Here's what you need: skinless salmon, garlic, olive oil, salt, pepper, paprika, avocado, red onion, fresh cilantro, olive oil, salt, pepper, lime juice

6 oz skinless salmon
1 clove garlic, minced
olive oil, to taste
salt, to taste
pepper, to taste
½ teaspoon paprika
1 avocado, chopped
¼ red onion, chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon olive oil
salt, to taste
pepper, to taste
1 tablespoon lime juice

Steps:

  • Preheat the oven to 400˚F (200˚C). Line a baking sheet with parchment paper.
  • On the prepared baking sheet, rub the salmon with the garlic, olive oil, salt, pepper, and paprika.
  • Bake for 10-12 minutes, until cooked through.
  • Make the avocado topping: In a small bowl, gently mix together the avocado, red onion, cilantro, olive oil, salt, pepper, and lime juice. Don't overmix or you'll break down the avocado.
  • Spoon the avocado topping over the salmon.
  • Enjoy!

1 tablespoon vegetable oil
3 tablespoons butter
Two 6-ounce fillets salmon
Kosher salt and freshly ground black pepper
1 tablespoon honey
1 tablespoon soy sauce
Zest and juice of 2 limes, plus lime wedges, for serving
2 tablespoons finely chopped fresh cilantro
Steamed rice, for serving

Steps:

  • Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. Add the fish to the skillet and cook for 3 to 4 minutes per side, depending on the thickness of the fish and the degree of doneness you like. Remove from the skillet and keep warm.
  • Return the skillet to medium heat and add the honey, soy, remaining 2 tablespoons butter and half of the lime zest and juice. Cook, stirring, until the butter melts and starts to bubble. Cook for a minute until the sauce thickens a little. Add the salmon and spoon over the sauce. Cook for another minute, basting as you go. Sprinkle generously with the cilantro.
  • Stir the remaining lime juice and zest into the cooked rice. Serve the salmon with the rice, extra sauce and lime wedges on the side.

1/2 cup cilantro, stems removed, chopped
1 large garlic clove, finely chopped
2 tablespoons lime juice
2 tablespoons olive oil, separated
1/4 teaspoon salt (optional)
1 lb salmon fillet (3 small)

Steps:

  • Grease pan with 1T olive oil.
  • Place fillets, skin side down in an 8x8 baking dish.
  • Combine cilantro, garlic, lime juice, remaining olive oil, and (if desired) salt in a small bowl.
  • Pour mixture over fish.
  • Bake at 425 for 12-15 minutes, to desired doneness. (Thicker fillets will require additional time.).

  • Pat dry room temperature salmon fillets with paper towel. Season all over with salt, pepper. Squeeze 1-2 teaspoons of lemon juice over each fillet and rub in the flavour.
  • Heat the olive in a large non-stick pan or skillet over medium-high heat until hot. Add salmon fillets, flesh side down, while pressing lightly so the entire surface of the flesh comes into contact with the pan. Sear, undisturbed, for 3-4 minutes until crispy and golden.
  • Flip and sear the other side of each fillet for TWO minutes. Then, add in the butter, chopped garlic and remaining lemon juice.
  • Continue to cook the salmon for a further 1-2 minutes, or until salmon reaches desired doneness, while stirring the butter and garlic around each fillet. (The butter will begin to brown slightly. YUM!) Taste test and season with salt and pepper to your tastes, and add more lemon if desired.
