OVEN ROASTED POTATOES & SAUSAGE SHEET PAN DINNER

- Preheat the oven to 400 degrees F. Line sheet pan with parchment paper or foil for easier cleanup .
- Slice the baby red potatoes in half. In a small bowl, mix together all of the seasonings.
- Place the red potatoes and baby carrots on the sheet pan. Drizzle 2 tablespoons olive oil and half of the seasoning mix on top. Gently Toss to combine and place in the preheated oven for 20 minutes.
- Prepare the asparagus by trimming the ends and cutting into 2 inch pieces. Thinly slice the yellow onion and thickly slice the sausage.
- Remove the potatoes and carrots from the oven and push them to one side of the pan using a spatula. On the other side add the chopped asparagus, sliced onion, sausage, and minced garlic.
- Drizzle the remaining 2 tablespoons olive oil and remaining seasoning mix.
- Toss to combine and then toss those ingredients with the potatoes and carrots.
- Bake for another 10-15 minutes stir or until potatoes and onions are roasted to your preference. Top the dish with freshly grated Parmesan.
- Serve immediately. Enjoy!
- Salt and pepper to taste. It is also good with a little lemon juice squeezed over the top.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix Kielbasa, potatoes, onion, baby carrots, and garlic in a roasting pan; season with salt and pepper. Drizzle olive oil over the mixture; stir to coat. Cover the baking dish with aluminum foil.
- Bake in preheated oven for 1 hour. Remove aluminum foil and bake until potatoes are completely cooked, about 30 minutes more.

Easy weeknight supper. Found the recipe a hundred years ago when I was first married and have since lost the cookbook, so I go by my (increasingly unreliable) memory. Adjust quantities as you wish, but if you go too light on the lemon and pepper, you will lose the tangy bite that makes this recipe.

Steps:
- Put frozen sausages in a large frying pan (you'll need one with a lid). As directed on the package, add water as directed on the package, cover and simmer as directed (generally 10 minutes).
- Drain the water.
- Now brown the sausages over medium heat in a bit of oil or cooking spray. You have two choices: you can slice them first or after frying. Note: when I used the Johnsonville Brats I didn't need to brown them.
- Add the cut potatoes and carrots to the pan.
- Add the water, cover and simmer until the potatoes and carrots are cooked (10-15 minutes), stirring occasionally.
- When the vegetables are cooked, add the lemon juice and pepper to the pan and stir. The lemon juice thickens and coats the food.
- Serve and enjoy!

BAKED FARMER SAUSAGE, POTATOES, AND CARROTS WITH GRAVY
This used to be the traditional Mennonite Sunday lunch at our house -- it has since become more likely at supper, but it's just as traditional and just as delicious! I'm not sure where farmer sausage is all available or whether it's one of those local specialties just available in Manitoba, so I've posted a recipe for that as well for those of you who make your own sausages. (#184513) If you can't buy it nearby or make it yourself, I'm terribly sorry -- you're definitely missing out! This recipe is for those of you who can.

- If desired, peel frozen farmer sausage. (The best way is to hold it under a trickle of warm water.) Break sausage into 4-6 chunks.
- Place potatoes and carrots into a roaster or large casserole dish. Add water to cover the bottom of the dish.
- Place frozen sausage chunks over top (so drippings will flavour the vegetables), cover, and bake at 375F for 1-1/2 hours.
- Remove from oven and drain juices from casserole dish into a saucepan. (You may want to put the sausage and vegetables in a serving dish now and keep warm in the oven.).
- For gravy: Mix flour and milk together, adding milk gradually so a paste forms and slowly gets thicker -- you don't want lumps! (Actually, a Tupperware gravy shaker works best for this. You can just throw it all together and shake it up without worrying about lumps at all.).
- Add milk mixture to drippings and bring to a boil, stirring constantly, until gravy is thickened. (Depending on how much water content your sausage had, you may need to add a little more flour or milk to achieve the desired thickness.).
- Add salt and pepper to taste and serve.

- For each of 2 foil packets, arrange a double thickness of heavy-duty foil (about 17x15 in.) on a flat surface. , Cut brats into thirds. Divide the brats, potatoes, carrots, onion and mushrooms evenly between the 2 double-layer foil rectangles. Dot with butter. Sprinkle with soup mix, soy sauce and pepper. Bring edges of foil together; crimp to seal, forming 2 large packets.
