- 2. In bowl, thoroughly mix together the tuna, bread crumbs, onion, parsley, almonds, mayonnaise, lemon juice, mustard, and egg. Shape into 1-inch balls.

- In a medium bowl, combine tuna flakes, flour, cornstarch, baking powder, minced carrots, minced onion, chopped spring onions, chili powder, pepper, salt and sugar.
- Mix all the ingredients well until incorporated. If the mixture is a bit dry, add a little water at a time. Start with about 1 tablespoon and stir it in.
- Using a spoon, scoop around 2 teaspoons of the mixture and form into balls, making about an inch size. Make the balls as uniform as possible.
- In a deep pan, heat oil over medium heat. Fry the fish balls for about 3-5 minutes or until golden brown.
- Remove from the pan and transfer to a plate lined with paper towels.
- Serve while hot with your favorite fish ball sauce.

- Flake the tuna into a bowl, then tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg. Season and mix together with your hands until completely combined. Roll the mix into 12 walnut-size balls. Put a large pan of salted water on to boil, then cook the spaghetti according to pack instructions.
- Heat a little of the tuna oil in a large non-stick frying pan, then fry the tuna balls for 5 mins, turning every minute or so until completely golden. Drain on kitchen paper. Heat the tomato sauce, then toss together with the pasta and tuna balls.

- Heat the oil in a pan on medium heat. Add the diced onion and minced garlic and saute for a minute. Then add the chopped baby spinach and saute for another 1-2 minutes or until the spinach is wilted.
- Transfer the onion spinach mixture to a bowl and let it cool. You can place the bowl in the fridge to speed this up.
- Preheat your oven to 400 degrees fahrenheit.
- Drain the cans of tuna and add the tuna to a mixing bowl along with the cooled vegetables, almond flour, eggs, mayonnaise, lemon juice, parsley, dill, salt and pepper.
- Use your hands to dig in and mix everything together, breaking up any large chunks of tuna. The finer the mixture, the easier it will stick together.
- Use a medium cookie scoop to scoop out evenly sized amounts of mixture. Use your fingers to mold this into a ball, then place it on a parchment lined baking tray.

- Drain tuna & place in mixing bowl with onions, salt & pepper and half amount of cheese.
- Crush 1/2 bag of potato chips & add to mixing bowl & mix together, with a little garlic powder and salt & pepper. If you can't get cheese & garlic chips, then cheese & onion will suffice, in which case, 1 clove of crushed garlic can be added.

EASY CHEESY BAKED TUNA BALLS

- Preheat oven to 400 F, and use the tbsp oil to grease a baking sheet.
- In a large mixing bowl combine all the tuna ball ingredients except for the oil and coating ingredients. Mix thoroughly.

- Add one cup of bread crumbs to a medium bowl and set aside.
- Making Tuna Balls:
- Open the cans of tuna, scoop tuna chunks into a colander and drain.
- Add drained tuna to a large bowl.
- Add 1/4 cup of bread crumbs, garlic powder, onion powder, salt, pepper, lemon zest, chopped parsley, 2 beaten eggs, cheese and mayo to a large bowl. Using a spatula stir to combine all the ingredients.
- Using a cookie scoop (I used the 2 tablespoons one), take a scoop of the tuna mixture, dump it into the prepared bowl with bread crumbs. Cover in bread crumbs, roll gently into a more perfect ball and place on a cutting board. Repeat with the remaining tuna mixture.

These tuna balls are very tasty, they can be made into 10-12 larger balls, or 30-40 smaller cocktail size balls (served with a cocktail picks). If you are one of those people (like myself) that just have to add garlic to everything, no matter what it is, then fresh minced garlic in any amount may be added to these if desired. This recipe can easily be doubled, I usually do if I am making, them into larger balls, for a snack or a main meal.

- Set oven to 375 degrees.
- Prepare a greased 13 x 9-inch baking pan, or any size to fit the tuna balls.
- In a bowl, combine the tuna, egg, breadcrumbs, mayo, onion, parsley, almonds, mustard, poultry seasoning, salt, pepper and fresh garlic, or garlic powder (if using), do NOT add the crushed Corn Flakes cereal; combine well.

- Preheat your oven to 375 degrees f. and prepare a parchment paper-lined baking sheet topped with a metal (oven safe) cooling rack.
- Use a sharp knife to slice the chicken lengthwise in half to create thin, even breasts. Season the chicken lightly with sea salt and pepper on both sides.
- Place the flour on a shallow plate; then on a separate plate add the crushed corn flakes and whisk in the paprika, garlic powder, and cayenne pepper.
- In a bowl beat the egg together with the milk and season with a pinch of sea salt and pepper.
- Start by lightly coating the chicken with the flour; then dip into the egg-milk mixture, allowing any excess to drip off.
- Then add the chicken into the cornflakes and gently press to adhere on both sides.
- Place your coated chicken onto your prepared metal rack.
