SWEET POTATO AND SAUSAGE STEW
Sweet, savory and spicy (if you use a spicy sausage), this great cool-weather stew comes together in a flash with minimal prep. The stew is filling on its own, but we can't resist dipping cheese toast wedges in the flavorful broth.

Steps:
- Heat oven to 425F / 218C degrees.
- Heat a Dutch oven over medium-high heat. Add cooking oil and then onions, kale stems and a pinch of salt. Saute for 2 to 3 minutes, until softened.
- Add potatoes and sausage and saute to break sausage apart and allow it to release oil, 3 to 4 minutes more.
- Pour in tomato paste, stock and bay leaves. Simmer stew until potatoes are tender, 8 to 10 minutes.
- While stew simmers, place toast on a sheet pan. Brush with olive oil and top with cheese slices. Bake in the oven until toast is golden around the edges and cheese is melted, 5 to 6 minutes.
- Slice cheese toast into quarters.
- When stew is done, remove from heat and stir in kale leaves and lemon juice. Taste and season with some salt and pepper and more lemon juice, if needed.
- Ladle stew into bowls and top with yogurt. Serve with cheese toast on the side and enjoy!

- Add the spice ingredients in a bowl. Mix Well. Set aside.
- Add the red onion and red bell pepper in a Dutch Oven.
- Saute on medium-high heat for 5-7 minutes.
- Add the minced garlic.
- Continue on medium heat for 30 seconds. Continue on medium-high heat and saute for 1-2 minutes.Add the mixed spice ingredients, sauteing for 30 seconds.
- This will release the fragrance.
- Slowly add the broth and water. Stir to mix. Add the diced tomatoes and tamari. Bring it to a boil. Stir well. Immediately lower the heat to a low simmering boil.
- Stir in the cubed sweet potatoes, sausage, and the first can of the butter beans. Continue to simmer for 18 minutes. Add the parsley and miso. Stir to combine. Add the last can of butter beans. Stir well. Continue to simmer. Check to see if the sweet potatoes are tender. Taste Remove the bay leaf.
- Garnish each bowl of stew with parsley before serving

- Brown the sausage and onions in a stock pot. Add in the garlic and stir for 2 minutes or until fragrant.
- Add in sweet potatoes, tomatoes, beef bouillon powder tomato sauce, thyme sprigs, oregano and water. Bring mixture to a low boil and cover cooking for 30 minutes.
- Add in the spinach, salt and pepper to taste and cover cooking for an additional 2 minutes.
- Ladle in large shallow bowls and serve with corn bread or corn muffins.

- Heat the oil in a saucepan over medium heat. Cook sausage, stirring until it breaks into small pieces and is no longer pink, about 10 minutes. Remove sausage with a slotted spoon, and set aside.
- Pour off all but 2 tablespoons of the rendered fat, and discard. Raise heat to medium high, and add the onions; cook, stirring, until golden, about 8 minutes. Add tomatoes, stock, and herbs; simmer over medium heat until the liquid starts to thicken, about 20 minutes. Add the sausage, squash, carrots, parsnips, and fennel; cover, and simmer until the vegetables are tender, about 10 minutes. Add brussels sprouts; cook, covered, about 5 minutes more. Uncover; cook, stirring occasionally, until liquid thickens, 10 to 15 minutes more. Season with salt and pepper; serve hot.
SAVORY SWEET POTATO STEW
Oh so rich, creamy, and delicious on a cold winter night! I found this recipe in BHG magazine, modified slightly and am posting here for safekeeping. Full recipe is a big pot of soup - I halve the recipe to make 4 very healthy portions of stew. Prep note: if the peanut/coconut cream is something you are unsure about (or if you have a picky eater) I would suggest pulling a sampling of the stew prior to adding and test for yourself and your family. I absolutely think it is what makes the dish special, however my BF doesn't like, so his serving is separated out prior to my adding in the cream mixture (and then I, of course, decrease the amount of peanut/coconut cream that I'm adding to the main pot).

- Heat the oil (or butter) in a large pot or Dutch oven over medium heat.
- Add pepper, onion, garlic, ginger, allspice and cayenne pepper (if using) and saute for 5-7 minutes. Garlic and ginger should become quite fragrant and the onions and peppers slightly tender.
- Add potatoes, broth and tomato paste to the pot. Stir to incorporate the tomato paste. Bring to a boil.
- Immediatly reduce heat to low, cover and simmer for 40-45 minutes. Adjust heat as necessary to maintain a gentle simmer. Avoid over-stirring as this can break down the potatoes more than desired.
- Wisk together the coconut milk and natural peanut butter until smooth and creamy. Stir into the stew and simmer for an additional 5 minutes.
- Ladle into bowls and enjoy! This stew is wonderful on it's own or paired with grilled cheese sandwiches or grilled peanut butter sandwiches!

SWEET POTATO AND SAUSAGE GRATIN WITH THYME

- Preheat oven to 400° F. Cook sausages in heavy large skillet over medium-high heat until brown and cooked through, crumbling with back of spoon, about 6 minutes. Using slotted spoon, place sausage in small bowl. Pour off any drippings in skillet. Add broth, wine, apricot nectar and 2 tablespoons butter to same skillet; boil until liquid is reduced to 1 1/2 cups, about 15 minutes. Pour into another bowl. Melt 2 tablespoons butter in same skillet over medium heat. Add leeks and sauté until tender, about 10 minutes. (Can be prepared 1 day ahead. Cover and refrigerate sausage, broth mixture and leeks separately.)
- Arrange half of potatoes in 13 x 9x2-inch glass baking dish. Sprinkle with half of thyme. Season with salt and pepper. Sprinkle with 1/3 cup cheese. Top with half of leeks and all of sausage. Cover with remaining potatoes. Sprinkle with remaining thyme. Season with salt and pepper. Cover with remaining leeks. Top with remaining cheese. Pour broth over. Cover and bake 30 minutes. Uncover and bake until potatoes are tender and liquid thickens, about 15 minutes. Cool slightly.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.

- Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain. - Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
- Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.
