- Preheat oven to 375F.
- Prepare a cookie sheet that has ½ inch sides (to catch oils) with cooking spray or parchment paper. Set aside.
- Prepare a heat-safe dish with a paper towel or lint-free, clean kitchen towel to hold the finished sausage balls. Set aside.
- Wash your hands thoroughly with warm soap and water.
- Combine all ingredients in a large mixing bowl. Using your hands, mix, knead, and combine the dough until it comes together into a soft ball, usually about three minutes.
- Take out half the dough and set on a plate. Put the bowl of remaining dough in the fridge while you work the other half.
- Roll into 1-inch balls with your hands, placing them about ½-inch apart on the baking sheet.
- Place sheet in oven and bake for 20 minutes. You don't need to turn them, but they come out a bit crisper if you turn the sausage balls using tongs at the 15-minute mark, then let them continue baking for the remaining five minutes.
- Remove from oven to cool on a heat-safe surface.
- After five minutes, move the balls to your prepared dish with a towel for serving.
- Repeat steps with remaining dough, or package up for later use.

- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.

BISQUICK® SAUSAGE BALLS
These sausage balls are made with Neese's® Sausage. Perfect for breakfast and great for the holidays. I have provided the doubled recipe. You can cut it in half if you wish. I usually bag half the recipe and put into fridge and freeze the other half. Great in toaster oven.

- Preheat oven to 375 degrees. Spray baking sheets with cooking spray.
- Using a heavy-duty stand mixer with a dough hook (or your hands), mix the raw sausage and cheese together, then add the cream of mushroom soup. Add the garlic powder and Italian seasoning, then gradually add the biscuit mix until all is thoroughly combined.
- Shape into small balls about the size of a walnut, and place on baking sheet. Bake for 18-20 minutes, then remove and cool on a rack.
- You can also freeze these, either after they're cooked or (the way I prefer to do it) after you shape them and put them on the pan. I put them into the freezer for a couple of hours right on the baking sheets, then take them out and put them in a zip-top bag. Then I can take out a few at night, thaw them in the fridge, and pop them into the oven the next morning for a quick breakfast.

- Heat oven to 350 degrees. Grease one or two cookie sheets, depending on your oven and how many you want to cook at one time.
- Dump sausage, baking mix, and cheese in a BIG bowl and mix with your hands. It's gross feeling if your not used to it but you have to do it this way.
- If the mix is too dry, and mine have always been, put about 1/4 cup of the water in, mix around. If you are still not able to roll the mix into little balls because it's too dry then pour a little bit more water into it. If it gets too wet pour a little bit more baking mix into it.
- Roll into 1 inch balls and place on cookie sheet. Bake for 20-25 minutes. They should be golden brown and sausage cooked through.
- Repeat with remaining mix until all gone. Enjoy!
