SAUERKRAUT SIDE DISH
Even those folks who say they don't like sauerkraut have told me that they like this recipe. I'm always on the lookout to add quick and easy recipes to my kitchen file, and that's one of the reasons why this dish is among my favorites.

Steps:
- In a large saucepan, saute onion in butter until tender. Add the sauerkraut, apples, potato, broth, sugar, caraway and salt; mix well. Cover and simmer for 20 minutes or until the apples are tender. Sprinkle with additional brown sugar if desired.

KIELBASA AND SAUERKRAUT
Kielbasa gives this dish intense flavor. I like to serve it with wide egg noodles tossed with butter.

Steps:
- In 4 or 5-quart sauce pot, cook sliced kielbasa and onion over medium-high heat 5 minutes; stirring frequently or until browned.
- Add apples and cook stirring frequently about 1 minute.
- Stir in sauerkraut, chicken broth and caraway seeds.
- Reduce heat to low; cover and simmer for 20 minutes or until apples are tender and flavors blended.
SAUERKRAUT SIDE/RELISH
This is a versatile dish and is a great addition to pork or goes very well as a relish for hot dogs, brats, or polish sausage. I am not a big fan of sauerkraut but I love this dish and think you will too!!

- 1. Cook bacon in skillet; remove and chop into small pieces. Cook onion in bacon grease. Place sauerkraut, drained tomatoes, onion, bacon, and brown sugar in casserole dish and mix well. Bake at 350 degrees for 20 - 30 minutes. ENJOY!!

Steps:
- 1. Cut hot dogs into 1-inch pieces. Combine with kraut in a large saucepan. Cook over medium-high heat until it starts to boil. Reduce heat, cover, and simmer for about five minutes or until heated through and hot dogs are getting puffy.
- 2. Serve with fried potatoes. May add sliced onions when cooking.

SAUERKRAUT RELISH
My mother found this years ago at a Church Bizarre and it is wonderful on sandwiches, brats, hot dogs or even by itself!

Steps:
- Mix together saurkraut, onion, green pepper, celery, celery seed.
- Bring to boil and dissolve sugar and vinegar.
- Let cool then add to mixture.
SAUERKRAUT
Steps:
- Cut cabbage in quarters and remove core. With a mandolin or food processor fitted with a 2-millimeter slicing blade, slice as thinly as possible. Place in a large bowl with salt and toss to combine.
- Transfer to a large glass or ceramic container and tap down by hand so liquid rises to top. Cover with a damp towel touching cabbage and top with a 3-pound weight. Cover again with a layer of plastic wrap and set aside in a warm place for 5 days to ferment. Sauerkraut may be kept in a sealed container in refrigerator as long as 3 weeks.

Steps:
- Fry bacon until just about crisp.
- Place on a paper towel to drain fat.
- Discard fat from frying pan except for about 1 tablespoon.
- Chop onion into 1 inch pieces.
- Place in pan and saute until translucent.
- Place on same paper towel to drain fat.
- In a large pot, place sauerkraut,1 or 2 cans of water, bacon and onion.
- Cook sauerkraut at least one half hour.
- Add salt and pepper to taste.
- Serve.
- Tastes better the next day.
- Optional- You can cook a link (1 pound) of fresh Polish sausage for added flavor and use the meat as part of your meal.

HOW TO MAKE SAUERKRAUT
Steps:
- Weigh your cabbage to see how much salt you should use.Remove the outer leaves of your cabbage and any that are damaged. Discard. Cut out the core and rinse the cabbage well, allowing the water to flow between the cabbage leaves. Drain well.Reserve 1 outer leaf. Thinly shred the remaining cabbage with a knife or food processor. Place in a large bowl. Sprinkle the calculated amount of salt over the cabbage and toss well. Let sit for 15 minutes. Massage the cabbage with your hands for 5 minutes. The cabbage should release a good amount of liquid during this time.Pack the cabbage firmly into a very clean glass quart jar. Pour the liquid that was released during kneading on top. Cut a circle the same diameter as your jar out of the reserved cabbage leaf. Place it on top of the packed-down cabbage. Place a weight on top of the cabbage to ensure that it stays under the brine. If the brine doesn't completely cover the cabbage and weight, top off with a 2% solution of salt water (1 teaspoon salt per cup of water).Screw a plastic lid onto the jar. Place the jar in a rimmed pan (to catch any overflow) and allow to ferment at room temperature until the kraut is as sour as you like it. This can take anywhere from 1-4 weeks.After it's done fermenting, store the sauerkraut in the refrigerator.
