Sauteed Veal Kidneys With Roasted Shallots, Madeira And Cream image

12 shallots
Vegetable oil, as needed
2 pounds veal kidneys
2 tablespoons butter
1/2 cup Madeira
1 cup heavy cream
1 tablespoon olive oil
1 tablespoon chopped parsley
1 teaspoon finely sliced chives

Steps:

  • Heat oven to 400 degrees. Place shallots in a roasting pan or casserole dish. Rub with vegetable oil, cover and roast until soft, about 20 minutes. Meanwhile, split kidneys lengthwise and remove nerve and core from each side. Slice clean kidneys into silver-dollar-size pieces. Set aside.
  • Squeeze roasted shallots out of their skins. Reserve 4 whole shallots for garnish and chop remainder. Place a large skillet over medium-low heat and melt 1 tablespoon butter. Add chopped shallots and saute until lightly browned, 2 to 3 minutes. Add Madeira and saute until reduced to a glaze. Stir in cream and simmer until reduced by half. Remove from heat.
  • Place a clean skillet over medium heat, and add remaining butter and the olive oil. When butter melts, add kidneys and saute until browned on all sides. Remove kidneys from pan, pour out any liquid in pan, and return kidneys to pan. Add cream sauce and simmer until kidneys are cooked to medium (pink inside) and glazed with sauce. Add parsley and chives. To serve, place equal portions on four plates, and garnish each with a whole roasted shallot. If desired, serve with sauteed spinach.

This recipe by Jacques Pepin from his A FRENCH CHEF COOKS AT HOME cookbook, takes an Italian classic & adds French influence to produce a company-worthy outcome. I have not made this dish, but will be searching my grocery store for veal at a reasonable price for it. In the meantime, I hope someone will be as tempted as I am to give this a try. *Enjoy*

12 veal escalopes (4-in diameter & 1/2-in thick, not pounded)
3 medium apples
5 tablespoons lemon juice
1 teaspoon salt
1 teaspoon black pepper (freshly ground)
2 ounces flour
2 ounces butter
2 tablespoons vegetable oil
5 tablespoons calvados
12 ounces double cream

Steps:

  • Peel, core & cut apples into 1/2-in cubes. Place them in a bowl, add lemon juice, mix thoroughly so apples are well-coated & set aside.
  • Sprinkle veal escalopes w/salt & pepper & then w/the flour, shaking off any excess.
  • Heat butter & oil in a lrg skillet at least 15-in in diameter. When hot, add veal a few pieces at a time & saute till lightly brown on both sides (approx 4 min on ea side over med-heat).
  • When escalopes are cooked, arrange them on a platter & set aside in a warm place such as an oven heated to 180°F (80°C).
  • Add apples w/lemon juice & Calvados to the pan. Scrape up all pan encrustations & cook over mod-heat (stir freq) for 3 minutes.
  • Add cream & cont cooking till mixture has turned a rich ivory color. Reduce heat & cook (stir freq) for almost 10 min or till the cream has reduced by half & the sauce coats a spoon.
  • Taste for seasoning; you will prob need to add about 1/2 tsp salt. Spoon sauce over escalopes & serve immediately.
  • NOTE: The recipe says this serves 6 as a main-course, but I think it is more likely to serve 4 as a main-dish or 6 as an appy. I expect it may depend on what the entire menu looks like, so I will let you decide this for yourself.

1/3 tablespoon unsalted butter
3 tablespoons vegetable oil
1/4 cup chopped onion
4 veal scallops, 3/8 inch thick ...pounded to 1/4 inch thick

1 cup sour cream
1/2 cup shredded norwegian goat cheese

Steps:

  • Heat 1 tbsp of butter and 1 tbsp of oil in a heavy pan over med heat. When the foam subsides add the onions and cook until they are transparent.
  • With a spatula remove and place in a small bowl.
  • Add the remaining butter and oil to the pan , when the foam stops add the veal that has been pounded to 1/4 inch thick.
  • Fry over med heat until brown 4 minutes each side.
  • Remove to a heated platter and keep warm in a low oven.
  • For the sauce pour of all but a thin coating of fat from the skillet.
  • Add the cooked onions and cook over high heat for 2 minutes.
  • Lower heat and add sour cream and cheese a little at a time.
  • Continue stirring until cheese has melted and sauce is smooth ,do not let come to a boil.
  • Taste for seasoning and return the veal to the pan ,.
  • Baste the meat with the sauce , let simmer 2 minutes uncovered.
  • Serve right away.

