Being a vegetarian, it's always difficult to find recipes, especially for baking, that retain the texture and taste without eggs. I found a recipe for sugar cookies on recipezaar a few months ago, and every time I used it, I would tweak it just a little. Over time, it has developed into this awesome recipe which results in fluffy, light, sugar cookies - emphasis on the fluffy. (No one is a huge fan of flat, hard cookies,after all.) Enjoy!

1/2 cup sugar
2 cups butter
2 tablespoons milk
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 pinch salt
1/8 cup sugar, for topping

Steps:

  • Preheat oven to 350°F.
  • Combine butter and sugar in a bowl, and mix until it gets lighter and fluffier. (Either microwave the butter for about 45 seconds or make sure it's soft enough to whisk).
  • Add vanilla and milk to butter/sugar mixture. (You can be flexible with the amount of vanilla you use).
  • Combine salt, flour and baking powder in a separate bowl.
  • Combine the dry and wet ingredients, using either a spatula or your hands. (Dough should be a little bit sticky at this point).
  • Add extra flour as needed until dough becomes less sticky (I used about 3 T.) You don't want dough to be too tough or sticky.
  • Form 12 equal-sized balls, flatten to about 1/2 - 2/3 inch in thickness. Coat one side with sugar. (Lay about 1/8 Cup sugar on flat surface and lay each flattened ball of dough on it, pressing gently).
  • Bake for 8-10 minutes, until bottom is lightly golden.

1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 1/2 cups sugar, plus more for rolling

Steps:

  • Position oven racks in the top and bottom thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the sugar and butter with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the vanilla and egg and beat to incorporate. Add the flour mixture in 2 batches and beat on medium-low speed until incorporated.
  • Put some sugar in a small bowl. Scoop heaping tablespoonfuls of the batter, roll them into balls and coat in the sugar. Arrange the balls on the prepared baking sheets about 2 inches apart. (There will be additional batter for a second batch.)
  • Bake until the bottoms and edges are barely golden brown, 12 to 14 minutes. Let the cookies cool for a few minutes on the baking sheets, then transfer them to a wire rack to cool completely. When the baking sheets are cool, repeat with the remaining batter. The cookies can be stored in an airtight container for up to 3 days.

2 large egg yolks

3 ½ cups all purpose flour, plus more for dusting

Steps:

  • Make the cookie dough: In a large bowl, cream together the butter, sugar, and cream cheese with an electric hand mixer on high speed for about 5 minutes, until fluffy and the sugar is mostly dissolved. Scrape down the bowl as needed to evenly beat the mixture.
  • Add the egg, egg yolks, vanilla, and almond extract and mix well, scraping down the sides of the bowl.

FLUFFY "CUT-OUT" SUGAR COOKIES

Have you ever had those sugar cookies at publix that are really fluffy and cake like? Well hear is that recipe. I think its the sour cream that makes it so fluffy. I also roll them out maybe 1/4 in thick and under cook them a little but thats probably a personal preference. They do take a little work just like any cut-out cookies but this is something that anytime I ask someone in our family what I can bring for dessert they always say this! I use my kitchen aid but before that I would use my hand blender as long as I could and then mix the last part of the flour in by hand. Hope you enjoy.

3 eggs (beaten well in side bowl)
1 cup butter (prefer land o lakes)
2 cups sugar (prefer extra fine Dixie crystals)

6 1/2 cups bleached all purpose flour (pillsbury)

Steps:

  • beat well 3 eggs in a small side bowl.
  • mix in large bowl moisten butter (20 sec microwave should do it, if you forgot to set the butter out to soften on its on, just softened not melted), sugar, vanilla, and eggs. Blend well.
  • Next add baking soda, salt, baking powder � mix well.
  • Add sour cream �mix well.
  • Add flour one cup at a time, once get to six cups only add a little at a time till you get the right consistency (use aprx. 6.5 cups).
  • Put in freezer or fridge for a little while to make easier to handle.
  • Roll out and cut into you favorite shapes. I like to place on parchment paper on my pans so they come off easy.
  • Cook @ 325º until done (approx. 6-8 minutes depending on the thickness) Watch them closely dont over bake. Don't wait till they turn brown. I always watch the surface of the cookies when they are raw they look shiny once cooked they are matte.
  • let cool then frost with your favorite icing recipe and decorate.

