I couldn't resist this, since it combines some of my favorite foods (pasta, smoked salmon, and mushrooms).

6 tablespoons butter
2 tablespoons shallots, chopped
1/4 lb porcini mushroom, diced
1 teaspoon salt
1/2 teaspoon white pepper
1/2 lb smoked salmon, cut into strips
3/4 cup heavy cream
1/2 lb white fresh linguine
1/2 lb green fresh linguine, fresh
1/2 cup parmesan cheese, freshly grated

Steps:

  • Heat 3 T. butter in a small saute pan. Saute shallots until translucent. Add mushrooms. Turn heat to high, add salt and pepper, and cook until tender.
  • Lower heat; add salmon and stir rapidly. Add half the cream and continue cooking until thickened and reduced by half.
  • Meanwhile, bring a large pot of water to a rapid boil, salt water, and add linguini. Cook until al dente, about 2-3 minutes; drain.
  • Place a serving casserole over low heat. Melt remaining 3 T. butter, then add rest of cream. Combine. Add cooked linguini, and stir constantly while mixing in about half of the salmon and mushroom sauce. Add grated cheese and stir well.
  • Remove from heat and pour remaining sauce over linguini. Serve immediately.

1/4 cup olive oil
1 12-ounce skinless salmon fillet, cut into 3/4-inch pieces
3 large garlic cloves, chopped
1/2 pound mushrooms, sliced
5 green onions, chopped
1 large tomato, seeded, diced
1/3 cup dry white wine
3 tablespoons drained capers
1/2 pound linguine, freshly cooked
1/4 cup chopped fresh dill or 1 tablespoon dried dillweed
1 tablespoon fresh lemon juice

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Season salmon with salt and pepper. Add to skillet; sauté until just cooked through, about 3 minutes. Using slotted spoon, transfer salmon to plate. Add garlic to same skillet; sauté 30 seconds. Add mushrooms; sauté 2 minutes. Add green onions, tomato, wine and capers; cook until mushrooms are tender, about 5 minutes. Add linguine, dill, lemon juice and salmon and toss. Season with salt and pepper.

2 skinned salmon fillets, preferably organic
2 tablespoons vegetable or peanut oil
1 clove garlic, finely minced
Generous 1/2 cup shiitake mushrooms, stemmed and sliced
14 ounces, about 1 3/4 cups bok choy, stalks separated from the leaves, roughly chopped
3 tablespoons soy sauce
1 teaspoon sesame oil
Salt and freshly ground black pepper

Steps:

  • In a nonstick pan or griddle over medium-high heat add salmon and cook for about 4 minutes per side, flipping with a spatula. While the salmon is cooking, to a large cold skillet, add 2 tablespoons oil and garlic, then, turn pan on to protect garlic from burning. Add sliced mushrooms, and bok choy stalks, stirring constantly for 1 minute. Cover pan and cook for 5 minutes. Remove the lid and add the bok choy leaves, soy sauce, sesame oil, and continue to cook for another 2 to 3 minutes or until the leaves have wilted.
  • Pile the mushrooms and greens on a plate with the salmon. Season with salt and pepper and serve immediately.

  • Poach your smoked salmon fillets with a knob of butter in a large pan on a low-medium heat. Whilst these are gently cooking away, boil a pan of water 3/4 full for the linguine pasta. Once this has been brought to boil, add the pasta and reduce the heat - it will take about 15 minutes to cook the way through.
  • Your salmon should be nice and pink now so keep turning it over until the skin is easy to remove. Using a pair of tongues, remove the skin and break the salmon up into flakes, ensuring it has cooked all the way through.
  • Add the mushrooms to the pan with the salmon and season with the dried parsley and a douse of cracked black pepper. This is like poaching the salmon and mushrooms together in beautiful flavours, enriching the somewhat bland vegetables. Cut the ends of the green beans as some may have a spiked stalk and this isn't pleasant to eat. Add the green beans into the pasta and let them boil for around 5 minutes.
  • Taste some of the pasta to see if it has cooked through, if there is still some bite then leave to boil for another few minutes. The pasta, once cooked, should be seamless to bite through, like you are eating silky ribbons. Drain the pasta and the green beans and add these to the pan with your salmon and mushrooms. Save some of the starchy water as you will need this to keep to mixture fresh.
  • Now all your ingredients are in one pan, add the garlic and herb cream cheese along with a splash of milk and stir through to cover all components. Just before serving, add the ladle of starchy water and stir through so the pasta looks full bodied and covered in a creamy sauce.
  • Serve and enjoy with a sprinkle of parsley and optional extra black pepper.

1 shallot, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the snap peas during the last 2 minutes of cooking. Reserve 1 cup of the cooking water, then drain.
  • Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the shallot and cook, stirring, until slightly softened, about 2 minutes. Add the salmon; season with 3/4 teaspoon salt and a few grinds of pepper. Cook, turning once, until the salmon is just cooked through, about 3 minutes. Transfer to a plate.
  • Add the pasta and snap peas to the skillet along with 1/2 cup of the reserved pasta cooking water, the remaining 2 tablespoons butter, the herbs and lemon juice. Cook, tossing and adding more of the reserved cooking water if necessary, until the pasta is coated, about 1 more minute. Season with salt and pepper. Top with the salmon.

2 tablespoons lemon juice

  • Cook linguine according to package directions.

