STIR-FRIED NOODLES WITH SICHUAN SAUCE

Number Of Ingredients 16

6 medium dried black mushrooms
2 tablespoons cornstarch
2 tablespoons water
2 teaspoons red pepper sauce
2 quarts water
6 ounces chinese egg noodles or linquini noodles
2 tablespoons vegetable oil
2 tablespoons vegetable oil
10 ounces lean ground pork
2 tablespoons brown bean sauce
1 tablespoon finely chopped garlic
2 cups chicken broth (see Soups: Chicken Broth)
2 teaspoons dark soy sauce
1 teaspoon sesame oil
2 tablespoons , diced pimiento
1 tablespoon , chopped green onion, (with top)

Steps:

  • Soak mushrooms in hot water 20 minutes or until soft drain. Rinse in warm water drain. Squeeze out excess moisture. Remove and discard stems cut caps into 1/4-inch pieces. Mix cornstarch, 2 tablespoons water and the pepper sauce.Heat 2 quarts water to boiling in Dutch oven stir in noodles. Heat to boiling reduce heat to medium. Cook uncovered 5 minutes or until done drain. Rinse in cold water drain well. (If using linguini, cook as directed on package.)Heat wok until very hot. Add 2 tablespoons vegetable oil tilt wok to coat side. Reduce heat to medium. Add noodles cook until light brown, using a fork to separate and flip noodles as they cook. (If noodles are not browning and appear to be dry, add 1 tablespoon vegetable oil.) Remove noodles to heatproof platter keep warm in 300° oven.Heat wok until very hot. Add 2 tablespoons vegetable oil tilt wok to coat side. Add pork stir-fry until pork is no longer pink. Add mushrooms, bean sauce and garlic stir-fry 1 minute. Add broth heat to boiling. Stir in cornstarch mixture cook and stir until thickened. Stir in soy sauce, sesame oil and pimiento cook and stir 15 seconds. 1 stalk scallion, finely chopped
1/2 lb ground pork or 1/2 lb ground beef
1 tablespoon sherry wine
1 tablespoon light soy sauce
2 tablespoons brown bean sauce
2 tablespoons hoisin sauce
1 tablespoon sugar
1/2-1 tablespoon chili paste with garlic
10 water chestnuts, finely chopped
1/4 cup szechwan preserved vegetables, diced
4 -6 dried black mushrooms (soaked in boiling water 20 minutes, stems removed, diced)
6 -8 ounces whole bamboo shoots, diced
1/4 cup chicken stock
1 lb fresh Chinese noodles (medium)
1 tablespoon sesame seed oil
5 teaspoons light soy sauce
5 teaspoons sesame seed oil

Steps:

  • Heat 2 tbsp oil in wok to 275°F.
  • Stir-fry ginger and scallion 1 minute.
  • Turn up heat to 425F, and add the meat.
  • Stir-fry 3 minutes.
  • Add sherry and soy sauce.
  • Cook 1 minute, and remove from wok.
  • Heat 2 tbsp oil in wok to 275°F.
  • Add bean sauce, hoisin sauce, and sugar.
  • Stir-fry 2 minutes.
  • Add chili paste, water chestnuts, preserved vegetables, mushrooms, and bamboo.
  • Stir-fry 2 minutes.
  • Add pork and chicken stock.
  • Cook 5 minutes at 250°F.
  • Put noodles into boiling water, and cook uncovered 3-5 minutes.
  • Drain, and rinse with cold water, then with hot water.
  • Mix with sesame seed oil.
  • Arrange noodles on platter, and pour meat mixture over them.
  • Serve in individual bowls, adding 1 tsp soy sauce& 1 tsp sesame seed oil to each bowl.

3 whole (6 split) chicken breasts, bone-in, skin-on
Good olive oil
Kosher salt and freshly ground black pepper
1 bunch broccoli, cut into florets and stems discarded
6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon Asian hot chili oil
2 tablespoons dark toasted sesame oil
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
4 scallions, sliced diagonally (white and green parts)
1 yellow bell pepper, julienned
1 red bell pepper, julienned

Steps:

  • Preheat the oven to 350 degrees F. Place the chicken breasts on a sheet pan, skin side up. Rub the tops with olive oil and sprinkle liberally with salt and pepper. Roast for 35 minutes, until cooked through. Set aside until cool enough to handle. Remove the meat from the bones and discard the skin and bones. Shred the chicken in large bite-sized pieces and set aside.
  • Meanwhile, bring a large pot of salted water to a boil and blanch the broccoli florets for 2 minutes. Drain and immediately immerse in a bowl of ice water to stop the cooking and set the color. Drain and set aside.
  • Place the garlic, ginger, vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, 1/2 teaspoon black pepper and the cayenne pepper in a food processor fitted with a steel blade and puree until smooth. Set aside.
  • Add a splash of olive oil to a large pot of boiling salted water and cook the spaghetti according to the directions on the package. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with the sauce. Add the scallions, peppers, chicken and broccoli and toss well. Serve warm or at room temperature.

1 tbsp vegetable oil
2.5cm piece fresh ginger, finely chopped
2 garlic cloves, finely chopped
1 large carrot, cut into matchsticks
1 yellow pepper, deseeded and thinly sliced
100g mangetout, sugarsnaps or frozen peas
2 spring onions, finely chopped
85g beansprout (optional)
2 tbsp soy sauce
1 tsp white wine vinegar

Steps:

  • Cook the noodles according to pack instructions.
  • Meanwhile, heat the oil in a wok or large frying pan, then stir-fry the ginger, garlic, carrot, pepper and mangetout, sugar snap or frozen peas over a high heat for 2-3 mins.
  • Drain the noodles thoroughly, add to the pan with the onions and beansprouts, if using, then stir-fry for 2 mins.
