SWEET POTATO AND SAUSAGE STEW



Sweet Potato and Sausage Stew image

Sweet, savory and spicy (if you use a spicy sausage), this great cool-weather stew comes together in a flash with minimal prep. The stew is filling on its own, but we can't resist dipping cheese toast wedges in the flavorful broth.

2 Sweet potatoes, chopped
1 Onions, chopped
3 leaves Kale, leaves and stems chopped and separated
1 Tbsp Oil, cooking
12 oz Sausage, Italian and raw (use mild or spicy)
3 Tbsp Tomato paste
3 cups Stock, any type
2 Bay leaves
1 tsp Lemon juice
1/4 cup Yogurt, plain or Greek
4 slices Bread, sandwich (a thick-sliced loaf will work well)
1 Tbsp Oil, olive
4 slices Cheese, Swiss

Steps:

  • Heat oven to 425F / 218C degrees.
  • Heat a Dutch oven over medium-high heat. Add cooking oil and then onions, kale stems and a pinch of salt. Saute for 2 to 3 minutes, until softened.
  • Add potatoes and sausage and saute to break sausage apart and allow it to release oil, 3 to 4 minutes more.
  • Pour in tomato paste, stock and bay leaves. Simmer stew until potatoes are tender, 8 to 10 minutes.
  • While stew simmers, place toast on a sheet pan. Brush with olive oil and top with cheese slices. Bake in the oven until toast is golden around the edges and cheese is melted, 5 to 6 minutes.
  • Slice cheese toast into quarters.
  • When stew is done, remove from heat and stir in kale leaves and lemon juice. Taste and season with some salt and pepper and more lemon juice, if needed.
  • Ladle stew into bowls and top with yogurt. Serve with cheese toast on the side and enjoy!

1 tsp onion powder
2 TBSP dried onion flakes (minced)
1 tsp dried oregano
1 tsp smoked paprika
1 tsp sweet paprika
1/4 tsp turmeric
1/4 tsp cumin
1 bay leaf
1 tsp sea salt
1/4 tsp black pepper
Spicy sausage (cut in 1 inch pieces)
1 medium red onion (diced small pieces)
1 red bell pepper (diced small pieces)
2 TBSP minced garlic
1 1/2 C vegetable broth
1 1/2 C water
1 can petite diced tomatoes (14.5 oz)
1 TBSP miso
1 TBSP tamari
1 medium sweet potato (peeled/ cut in small cubes)
2 cans (15.5 oz butter beans (drain/rinsed each can))
3 TBSP fresh parsley (chopped)
Dutch Oven

Steps:

  • Add the spice ingredients in a bowl. Mix Well. Set aside.
  • Add the red onion and red bell pepper in a Dutch Oven.
  • Saute on medium-high heat for 5-7 minutes.
  • Add the minced garlic.
  • Continue on medium heat for 30 seconds. Continue on medium-high heat and saute for 1-2 minutes.Add the mixed spice ingredients, sauteing for 30 seconds.
  • This will release the fragrance.
  • Slowly add the broth and water. Stir to mix. Add the diced tomatoes and tamari. Bring it to a boil. Stir well. Immediately lower the heat to a low simmering boil.
  • Stir in the cubed sweet potatoes, sausage, and the first can of the butter beans. Continue to simmer for 18 minutes. Add the parsley and miso. Stir to combine. Add the last can of butter beans. Stir well. Continue to simmer. Check to see if the sweet potatoes are tender. Taste Remove the bay leaf.
  • Garnish each bowl of stew with parsley before serving

2 sweet potatoes (peeled and cubed)
1/4 cup sweet onion (minced)

  • Add in the spinach, salt and pepper to taste and cover cooking for an additional 2 minutes.

2 tablespoons olive oil
12 ounces hot Italian sausage, cut into small chunks
12 cipollini or pearl onions, peeled
1 1/2 cups canned crushed tomatoes
3 cups homemade chicken stock or low-sodium canned chicken broth, skimmed of fat
1 handful of herbs, such as rosemary, thyme, or oregano
1 large (2 pounds) butternut squash, peeled, seeded, cut into 1-inch chunks
3 carrots, cut into 1/2-inch pieces
3 parsnips, cut into 2-inch-long sticks
1 fennel bulb, halved, cored, cut into 1/4-inch-thick slices
12 brussels sprouts, trimmed, cut in half

Steps:

