1 package (8 ounces) cream cheese, softened
1 cup crumbled blue cheese
1/4 cup butter, softened
1 can (4-1/4 ounces) chopped ripe olives
1 tablespoon minced chives
3/4 cup chopped walnuts
Assorted crackers

Steps:

In a large bowl, beat the cream cheese, blue cheese and butter until smooth. Stir in olives and chives. Cover and refrigerate for at least 1 hour., Shape cheese mixture into a ball; roll in walnuts. Cover and refrigerate for at least 1 hour. Serve with crackers.

2 packages (8 ounces each) reduced-fat cream cheese
1 can (20 ounces) crushed pineapple, well drained
3 cups finely chopped pecans, divided
1/4 cup finely chopped green pepper
1 tablespoon finely chopped onion
1 teaspoon seasoned salt
Assorted crackers

Steps:

In a large bowl, beat cream cheese until smooth. Stir in pineapple, 1-1/2 cups pecans, green pepper, onion and seasoned salt. Shape into two balls. Wrap in plastic; refrigerate at least 30 minutes., Place remaining pecans in a small shallow bowl; roll cheese balls in pecans to coat evenly. Serve with crackers.

1 tsp. poppy seed
2 cloves garlic, minced, divided
2 Tbsp. finely chopped fresh parsley
2 tsp. chopped fresh thyme leaves
1 tsp. finely chopped fresh rosemary
1/4 cup finely chopped dried cranberries
2 Tbsp. finely chopped pecans

Steps:

Cut cream cheese into 6 pieces; roll each into a ball.
