SAVORY CHEESE AND SPINACH PIE RECIPE
Irresistible Savory Cheese and Spinach Pie Recipe - This herb and cheese pie is similar to a Spanakopita Recipe, yet is packed with fresh herbs and three cheeses!

Steps:
- Preheat the oven to 400 degrees F. Set a large sauté pan over medium-low heat, and set out a 9X13 inch baking dish.
- Add the ghee to the sauté pan. Once melted, add the onions and celery. Sauté for 5-8 minutes to soften and release the moisture.
- Next add the spinach. Sauté another 5-8 minutes until the spinach has completely wilted down. Then add the scallions, parsely, mint, and dill. Sauté another 2-3 minutes.
- Move the cooked greens to a fine mesh strainer. Press the greens down to remove as much moisture as possible. Then use a paper towel to press again until the greens seem dry. *Too much moisture in the filling will make it difficult for the pasty sheets to stay crisp.
- Place the dried greens back in the pan. Add in all cheese, eggs, and seasonings. Mix well.
- Prepare a small bowl of melted ghee. Brush a thin layer of ghee across the bottom of the baking dish. Place a filo sheet out on a clean work surface. Brush the top of the filo sheet with ghee. Then lay another filo sheet across the top. Continue to layer and brush the filo until you have 6 sheets stacked. Move the stack to the baking dish.
- Spread the spinach and cheese filling evenly over the pastry sheets.
- Then prepare a second filo stack for the top crust. However, this time overlap the filo sheets so they are wider than the top of the baking dish. You want to have a wide enough stack to be able to create wrinkles in the top crust. Brush and overlap 6 filo sheets with a 2-inch lip on either side, so the final stack is 4 inches wider than the bottom stack.
- Move the filo stack to the top of the baking dish. Tuck the edges into the corners and sides. Gently press the top down, just a little, to create wrinkles in the top crust. Brush the top with ghee.
- Bake the spinach pie for 35-40 minutes, until golden brown. If the crust starts to look brown too early, cover the top loosley with a piece of foil, and continue baking.
- Allow the pie to cool for at least 5 minutes. Then cut into 12 pieces and serve.

SAVORY FETA PIES
Pie pastry circles filled with feta cheese and a seasoned ground beef mixture for a wedding of savory sensations that is then baked to a golden finish. I make this when company comes over, and they all rave about it. It's the feta cheese that gives it a gourmet flavor, and the crust comes out very flakey and buttery. Marinated beef cuts also work well.

Steps:
- Heat oil in a large skillet over medium high heat. Saute onion until soft, about 2 minutes. Add beef and brown slightly; drain excess fat. Stir in tomato, garlic powder, coriander, oregano, cayenne pepper, salt and pepper and cook until meat is evenly browned, 10 to 15 minutes. Remove from heat and set aside.
- Preheat oven to 400 degrees F (200 degrees C).
- Remove one pie crust from pan and roll out on a lightly floured surface. Cut pastry into four 6 inch circles; place circles on lined cookie sheet and lightly brush with egg beat. Place 1/4 cup of feta cheese onto each circle and top with some beef mixture, leaving enough room to seal dough 'pockets'.
- Remove second pie crust from pan and roll out on lightly floured surface. Cut pastry into four 6 inch circles, as with first pie crust. Brush one side of each circle with egg beat and place, egg-side-down, on top of prepared pie circles. Pinch crusts together to seal around the edges. Use dough scraps to fill any holes or tears in the pie 'pockets'. Brush tops with egg beat and make a small slit in the top of each pie (to allow steam to escape).
- Bake in the preheated oven for 15 to 25 minutes, or until cooked through and golden brown.

Steps:
- Preheat the oven to 325 degrees F.
- To a large pot, add the olive oil and saute the onions until browned. Add the scallions, dill, nutmeg, black pepper and salt.
- Boil the chopped spinach until blanched and still bright green, stirring occasionally. Mix it together with the ingredients in the pot. Add the crumbled feta cheese and the eggs, making sure that the mixture is slightly cool so the eggs don't scramble. Mix well.
- Brush 1 pound of the phyllo dough with melted butter, piece by piece, layering in a large enough tray to fit the phyllo sheets. Then add the spinach mixture on top and, piece by piece, layer and brush the rest of the phyllo on top. Mark the pieces with a knife and make sure the ends are tucked in, then sprinkle with a little water.
- Bake for 45 minutes, or until golden brown.

