Brussels Sprouts are coming on in the garden. I am drooling just thinking about eating them. I remember my dad trying to get us to eat them when we were kids and how horrible we thought they were. I am so glad that our taste buds change as we change and grow. I can't imagine not eating them now.

1 tablespoon(s) olive oil, extra virgin
1 pound(s) brussels sprouts, trimmed and thinly sliced or quartered
2 medium carrots, quartered and cut into 1/4-inch slices
1/4 cup(s) golden raisins
1 cup(s) chicken broth, low-salt
- kosher salt and freshly ground black pepper

Steps:

  • Heat oil in a large skillet over medium heat. Add brussels sprouts and carrots; saute until sprouts start to turn golden brown, about 3 minutes.
  • Add raisins and chicken broth; continue cooking, stirring occasionally, until sprouts are tender when pierced with a paring knife, about 12 minutes.
  • If the skillet becomes too dry before sprouts are tender, add up to 3 tablespoons water, and continue cooking. Remove from heat, and season with salt and pepper. Serve hot.

1/2 cup chopped pecans
2 pounds brussels sprouts, halved
4 tablespoons unsalted butter
1/2 teaspoon seasoned salt
2 tablespoons packed light brown sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large skillet, toast the pecans over medium heat until fragrant and lightly browned, about 8 minutes. Remove from the pan and set aside.
  • Meanwhile, remove any wilted outer leaves from the brussels sprouts and cut off the stems. Soak the sprouts in cold water and drain well.
  • Using the same skillet, melt the butter over medium heat until bubbly. Add the brussels sprouts and seasoned salt. Stir and cook, tossing frequently, until barely tender, 12 to 15 minutes.
  • Add the brown sugar, pepper and reserved pecans to the skillet. Toss the brussels sprouts to coat and cook, stirring frequently, until the sugar is melted and the brussels sprouts are coated in the melted sugar and pecans, about 2 more minutes. Transfer to a warm serving dish and serve immediately.

Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a large skillet over medium heat. Add brussels sprouts and carrots; saute until sprouts start to turn golden brown, about 3 minutes. Add raisins and chicken broth; continue cooking, stirring occasionally, until sprouts are tender when pierced with a paring knife, about 12 minutes. 2 thick slices bacon
4 cups Brussels sprouts (about 1 pound), trimmed, halved
Kosher salt and freshly ground black pepper
1/4 cup golden raisins
1 medium shallot, finely chopped
1 tablespoon unsalted butter
1/2 cup low-salt chicken broth
2 tablespoons apple cider vinegar

Steps:

  • Heat oil in a large heavy skillet over medium heat. Add bacon and cook, turning occasionally, until crisp, about 5 minutes. Using tongs, transfer bacon to paper towels to drain. Let cool. Coarsely crumble. (Make sure crumbled bacon is unreachable by children, or it will disappear before you need it again.)
  • While bacon cools, add brussels sprouts to drippings in skillet; season with salt and pepper. Cook, stirring often, until well browned in spots and beginning to soften, 5-7 minutes. Reduce heat to low and add raisins, shallot, and butter; cook, stirring often, until shallot is soft, about 3 minutes. Add broth to skillet; increase heat and bring to a boil, scraping up browned bits from bottom of pan. Reduce heat to medium-low and simmer until broth has evaporated, 1-2 minutes. Stir in vinegar and crumbled bacon. Season to taste with salt and pepper.

6 ounces Italian pancetta or bacon, 1/4-inch dice
1 1/2 pounds Brussels sprouts (2 containers), trimmed and cut in 1/2
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3/4 cup golden raisins
1 3/4 cups Homemade Chicken Stock, recipe follows, or canned broth
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme20 sprigs fresh dill
1 head garlic, unpeeled and cut in 1/2 crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns

Steps:

  • Heat the olive oil in a large (12-inch) saute pan and add the pancetta. Cook over medium heat, stirring often, until the fat is rendered and the pancetta is golden brown and crisp, 5 to 10 minutes. Remove the pancetta to a plate lined with a paper towel.
  • Add the Brussels sprouts, salt, and pepper to the fat in the pan and saute over medium heat for about 5 minutes, until lightly browned. Add the raisins and chicken stock. Lower the heat and cook uncovered, stirring occasionally, until the sprouts are tender when pierced with a knife, about 15 minutes. If the skillet becomes too dry, add a little chicken stock or water. Return the pancetta to the pan, heat through, season to taste, and serve.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

2/3 cup dried mango, slices
2 teaspoons margarine
4 teaspoons water
4 teaspoons maple syrup
1/4 teaspoon salt

4 teaspoons lime juice, freshly squeezed preferred

Steps:

  • Trim outer leaves and hard stems from sprouts; cut in half lengthwise.
  • Thinly slice sprouts crosswise.
  • Coarsely chop mango slices.

  • Drizzle with water, then syrup.
  • Sprinkle with salt and pepper.

4 shallots, halved and thinly sliced
4 tablespoons butter, divided
2 tablespoons apple cider vinegar
1 tablespoon sugar
1/2 cup water
salt and pepper, to taste

Steps:

  • In medium skillet over medium high heat, melt 2 tablespoons butter.
  • Saute the onions until softened.
  • Season with salt and pepper.
  • Add the vinegar and sugar.
  • Mix until sugar has dissolved.
  • Remove to bowl and set aside.
  • Add another 1 tablespoons butter to the pan.
  • Saute the Brussels Sprouts for 5 minutes. season with salt and pepper.
  • Add the water, 1 tablespoons butter and cook, uncovered, until done.
  • Toss with the onions and heat through.

The majority of the preparation work comes in removing the core and pulling the Brussels sprout layers apart. This is well worth the effort, as the tender leaves cook quickly and evenly to a beautiful bright green color, lightly glazed with olive oil and bits of crisp pancetta.

6 cups Brussels sprouts, trimmed
2 1/2 ounces pancetta, roughly chopped
1/4 cup extra virgin olive oil
1/2 cup onion, chopped
1 tablespoon butter

Steps:

  • Slice each Brussels Sprout in half and remove the core; gently pull the layers of leaves apart.
