chicken in the oven for 25-30 minutes or until the thighs reach a temperature of 175 °F and are tender and cooked all the way through. The potatoes should be tender.
  • Remove and serve.

GARLIC CHICKEN AND POTATOES

Garlic Chicken and Potatoes image

This satisfying meal comes together remarkably quickly. Plenty of garlic plus a hint of brown sugar and red pepper add loads of flavor to boneless breasts. Cooking the chicken in the oven helps keep it tender and juicy.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

2 pounds small red-skinned potatoes, quartered
3 tablespoons extra-virgin olive oil
1/2 teaspoon cumin seeds (optional)
Kosher salt and freshly ground pepper
4 cloves garlic, finely chopped
2 tablespoons packed light brown sugar
1 lemon (1/2 juiced, 1/2 cut into wedges)
Pinch of red pepper flakes
4 skinless, boneless chicken breasts (1 1/2 to 1 3/4 pounds)
2 tablespoons chopped fresh cilantro or parsley

Steps:

  • Position a rack in the lower third of the oven and preheat to 425 degrees F. Toss the potatoes with 1 tablespoon olive oil, the cumin seeds, 3/4 teaspoon salt, and pepper to taste. Spread in a large baking dish and roast until the potatoes begin to brown, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the garlic and cook, stirring frequently, until lightly golden, about 2 minutes. Remove from the heat and stir in the brown sugar, lemon juice and red pepper flakes. Remove the baking dish from the oven, push the potatoes to the sides and arrange the chicken breasts in the middle. Season the chicken with salt and drizzle with the garlic mixture. Return to the oven and bake until the chicken is cooked through and the potatoes are tender, about 20 minutes.
  • Remove from the oven; transfer the chicken to a cutting board and slice. Add the cilantro to the baking dish and toss with the potatoes. Serve the chicken with the potatoes and lemon wedges. Drizzle with the pan juices.

CREAMY GARLIC PARMESAN CHICKEN AND POTATOES

Creamy Garlic Parmesan Chicken and Potatoes image

Complete and total one pot comfort food.

Provided by Katie Workman

Categories     Main Course

Time 50m

Number Of Ingredients 12

4 tablespoons olive oil (, divided)
1 pound Idaho russet potatoes (, peeled and cut into 1-inch cubes)
Kosher salt and freshly ground pepper (to taste)
1/2 cup all-purpose flour
1 ½ pounds boneless skinless chicken breasts
1 onion (, chopped)
1 tablespoon finely minced garlic
1 ½ cups less-sodium chicken broth
5 ounces (1 clamshell) baby spinach (, roughly chopped)
½ cup heavy cream
½ cup grated Parmesan cheese (, plus more to serve)
¼ cup chopped fresh parsley

Steps:

  • In a very large skillet, heat 2 tablespoons of the olive oil over medium high heat. When the oil is hot, add the potatoes, season with salt and pepper, and leave the potatoes alone for about 4 minutes, until the underside is browned. Flip the potatoes and let side for another 4 minutes, until the second underside is browned. Flip once more so that another uncooked side of the potatoes brown, another 4 minutes; the other sides of the potato cubes will not be browned, which is ok. Remove the potatoes with a slotted spoon or tongs to a plate.
  • Meanwhile, combine the flour, 1 teaspoon salt and ½ teaspoon pepper in a shallow bowl.
  • Heat the remaining 2 tablespoons in the same skillet over medium high heat. Dredge the chicken cutlets in the flour mixture. Once the oil is hot, cook the cutlets in the pan for about 3 minutes on each side until they are golden brown, and but not cooked through (still pink in the center). Transfer the cutlets to a large plate when they are browned.
  • Turn the heat down to medium and add the onions. Cook, stirring frequently, for about 2 minutes, until the onions are slightly tender and golden. Stir in the garlic for 1 minute, until you can smell the garlic. Add the chicken broth, bring to a simmer and stir so that any browned bits stuck to the bottom of the pan are released into the liquid. Stir in the spinach, then add the cream, and Parmesan. Bring to a simmer and cook, stirring frequently, until the sauce thickens slightly, about 2 minutes.
  • Add the potatoes back to the pan and tuck the chicken back into the pan, with any juices that may have collected on the plate, making sure the chicken is at least mostly covered by the sauce. Cook for about 6 to 8 more minutes until the chicken and potatoes are cooked through.
  • Sprinkle with the parsley, and serve hot in shallow bowls with the extra Parmesan passed on the side.