- Add 1/3 teaspoon of salt to the flour, and then add the warm water. Note: There is a difference when using cold vs. warm water. If you add cold water, then you will need to wait longer for the dough to rest (around 1.5 to 2 hours), but the dough will be easier to stretch out. If you use warm water, then the dough will be ready for use in around half an hour. If you choose the faster version, there is just one trick you need to know (it’s written below, so do not worry)
- Knead the dough for a few minutes until it becomes well mixed, and it stops sticking to the bowl. If needed feel free to add some more flour until it is no longer sticky
- Transfer the dough to your working station and shape it in a round ball. I have to cut the dough in 3 pieces because I don’t have the large working station, but if you have a large table, there is no need for that
- Leave the dough to rest on an oiled plate for at least half an hour – be sure to brush the top of the dough with oil, so it does not dry out

- The recipe for the savory pie with ricotta and spinach is easy and anyone can handle it, even the less qualified ones in the kitchen and always guarantees a satisfactory and tasty result.
- Especially when starting with a ready rolled puff pastry. If you want to make it at home, we recommend the recipe for a quick puff pastry to shorten the cooking time. - Chicken Pot Pie. If you thought making a tasty pie was complicated, think again. We like to use several shortcuts in this recipe to make life simple. First, to make it saucy, we use a can of soup.
- Beef and Guinness Pie. If you were in the UK, you might hear this referred to as ‘steak and ale’ pie. The alcohol boils off during the cooking process and what you are left with is a rich and tasty gravy.
- Pumpkin Hand Pie. I never knew that pumpkins even had hands! No, joking aside, this is a savory version of traditional pumpkin pie. The recipes don’t just contain pumpkin either.
- Cheeseburger Pie. Bisquick is an absolute Godsend when it comes to baking. It works really well to give a biscuity texture and crust to your pies. It certainly saves a lot of time as it makes a worthy replacement for a pie crust.
- Cheese and Onion Pie. Cheese and onion pie is really easy to make and is about as savory as it gets. Cheese and onions are an amazing pairing (just ask any Brit about their favorite choice of potato chips!).
- Potato and Meat Pie. This is another classic British variation that is really quick and easy to make. It only needs four ingredients plus the pastry. Fry an onion until soft.
- Greek Spinach Pie. Greek Spinach pie is like savory baklava with salty goat’s cheese, garlic, onions, not to mention a fair helping of spinach. This is all packaged up in a phyllo pastry topping.
- Chicken Empanadas. Empanadas are the South American equivalent of hand pies. The choice of fillings is phenomenal. Our favorite is chicken spiced with things such as cumin and paprika.
- Mushroom and Leek Pie. Leeks are a relative of the onion, so it’s no wonder that they work so well with the cheese filling we add to this pie. We like to pad the filling out with juicy mushrooms.
- Bacon and Egg Pie. Bacon and egg pie is a dish you’ll find all across New Zealand and Australia. It is like a cooked breakfast, and a pie all rolled into one.

Add the water and pulse again until the dough just begins to form. Add ice water, if necessary. Remove the dough from the food processor and form into a disc with your hands.
- Meanwhile, in a skillet, brown the onion in the oil. Add the garlic and cook for 1 minute. Add half the spinach and the broth. Stir to combine and remove from the heat. Season with salt and pepper. Let cool.

- Irish Potato Pie. The simplicity of this pie means you can have it in the oven in less than 15 minutes. And it needs fewer than 10 ingredients! If there’s a better combination than potatoes, onion, and bacon, I don’t know what it is.
- Easy Homemade Chicken Pot Pie. This recipe uses cream of chicken soup and frozen vegetables to cut the prep time down to just 10 minutes. Some may call it cheating, but I think it’s a helpful shortcut!
- French-Canadian Salmon Pie. Salmon makes such a lovely, light pie filling. Though it’s not as common as beef or chicken, it’s definitely prettier! I love a good fish pie and grew up eating a dish that’s like a fish pot pie, with a creamy sauce and shrimp in the mix.
- Beef and Guinness Pie. As tasty as chicken and fish can be, there’s nothing more comforting than a big bowl of beef stew or pie. The dark meat paired with vegetables and a deep, rich gravy is the perfect winter warmer.
- Steak and Mushroom Pie. Steak pie is a classic pub favorite. Cooked until the beef is fork-tender, with plenty of chunky veggies and mushrooms galore, it’s rich, filling, and so delicious.
- Savory Pumpkin Hand Pies. Known as ‘pasties’ in the UK, hand pies are wonderful little snacks when served on their own or great for a filling dinner with plenty of veggies on the side.
- Easy Italian Cheese & Tomato Pie. Technically, the difference between a pie and a tart is the depth. Pies tend to be deep-dish, whereas tarts are thinner.
- Bisquick Cheeseburger Pie. This pie is such a treat to make. Much like some super fast Bisquick Desserts, this recipe has a few tricks up its sleeve. Rather than making a pie crust and rolling it out, the crust gets poured over the top of the filling.
- Tourtière (French-Canadian Meat Pie) Mixing mashed potatoes into your pie meat is such a great way to bind it together and add a creamy texture to the filling.
- Cheese and Onion Pie. You’ll find a variation of this all over the UK. Cheese and onion go hand in hand, after all. I would recommend using a strong mature cheddar for this since it’s more or less the star of the show!