  • Heat the oil in a saucepan over medium heat. Cook sausage, stirring until it breaks into small pieces and is no longer pink, about 10 minutes. Remove sausage with a slotted spoon, and set aside.
  • Pour off all but 2 tablespoons of the rendered fat, and discard. Raise heat to medium high, and add the onions; cook, stirring, until golden, about 8 minutes. Add tomatoes, stock, and herbs; simmer over medium heat until the liquid starts to thicken, about 20 minutes. Add the sausage, squash, carrots, parsnips, and fennel; cover, and simmer until the vegetables are tender, about 10 minutes. Add brussels sprouts; cook, covered, about 5 minutes more. Oh so rich, creamy, and delicious on a cold winter night! I found this recipe in BHG magazine, modified slightly and am posting here for safekeeping. Full recipe is a big pot of soup - I halve the recipe to make 4 very healthy portions of stew. Prep note: if the peanut/coconut cream is something you are unsure about (or if you have a picky eater) I would suggest pulling a sampling of the stew prior to adding and test for yourself and your family. I absolutely think it is what makes the dish special, however my BF doesn't like, so his serving is separated out prior to my adding in the cream mixture (and then I, of course, decrease the amount of peanut/coconut cream that I'm adding to the main pot).

2 tablespoons canola oil or 2 tablespoons butter, if not concerned with keeping the dish vegan
2 sweet red peppers, chopped
1 large onion, chopped
6 garlic cloves, minced

2 lbs sweet potatoes, peeled and chopped

14 ounces coconut milk
1 cup natural-style peanut butter (no added sugar or salt)

Steps:

  • Heat the oil (or butter) in a large pot or Dutch oven over medium heat.
  • Add pepper, onion, garlic, ginger, allspice and cayenne pepper (if using) and saute for 5-7 minutes. Garlic and ginger should become quite fragrant and the onions and peppers slightly tender.
  • Add potatoes, broth and tomato paste to the pot. Stir to incorporate the tomato paste. Bring to a boil.
  • Immediatly reduce heat to low, cover and simmer for 40-45 minutes. Adjust heat as necessary to maintain a gentle simmer. Avoid over-stirring as this can break down the potatoes more than desired.
  • Wisk together the coconut milk and natural peanut butter until smooth and creamy. Stir into the stew and simmer for an additional 5 minutes.
  • Ladle into bowls and enjoy! This stew is wonderful on it's own or paired with grilled cheese sandwiches or grilled peanut butter sandwiches!

2 1/2 pounds tan-skinned sweet potatoes, peeled, thinly sliced

Steps:

  • Preheat oven to 400° F. Cook sausages in heavy large skillet over medium-high heat until brown and cooked through, crumbling with back of spoon, about 6 minutes. Using slotted spoon, place sausage in small bowl. Pour off any drippings in skillet. Add broth, wine, apricot nectar and 2 tablespoons butter to same skillet; boil until liquid is reduced to 1 1/2 cups, about 15 minutes. Pour into another bowl. Melt 2 tablespoons butter in same skillet over medium heat. Add leeks and sauté until tender, about 10 minutes. (Can be prepared 1 day ahead. Cover and refrigerate sausage, broth mixture and leeks separately.)
  • Arrange half of potatoes in 13 x 9x2-inch glass baking dish. Sprinkle with half of thyme. Season with salt and pepper. Sprinkle with 1/3 cup cheese. Top with half of leeks and all of sausage. 1 10- to 11-ounce fully cooked smoked Portuguese linguiça sausage or chorizo sausage, cut crosswise into 1/4-inch-thick slices
2 medium onions, chopped
2 large garlic cloves, minced
2 pounds red-skinned sweet potatoes (yams; about 2 large), peeled, quartered lengthwise, cut crosswise into 1/4-inch-thick slices
1 pound white-skinned potatoes, peeled, halved lengthwise, cut crosswise into 1/4-inch-thick slices
6 cups low-salt chicken broth
1 9-ounce bag fresh spinach

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain. Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes. Add all potatoes and cook until beginning to soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes. 2 corn cobs, cut into 4-6 pieces
1 mango, stoned and chopped
2 large sweet potatoes, cut into wedges
8-12 pork sausages
2 tsp ground cumin
2 tsp ground paprika
2 tsp fennel seeds
2 tsp dried oregano
2 tbsp barbecue sauce
2 tbsp vegetable, rapeseed or olive oil
chopped coriander
chopped chillies (for the grown-ups)

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
  • Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.