With a super soft, cake-like texture, these cookies are bakery-level delicious. Top with creamy buttercream and decorate with festive sprinkles to customize to any holiday or occasion! Makes 18-24 thick sugar cookies.

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract*
1/2 cup sour cream
2 large eggs
1 teaspoon baking soda
3 cups all purpose flour
1 cup unsalted butter (softened)
2 teaspoons vanilla extract
1.5 teaspoon almond extract
1/4 teaspoon salt
3 cups powdered sugar

Steps:

  • In a large bowl, cream together butter, granulated sugar, powdered sugar, vanilla extract, and almond extract for 1 minute.
  • Mix in sour cream, eggs, and baking soda and mix until combined.
  • One cup at a time, slowly add in the flour and mix on low speed until flour is incorporated. Dough will be on the sticky side.
  • Form dough into a large ball and place on flour-covered surface. Knead dough for 1 minute until it forms a smooth, solid ball and is no longer sticky to the touch. You will likely need to sprinkle about 1 tablespoon flour on top to help it not be sticky. If dough is still too sticky, refrigerate for 30 minutes.
  • Using a rolling pin, roll dough between 3/8-1/2" inch thick. Using a 2.5 inch diameter circle cookie cutter, cut out circles and place on a parchment-covered cookie sheet. If dough is sticking to your cookie cutter, dip the cookie cutter in flour between each cut.* See notes below for alternative to rolling pin.
  • Bake at 350 degrees for 8-10 minutes, or until the center no longer looks wet and doughy. Allow to cool completely before frosting.
  • Buttercream Frosting: In a large bowl, whip butter on high speed for 1 minute until light and fluffy. Add vanilla extract, almond extract, and salt. On low speed, begin adding in powdered sugar 1/2 cup at a time until all is incorporated. Beat on high speed for 2-3 minutes until fluffy and creamy.Spread on top of cookies or place frosting in a large piping bag with a large round tip.

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg yolk
1 egg white, beaten until stiff
1/2 cup sour milk
1 cup soft butter
1/2 cup white sugar
1/2 cup brown sugar

Steps:

  • Cream together butter, sugars, egg yolk and sour milk (I add 1 tbsp of sour cream to milk and whisk).
  • Mix dry ingredients.
  • Mix dry ingredients into creamed butter mixture.
  • Fold stiffened egg white into batter.
  • Drop batter onto cookie sheets 1 inch apart. sprinkle with additional sugar or cinnamon-sugar mixture, if desired.
  • Bake at 375°F for 8-10 minutes.

100g unsalted butter, softened
100g caster sugar
2 eggs
1tsp vanilla extract
30g cornflour
300g plain flour

Steps:

  • Beat the butter and sugar with an electric whisk for 4 mins until light and fluffy. Beat in the eggs, one at a time, then add the vanilla. Whisk in the cornflour and plain flour until the mixture comes together into a dough. Put the dough between two pieces of baking parchment, and roll out to a 6mm thickness using a rolling pin. Chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Peel the top layer of parchment off the dough and stamp out circles using a 6cm round cutter (or the shape of your choice). Re-roll any offcuts and continue stamping out rounds until all the dough is used. Transfer the cookies to a second large baking sheet lined with baking parchment, spacing them 2cm apart (you may need two sheets). Bake for 7-10 mins. Leave to cool on the sheet for 15 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for one week.

2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 (8 ounce) container sour cream
2 eggs
1 tablespoon vanilla extract
1/4 cup coarse sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease large cookie sheets.
  • In medium bowl, mix first 4 ingredients until well combined; set aside.
  • In large bowl with electric mixer on medium speed, cream butter and 1 cup of the granulated sugar until light and fluffy. Beat in sour cream, eggs and vanilla.
  • Beat in half the flour mixture until just combined. Stir in remaining flour mixture with a spoon (dough will be very soft). Spoon dough by heaping tablespoons on prepared baking sheets about 3 inches apart, making about 24 cookies.
  • Butter the base of a flat bottomed glass that about 3 inches wide. Dip bottom of glass into the remaining 1/4 cup granulated sugar. Use sugared glass to flatten cookies into 3 inch rounds, coating bottom of glass with sugar each time.
  • Sprinkle cookies with some coarse sugar.
  • Bake for 10 to 12 minutes, or until tops spring back when lightly pressed. (Cookies will be very light in color).
  • Immediately remove to racks to cool.
