Healthy scrambled eggs on a flatbread! A delicious breakfast pizza made on a flatbread and served with salsa.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Whisk eggs and milk together in a bowl; season with salt and pepper.
- Spray a large skillet with cooking spray; heat over medium-high heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Add sausage, bacon, tomatoes, and mushrooms, and cook until vegetables are soft, about 3 minutes.
- Spread scrambled mixture over flatbread; top with shredded Monterey Jack cheese.
- Bake flatbread pizza in the preheated oven until the cheese is bubbly and underside of the crust is golden brown, 5 to 7 minutes.

- In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt and 1-1/4 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn onto a lightly floured surface, knead until smooth and elastic, about 6-8 minutes., Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place for 30 minutes. , Punch dough down; roll into a 13-in. circle. Transfer to a 12-in. pizza pan coated with cooking spray. Build up edges slightly. Prick dough thoroughly with a fork. Bake at 425° for 8-10 minutes or until golden brown., Meanwhile, drain salsa, discarding the liquid. In a large skillet over medium heat, cook and stir the tomatoes, onion and green pepper in oil until crisp-tender. Combine eggs and seasonings; add to the pan. Cook and stir until eggs are set., Spoon salsa and egg mixture over crust; sprinkle with cheese. Bake for 3-5 minutes or until cheese is melted.

- Mix TVP, vegetable broth, and flaxseed meal together in a large mixing bowl and let sit for 5 minutes. Add oats, yeast, flour, gluten, sage, black pepper, fennel seeds, garlic powder, thyme, smoked paprika, salt, and cayenne. Mix until well blended.
- Combine water, soy sauce, and maple syrup in a separate container and mix well. Add to the TVP mixture and combine into a slightly crumbly dough. Mix well to activate gluten and let dough sit for 5 minutes; dough should stiffen slightly and become less crumbly.
- Form into tablespoon-size balls and flatten slightly.
- Heat oil in a cast iron or nonstick frying pan over medium heat. Cook sausage patties in the hot oil until golden brown, about 5 minutes on each side.

GRILLED BREAKFAST PIZZA WITH SAUSAGE GRAVY
All the classic flavors of a Southern breakfast-on a pizza! Make the sausage gravy indoors, and then turn your outdoor grill into a pizza oven.

- Prepare an outdoor grill for medium heat. Line a baking sheet with parchment paper.
- Heat the oil in a large nonstick skillet over medium-high heat. Add the sausage, and cook, stirring and breaking up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Remove from the heat, and use a slotted spoon to transfer the sausage to a plate.
- Reserving 2 tablespoons of drippings in the skillet (drain or add oil as needed), return it to medium-high heat. Whisk in the flour, and cook, whisking frequently, until the mixture becomes loose and turns a light tan color, 1 to 2 minutes. Slowly whisk in the milk, 1/2 teaspoon pepper and 1/4 teaspoon salt. Simmer, whisking frequently, until the sauce has thickened to the consistency of thin gravy, 6 to 8 minutes. Return the cooked sausage to the skillet, and stir. Remove from the heat, cover and set aside.
- Divide the pizza dough into 4 balls. Dust a clean flat work surface with flour, and roll each ball into an 8-inch circle. Transfer the dough circles to the prepared baking sheet, and brush both sides with oil.
- Lightly oil the grill grates. Grill the crusts until they start to puff and distinct grill marks appear on the underside, about 1 minute. Flip. Evenly divide the Cheddar among the crusts, leaving a small well in the center of each. Immediately crack 1 egg into each well. Grill, covered, until the whites have completely set and the Cheddar has melted, 8 to 10 minutes.
- Meanwhile, reheat the sausage gravy if needed. Remove the pizzas from the grill, and drizzle each with a couple spoonfuls of warm gravy. Garnish with the scallions. Serve immediately with hot sauce and any remaining gravy served on the side.

- Spray a large skillet with cooking spray; preheat skillet over medium heat.
- Add in potatoes, mushrooms, carrot, zucchini, and onion (season with salt and pepper); cook/stir 3 minutes or until vegetables are tender.
- In a bowl, stir together eggs and milk; pour over vegetables.
- Cook, without stirring, until the mixture begins to set on the bottom and around the edge.
- Using a spatula or large spoon, lift and fold the partially cooked egg mixture so the uncooked portion flows underneath.
- Continue cooking and folding about 4 minutes or until egg mixture is cooked through but sill glossy and moist; remove from heat.

There are lots of recipes for breakfast pizza's but I couldn't find any that were mostly from scratch with fresh baked crust so I'm adding my own.

Steps:
- Preheat oven to 375 degrees.
- Spray a cookie sheet with cooking spray.
- Open the Pizza dough and spread into the cookie sheet and push up at the edges to make a 1/2 border around the outside of the pan.
- Spread the spinach leaves on the dough so it is completely covered in spinach up to the edges.
- Layer in remaining veggies and sausage.
- In a medium bowl, mix spices, eggs, and milk and whisk until combined.
- Pour gently into the pizza pan.
- Sprinkle with the cheese.
- Bake for 25 minutes until crust is golden brown and cheese is melted.

- Preheat oven to 425F degrees. Spray a large baking sheet (10"x 15") with nonstick cooking spray.
- Spread the pizza crust into the pan. Stretch it out to all the edges. Brush olive oil evenly on top of the crust. Poke the crust really well with a fork (this will keep it from puffing up too much.)
- Bake the crust for about 7 minutes on a middle rack. It should just start to be getting very light brown in color.
- While crust is baking, start making the scrambled eggs. In a medium-sized bowl, add eggs, salt, pepper and milk. Whisk eggs really well for at least 2 minutes to combine.