About 2 1/2 tablespoons butter
About 2 tablespoons olive oil

2 large shallots, finely chopped
3/4 cup dry white wine
1 cup beef broth
1/4 teaspoon saffron threads
3/4 cup heavy cream
1/2 cup frozen peas, thawed
1 lemon, cut into wedges

Steps:

  • Sprinkle the veal with salt and pepper. Melt 1/2 tablespoon of butter with 2 teaspoons of oil in a heavy large frying pan over high heat. Working in batches if necessary, add the veal and saute until just cooked through and golden, about 45 to 60 seconds per side. Transfer the veal to a platter and tent with foil to keep it warm. Repeat with the remaining veal, adding more butter and oil to the pan as necessary.
  • Melt 1 tablespoon of butter and 1 tablespoon of oil in the same pan over high heat. Add the mushrooms and shallots. Sprinkle with salt and pepper, and saute until the mushrooms are golden brown, about 8 minutes. Add the wine, broth and saffron, and simmer until the liquid is reduced by half, about 5 minutes. Add the cream and boil until the sauce thickens slightly, stirring often, about 4 minutes. Add the peas and return the sauce to a simmer. Season the sauce, to taste, with salt and pepper.
  • Pour the sauce over the veal and serve with lemon wedges.

4 fresh sage leaves, minced
2 tablespoons olive oil
1 tablespoon butter
1/2 cup dry white wine
2/3 cup beef broth
1/2 cup sun-dried tomato puree
Fresh sage leaves for garnish

Steps:

  • Dredge the veal cutlets in the flour and season with salt, pepper and fresh sage. In large skillet set over moderately high heat and heat the oil and butter until hot. Add the veal cutlets and cook them for 2 minutes on each side or until just cooked. Transfer the veal to a plate. Add the wine to the skillet and reduce it by half. Add the broth and tomato puree and bring to a simmer. Return the veal cutlets to the pan and simmer for 2 to 3 more minutes, or until veal is heated through. 8 (2 ounce) pieces veal scaloppini
1 egg, beaten
1 ½ cups Italian bread crumbs
¼ cup olive oil
¼ cup fresh lemon juice
¼ cup white wine
1 tablespoon cornstarch
1 (15 ounce) can chicken broth
¼ teaspoon garlic pepper
¼ teaspoon lemon pepper
1 cup heavy cream

Steps:

  • Dip veal into the beaten egg, then press into the bread crumbs. Gently shake off excess, and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add breaded scaloppini, and cook until golden brown on both sides, and no longer pink on the inside, about 4 minutes per side. Remove to a paper towel lined plate, and keep warm.
  • Pour in lemon juice and white wine. Increase heat to high, and bring to a boil. Boil for 1 minute. Dissolve the cornstarch in about 2 tablespoons of chicken broth, and set aside. Pour the remaining chicken broth into the skillet, season with garlic pepper and lemon pepper, and bring to a boil. Once the sauce is boiling, stir in the dissolved cornstarch, and cook until thickened and clear, about 1 minute. Remove the sauce from the heat, then whisk in heavy cream. Place the veal on a serving platter, and pour sauce overtop to serve.