LINGUINE WITH LEMON, GARLIC AND THYME MUSHROOMS



Linguine with Lemon, Garlic and Thyme Mushrooms image

This is one of my proudest creations, and I suppose a good example of a recipe that isn't traditionally from Italy, but sits uncontroversially in her culinary canon. I don't think it would be too presumptuous to name this linguine ai funghi crudi. It is about as speedy as you can imagine: you do no more to the mushrooms than slice them, steep them in oil, garlic, lemon and thyme and toss them into the hot cooked pasta. I'm afraid, I had to have this forcibly taken away from me during the photographic shoot of this book, otherwise I'd have eaten it all up before it had even had its picture taken. The dressed mushrooms also make a great salad, but in which case boost the quantities of sliced mushrooms (keeping other ingredients the same, and obviously you're omitting the pasta altogether) to 375g/6 cups. If all you can find is regular button mushrooms, this pasta is still worth making - so no excuse for not.

One 1 1/2-pound salmon fillet, or two 12-ounce fillets
2 tablespoons extra virgin olive, plus about 1 teaspoon for the baking sheet
Salt and freshly ground pepper
1 pound white or cremini mushrooms, rinsed briefly and wiped dry
2 tablespoons extra-virgin olive oil
2 shallots, minced
2 to 4 garlic cloves (to taste), minced
2 teaspoons chopped fresh thyme or rosemary (or a combination), or 1/2 to 1 teaspoon dried
1/4 cup dry white wine, such as Sauvignon blanc

Steps:

  • Preheat the oven to 300ºF. Cover a baking sheet with foil and lightly oil the foil. Place the salmon on top. Season with salt and pepper. Fill a roasting pan with boiling water and place it on the oven floor.
  • Place the salmon in the oven and bake until the fish flakes and white bubbles of protein appear on the surface, 10 to 20 minutes, depending on the size of the fillets. Remove from the heat.
  • Meanwhile, cook the mushrooms. Heat a large, heavy frying pan over medium-high heat and add 1 tablespoon of the olive oil. When the oil is hot (you can feel the heat when you hold your hand above the pan), add the mushrooms and cook, stirring or tossing in the pan, for a few minutes, until they begin to soften and sweat. Add the remaining oil, turn the heat to medium, and add the shallots, garlic, and herbs. Stir together, add 1/2 teaspoon salt and freshly ground pepper to taste, and cook, stirring often, for another 1 to 2 minutes, until the shallots and garlic have softened and the mixture is fragrant. Add the wine and cook, stirring often and scraping the bottom of the pan, until the wine has just about evaporated. Taste and adjust seasonings. Remove from the heat.
  • Serve the salmon with a spoonful of mushrooms on top or on the side.

knob of butter
1 large shallot, finely chopped
140g frozen peas
2 skinless salmon fillets, cut into chunks
140g low-fat crème fraîche
½ low-salt vegetable stock cube
small bunch of chives, snipped

canned mushroom slices (about a handful or so)
knorr's creamy pesto sauce mix
1/4 cup olive oil
1 cup skim milk
4 -6 ounces salmon fillets
4 slices provolone cheese
shaved parmesan cheese
salt and pepper

Steps:

  • 1. Boil water & put on pasta.
  • 2. Remove any skin from salmon. Salt and pepper & grill 4-6 minutes on each side. You'll know it's done when the salmon becomes flakey.
  • 3. In a small sauce pan, mix pesto sauce mix with the oil and milk. Stir constantly and bring to a low boil. Turn heat down and continue to stir until all oil has been incorporated and the sauce begins to thicken.
  • 4. Add mushrooms to sauce and allow them to cook a little while the pasta gets to al dente.

6 tablespoons extra-virgin olive oil
12 ounces fresh mushrooms, thinly sliced
2 cloves garlic, minced
1/3 cup finely chopped Italian parsley
Salt and freshly ground black pepper
1/2 pound linguine
Freshly grated Parmesan cheese

Steps:

  • Set three quarts of salted water over high heat in a large covered pot.
  • While the water is heating, place a large skillet over high heat and add the olive oil. Add the mushrooms and cook, stirring, about six minutes, until they begin to brown. Stir in the garlic and parsley and remove from heat.
  • When the water boils, add the linguine and cook, uncovered, until it is al dente, about seven minutes. Drain thoroughly. Season to taste with salt if desired.
  • Place mushroom mixture over medium heat, add the linguine and toss. Re-season with salt and pepper if necessary. Serve with Parmesan cheese on the side.

Steps:

  • Place mushrooms and butter in a small microwave-safe bowl. Cover and microwave on high for 3-4 minutes or until mushrooms are tender, stirring twice. Add the lemon juice and seasonings., Place salmon in an 8-in. square microwave-safe dish; top with mushroom mixture. Cover and microwave on high for 4-6 minutes or until fish flakes easily with a fork. Let stand for 5 minutes before serving.

2-3 ounces linguine
1 teaspoon butter
2 scallions, sliced fairly thin
A splash of vodka
2 or 3 slices smoked salmon
3-4 tablespoons heavy cream
Freshly ground pepper
1 teaspoon capers, rinsed
A scattering of chopped fresh parsley

Steps:

  • While the linguine is boiling (see page 181), melt the butter in a small wok or a medium skillet. Toss in the scallions, and sauté gently for 1 minute, stirring. Splash in the vodka and let it cook down a little. Tear or cut the salmon into small bite-sized pieces, and stir them into the sauce. Pour in the cream and bring to a simmer. When the linguine is done al dente, scoop it up with a spider and tongs, letting the water drain off, and mix it in with the sauce. Grind pepper generously over the pasta, and stir in the capers and parsley, then spoon it all up into a warm bowl.
