Basic Butter Cookie Dough

Steps:

  • Divide dough in half; form into two 2-inch square logs, each approximately 5 1/2 inches long. Wrap logs in waxed paper; refrigerate until firm, at least 2 hours.
  • Preheat oven to 350 degrees. Slice dough crosswise, 3/16 inch thick; carefully transfer slices to baking sheets.
  • If decorating, brush with egg wash, then sprinkle with sugar or sprinkles. Bake until edges are firm (not brown), 10 to 15 minutes. Cool 1 to 2 minutes on baking sheets; cool completely on a rack.

1/2 preparedBasic Butter Cookie Dough at room temperature
3 tablespoons honey or molasses
1 tablespoon cinnamon
2 teaspoons ground ginger
1 1/2 teaspoons anise seeds, crushed lightly
1/2 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
For icing
1 cup confectioners' sugar
1 1/2 tablespoons fresh lemon juice

Steps:

  • In bowl of a standing electric mixer beat together dough, honey or molasses, and spices until just combined well. Halve dough and on sheets of wax paper form each half into a 12-inch log. Chill logs, wrapped in wax paper, at least 2 hours or overnight.
  • Preheat oven to 350°F.
  • With a sharp knife cut logs into generous 1/8-inch slices and arrange 1/2 inch apart on baking sheets. Bake cookies in batches in middle of oven until pale golden, about 12 minutes, and cool on racks.
  • Make icing:
  • In a small bowl whisk together icing ingredients and transfer to a sealable plastic bag. With scissors cut an 1/8-inch opening in one corner of bag.
  • Arrange cookies as close together as possible on sheets of wax paper and drizzle with icing. Let icing dry completely. Cookies may be stored between layers of wax paper in airtight containers up to 6 weeks frozen.

COOKIE BUTTER AND APRICOT ICEBOX CAKE

Consider this no-bake dessert the layered cheesecake of your dreams. It's simple to make, but packed with complex flavors -- alternating bites of cookie butter-cream cheese, speculoos cookies (think spiced shortbread meets a biscuit cookie) and apricot preserves. A little extra plastic wrap helps you unmold the cake easily.

1 cup apricot preserves
1/2 cup cookie butter spread
1/2 cup confectioners' sugar, sifted
4 ounces cream cheese, at room temperature
2 1/2 cups heavy cream
One 8.8-ounce package speculoos cookies, 2 set aside for garnish (see Cook's Note)

Steps:

  • Line an 8-by-8-inch baking dish with plastic wrap, leaving about 2 inches of overhang on all sides. Stir together the apricot preserves and 1 tablespoon water in a small bowl. Set aside.
  • Combine the cookie butter, sugar and cream cheese in a large bowl and beat with an electric mixer until smooth, about 2 minutes. Scrape down the sides of the bowl as needed. Add the cream and continue to beat, starting on medium speed until the cream and cookie butter mixture are combined and then increasing the speed to medium high, until very stiff peaks form, about 3 minutes.
  • Spread a quarter of the cookie butter-cream on the bottom of the prepared baking dish. Evenly dollop with 3 tablespoons of preserves. Arrange 10 cookies on top of the preserves, breaking some up into little pieces to fill in the gaps. Repeat this layering process 2 more times, each time with a quarter of the cookie-butter cream, 3 tablespoons of the preserves and 10 cookies. Make a final cookie butter-cream layer with the remaining mixture. Cover with plastic wrap and refrigerate for at least 8 hours and up to 12. Refrigerate the remaining preserves.
  • Once completely chilled, remove the plastic wrap from the top of the icebox cake and invert onto a platter. Remove the rest of the plastic wrap. Lightly crush the reserved cookies and sprinkle on top of the cake. Drizzle the remaining preserves over the cookie crumbles.

1 cup packed brown sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to creamed mixture. Stir in nuts if desire. , On a lightly floured surface, shape the dough into three 10-in. x 1-in. rolls. Tightly wrap each roll in waxed paper. Freeze for at least 12 hours. , Cut into 3/8-in. slices and place on greased baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool.

2 teaspoons vanilla extract
½ teaspoon coconut extract
1 ¾ cups sifted all-purpose flour
¾ teaspoon salt

1 cup shredded coconut

Steps:

  • Cream the butter until smooth; add sugar and continue creaming until light and fluffy. Stir in egg, vanilla and coconut flavoring.
  • Sift the flour with the salt and baking soda. Alternately add the flour mixture and the shredded coconut to the creamed mixture. Form the dough into logs about 2 inches in diameter. Tightly wrap dough and chill for at least two hours or overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Remove dough from refrigerator and cut into 1/4-inch slices. Bake on an ungreased cookie sheet until the edges are golden, about 10 minutes. Cool on wire rack.

These are great to make at the beginning of December and then simply bake in the oven when something sweet is quickly needed at the last minute during the holidays. Dough can be kept in refrigerator for a couple of weeks before baking.

2 cups brown sugar
1 cup butter, softened
½ cup white sugar
2 eggs, beaten
1 tablespoon vanilla extract
4 cups all-purpose flour

½ cup red or green candied cherries

Steps:

  • Beat brown sugar, butter, and white sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla extract with the last egg.
  • Mix flour, baking powder, and salt together in a bowl; stir into creamed butter mixture until dough is just mixed. Fold pecans and candied cherries into dough. 2 cups butter
3/4 cup sugar
1/4 cup brown sugar
5 1/4 cups flour, sifted
1 teaspoon baking powder
1 -3 teaspoon ground cinnamon
1 egg, lightly beaten
3 teaspoons pure vanilla extract
1 teaspoon lemon extract (optional)
1/2 cup shredded coconut
1/2 cup macadamia nuts, chopped fine
colored crystal sugar, to decorate or candy sprinkles

Steps:

  • In a medium bowl, sift together flour, baking powder and cinnamon. Set aside.
  • In a large bowl, cream butter and both sugars.
  • Beat in egg and extracts.
  • Add dry ingredients; mix well.
  • Fold in nuts and shredded coconut. [Nuts - do not mince but if not chopped small enough may cause dough not to hold together completely.].
  • Shape dough into four short rolls or 2 longer rolls -- about 3 inches across. Dough will be crumbly looking, not to worry, it will all come together when you form the rolls.
  • Roll in colored sugar, wrap in wax paper, then chill overnight (at least 4 hours).
  • Preheat oven to 350 degrees F.
  • Slice dough in 1/4 inch thick pieces (thickness of slices will affect how many cookies you get.) As soon as you put the first roll in the oven, take out the next roll and slice it (gives it time to come closer to room temperature and bake faster.).
  • Bake in 350 degrees F (preheated) oven for about 10-12 minutes. The first batch will take 5-10 minutes longer straight from the refrigerator.
  • NOTE: If you forget to roll in sugar before freezing, it can also be done just before cutting or even after baking (sprinkle it on top of the cookies.) I've even topped these with candy sprinkles -- colorful :).