3 tablespoons vegetable oil
1 1/2 lbs veal scallops, sliced 1/4 inch thck and cut into strips about 2 inches long and 1/4 inch wide
1 tablespoon finely chopped shallot (or white part of scallions)
1/3 cup dry white wine
1 cup heavy cream
salt and white pepper

Steps:

  • In a heavy 10- to 12- inch skillet, melt 2 Tblsp. butter with the oil over high heat. When the foam subsides, drop in half the veal and, tossing the strips about constantly with a fork, fry for about 2 minutes.
  • When the veal is delicately colored, transfer it to a large sieve set over a bowl. Melt 2 more Tblsp. butter in the pan, then drop in remaining veal and cook as before. Add the veal and its juices to the veal in the sieve.
  • Add the remaining butter to the pan and melt it over moderate heat. Then stir in the shallots and cook for about 2 minutes before pouring in the wine.
  • Raise the heat to high and stir until the liquid comes to a boil. Immediately add the cream and all the drained veal juices.
  • Stirring constantly, boil briskly for 8 to 10 minutes, or until the sauce has reduced to about half its original volume and thickened lightly. Taste for seasoning.
  • Return the veal to the skillet and turn it about until it is thoroughly coated with the sauce. Simmer over low heat for 2 or 3 minutes until the veal is heated through. Serve at once, accompanied, if you like, by Rosti.

This is a fancy, delicious recipe that originates from France. Don't panic! In this recipe meat DOES NOT require to be browned before and that's what gives it it's special delicate taste. Since the meat does not require any browning, only extra good quality veal should be used for this recipe. I strongly suggest milk fed veal for it's delicate texture and taste! Perfect for any dinner party this will definately please everyone's palette. You can easily double this recipe for larger diner parties.

2 lbs stewing veal (Veal shoulder in cubes, strongly suggest milk fed veal)
1 tablespoon lemon juice (fresh)
2 carrots (large, peeled and cut in half)
2 onions (small, inserted with 3 cloves each)
3 garlic cloves
2 celery ribs
2 bay leaves
1/4 teaspoon thyme (3 sprigs if fresh)
1 teaspoon tarragon (3 sprigs if fresh)
3 tablespoons butter
3 tablespoons flour
4 tablespoons heavy cream
1 egg yolk
salt and pepper

Steps:

  • Place veal in a casserole, cover with cold water, add lemon juice and bring to a boil (since you boil the meat, I strongly suggest only first quality veal such as milk fed veal).
  • Remove foam on top of water.
  • When liquid becomes clear, add onion, carrots, garlic, celery, bay leaves and tyme.
  • Cook at low temperature for 1 ½ hour, or until the meat is tender.
  • Remove meat from water, KEEP (3 ½ cups) of cooking liquids.
  • Melt butter in casserole and add flour, cook for 1 minute at low temperature, stirring occasionnaly.
  • Add reserved liquids and mix well.
  • Add 3 tablespoons of heavy cream, mix well.
  • Add salt and pepper to taste. Add tarragon.
  • Cook sauce for 8 to 10 minutes at low temperature.
  • Put back meat in sauce. Simmer for 5 to 6 minutes at low temperature.
  • Remove casserole from heat. Beat egg yolk with 1 tablespoon of cream, add to sauce, mix well.
  • Serve with your choice of green vegetables, white rice, egg noodles or whipped potatoes.

1 cup whipping cream
All purpose flour
6 4-ounce veal cutlets, each pounded to 1/4-inch thickness
24 uncooked shrimp, peeled, deveined

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add onion; sauté until translucent, about 4 minutes. Add mushrooms; sauté until beginning to brown, about 3 minutes. Remove skillet from heat; add brandy. Carefully ignite; when flames subside, return to heat. Simmer until brandy is almost evaporated, about 1 minute. Add beef stock and chicken stock; boil 5 minutes. Add cream; boil until sauce coats spoon, about 14 minutes. Pour sauce into bowl; clean skillet.
  • Place flour in shallow dish. Sprinkle veal cutlets with salt and pepper; coat with flour. Melt 2 tablespoons butter in same heavy large skillet over high heat. Add 3 veal cutlets to skillet and sauté until brown and cooked through, about 2 minutes per side. Transfer veal to plate. Repeat with remaining veal cutlets. Cover veal to keep warm.
  • Melt remaining butter in same skillet. Add shrimp; sauté until just opaque in center, about 3 minutes. Pour sauce into skillet; stir until heated through, scraping up any browned bits. Divide veal among plates. Top with shrimp and sauce.
