2 tablespoons lemon juice
2 teaspoons Asian (toasted) sesame oil

1 teaspoon cayenne pepper, or more to taste
6 thin slices fresh ginger, minced
2 cloves garlic, minced
2 1-inch-thick tuna steaks, thawed

Steps:

  • Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
  • Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
  • Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

These pan-fried tuna steaks are served rare and taste fancy but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish. The marinade can be made the night before and refrigerated overnight. In the morning, shake marinade to re-emulsify and pour it into a bag with the tuna steaks. Refrigerate through the day, removing the bag from the refrigerator 20 minutes before cooking. This makes for a quick and delicious dinner after a long work day with almost no effort that evening.

1 large orange, peeled and cut into 1/2 inch pieces
1 avocado, pitted and cut into 1/2 inch cubes
2 tablespoons minced red onions
4 teaspoons fresh lime juice
1 small jalapeno chile, stemmed, seeded, and minced
2 tablespoons minced fresh cilantro
salt
3/4 cup sesame seeds
4 tuna steaks, 1 inch thick (8 oz. each)
2 tablespoons vegetable oil
salt and pepper

Steps:

  • For the salsa:
  • Combine all of the ingredients in a small bowl and season with salt to taste.
  • For the fish:
  • Spread the sesame seeds in a shallow dish.
  • Pat the fish dry with paper towels, then rub thoroughly with 1 tablespoon of the oil.
  • Season the fish with salt and pepper.
  • Press both sides of each steak into the sesame seeds to coat.
  • Heat the remaining 1 tablespoon oil in a 12-inch nonstick skillet over medium-high heat until just smoking.
  • Gently lay the tuna in the pan and cook until the seeds are golden brown 1.5 - 2 minutes.
  • Carefully flip the fish and continue to cook until just golden brown on the second side, 1.5 - 3 minutes depending upon your desired doneness.

This is a wonderful fusion dish that seems advanced and complicated but is SO easy to make (and sure to impress)! Please use the highest quality, sushi-grade ahi tuna for best results. Also, I have made this using a Thai chili or a Serrano chili-- both are great, so it is whatever you prefer. The creamy, beautiful taste and texture of the tuna is complimented so well by the heat from the chili and the savory combination of Mexican and Asian flavors-- it is amazing. If you are a fan of Ahi tuna, I guarantee that this will be one of your favorite recipes! Serve it with some fresh homemade margaritas... or some chilled sake-- whatever you prefer! Enjoy!

1/2 lb fresh sushi grade ahi tuna steak
teriyaki marinade (such as Kikkomans)
1 (8 ounce) package good quality pico de gallo (usually found in the produce section at the grocery store)
1 teaspoon teriyaki marinade
2 teaspoons soy sauce
1 pinch of dry ginger
1/2 lime, juice of, -1
1/4 cup cilantro
1 Thai chile, minced

Steps:

  • Place tuna steak in a shallow dish with the terryaki marinade and allow to marinate for about 10 minutes on each side.
  • In the meantime, mix the pico de gallo, terryaki, soy, ginger, lime, cilantro and chili in a small mixing bowl, and set aside.
  • Place a grill pan on the stove and preheat on high. Spray with nonstick cooking spray and sear the Ahi steak, about 1 minute on each side.
  • Spread the pico de gallo across a serving dish, and thinly slice the Ahi Tuna, placing it over the salsa. Garnish with cilantro sprig and lime wedges, if desired.

I don't know if any of you have friends that won't eat 'raw' fish but I've conformed a bunch of my leary friends after they had this extremely rare tuna which was described by them more like a steak. Lots of oooos and ahhhhs. I like to add Asian Seasoning in the sauce also from the Pampered Chef line. Very Good and do not over cook the tuna, should be rare. I usually serve this as an appetizer but would make a great meal too!

1 bunch fresh cilantro, leaves chopped
2 sliced jalapenos
4 teaspoons grated fresh ginger
4 grated garlic cloves
4 limes, juice of
1/2 cup soy sauce
1/8 teaspoon sugar

1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
4 (6 ounce) blocks sushi-quality tuna
2 ripe avocados, halved, pitted, peeled and sliced

Steps:

  • In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 1/4 cup of olive oil.
  • Stir the ingredients together until well incorporated.
  • Place a large skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil.
  • Season the tuna pieces generously with salt and pepper.
  • Lay the tuna in the hot oil and sear for 1 minute to form a slight crust; flip and sear the other side 1 minute. I use a timer.
  • Pour half of the cilantro mixture into the pan to coat the fish.
  • Transfer the seared tuna to plates and serve with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

  • Sear the tuna so that it toasts, fries, and browns (about 45-60 seconds on each side).