Number Of Ingredients 17

6 bone-in, skin-on chicken thighs
1 tablespoon Italian seasoning
Kosher salt and freshly ground black pepper, to taste
3 tablespoons unsalted butter, divided
3 cups baby spinach, roughly chopped
16 ounces baby Dutch potatoes, halved*
2 tablespoons chopped fresh parsley leaves
For the garlic parmesan cream sauce
1/4 cup unsalted butter
4 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth, or more, as needed
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 cup half and half*
1/2 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste

Lightly oil a 9×13 baking dish or coat with nonstick spray. 2.Season chicken with Italian seasoning, salt and pepper, to taste. 3.Melt 2 tablespoons butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. 4.Melt remaining 1 tablespoon butter in the skillet. Stir in spinach and cook, stirring occasionally, until it begins to wilt, about 2 minutes; set aside. 5.To make the garlic parmesan cream sauce, melt butter in the skillet over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. 6.Gradually whisk in chicken broth, thyme and basil. Cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in half and half and Parmesan until slightly thickened, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste. 7.Place chicken in a single layer into the prepared baking dish. Top with potatoes, spinach and cream sauce. 8.Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. 9.Serve immediately, garnished with parsley, if desired.

Chicken with Garlic Potatoes and Asparagus image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 10

1 pound Yukon Gold potatoes, cut into 1-inch pieces
1 head garlic, cloves separated and peeled
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 skinless, boneless chicken breasts (about 6 ounces each)
1 bunch medium asparagus (about 1 pound), trimmed and halved
1 pint grape tomatoes
1/2 cup grated parmesan cheese (about 1 ounce)
1/4 cup chopped fresh parsley
2 teaspoons finely grated lemon zest

Steps:

  • Put a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Toss the potatoes and garlic cloves with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl; set aside.
  • Season the chicken with 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chicken; cook until browned, 1 1/2 to 2 minutes per side. Transfer to the hot baking sheet. Scatter the potatoes and garlic around the chicken; reserve the bowl. Bake until the chicken is just cooked through, about 5 minutes. Transfer the chicken to a plate and tent with foil; leave the potatoes and garlic on the baking sheet.
  • Add the asparagus and tomatoes to the reserved bowl; toss with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt. Add to the baking sheet with the potatoes. Bake until the vegetables are tender and the tomatoes start to burst, 13 to 15 minutes.
  • Remove the baking sheet from the oven; switch the oven to broil. Toss the parmesan, parsley and lemon zest in a small bowl. Nestle the chicken in the vegetables and sprinkle everything with the parmesan mixture. Broil until golden, 1 to 2 minutes.

BAKED CHICKEN IN PARMESAN AND ROASTED GARLIC SAUCE

Baked Chicken in Parmesan and Roasted Garlic Sauce image

Baked chicken in a flavorful sauce. Reduced fat. Fresh herbs. Easy to make. What's not to like? After a short prep time you leave it in the oven until you're ready so its easy to deal with an erratic family schedule or tardy guests. Enjoy!

Provided by 3KillerBs

Categories     < 60 Mins

Time 1h

Yield 8 thighs

Number Of Ingredients 13

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.
  • Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
  • Add milk. Add cream cheese in small blobs.
  • Bring to simmer, whisking in the cream cheese until smooth.
  • Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
  • Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.
  • Remove chicken to a serving platter. Toss sauce with noodles.
  • Serve with a green vegetable (I recommend broccoli or an Italian vegetable mix), or a salad.
  • Note: If you don't have homemade chicken stock please use a quality soup base (I like Tones), rather than bullion, which is apt to be too salty when combined with the Parmesan.
  • Note: If you want a thicker sauce reduce the chicken stock to 1/2 cup.

CHICKEN WITH ROASTED GARLIC & PARMESAN SAUCE

Chicken With Roasted Garlic & Parmesan Sauce image

Positively scrumptious meal, perfect served with mashed potatoes or pasta. The sauce is plate-licking-good! It's also a healthier alternative to alfredo sauces which use butter and cream.

Provided by stonecoldcrazy

Categories     Chicken

Time 30m

Yield 2-3 serving(s)

Number Of Ingredients 10

7 -10 garlic cloves
3 boneless skinless chicken breasts
1/3 cup white wine
1 cup chicken stock
2 teaspoons parsley
1 tablespoon garlic powder
1/2 cup milk
4 ounces cream cheese, softened
1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Coat garlic gloves with olive oil and wrap tightly in foil, roast in a 450 degree oven for 15-20 minutes or until soft.
  • Remove from foil and mash well.
  • Brown chicken breasts in olive oil, not cooking the chicken through at this point but adding color. Remove when finished and set into a casserole dish.
  • Deglaze the sauce pan with the white wine and let boil. Add chicken stock, parsley and roasted garlic. Allow to simmer.
  • Add milk and cream cheese, stirring until it is incorporated, and then add the parmesan cheese. Whisk until smooth.
  • Add black pepper to taste and salt if needed. (the broth and cheese are salty so you probably won't need any).
  • Pour over the chicken and bake uncovered in a 350 degree oven for 25-35 minutes or until chicken is cooked through.
  • Serve sauce over mashed potatoes or pasta. If it is too thin, return to a saucepan and mix together one tablespoon water and one tablespoon of corn starch and whisk into sauce when simmering.
