This is a soft chewy cookie with a delicious maple flavor.

½ cup shortening
1 cup packed brown sugar
1 egg
½ cup real maple syrup
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup flaked coconut

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed.
  • Combine flour, baking powder and salt. Add flour mixture to the creamed mixture. Stir in coconut. Drop by tablespoonfuls 2-inches apart onto greased baking sheets.
  • Bake at 375 degrees F (190 degrees C) for 10-12 minutes.

MAPLE BROWN SUGAR COOKIES

With big flavor, crisp edges, mega chewy centers, and maple icing, these maple brown sugar cookies are a definite favorite. Chilling the cookie dough is imperative, so set aside 2 hours or prepare the cookie dough the day before.

2 and 1/3 cups (291g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (115g; 1 stick) unsalted butter, softened to room temperature
1 cup (200g) packed dark brown sugar*
1 large egg, at room temperature
1/3 cup (80ml) pure maple syrup*
1 teaspoon pure vanilla extract
1 teaspoon maple extract*
1 cup (130g) chopped pecans*
2 Tablespoons (30g) unsalted butter
1/3 cup (80ml) pure maple syrup
1 cup (112g) sifted confectioners' sugar*
pinch salt, to taste

Steps:

  • Whisk the flour, baking soda, and salt together in a medium bowl. Set aside.
  • Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and brown sugar together on medium speed until smooth, about 1-2 minutes. Add the egg and beat on high until combined, about 30 seconds. Scrape down the sides and bottom of the bowl as needed. Add the maple syrup, vanilla extract, and maple extract, then beat on high speed until combined.
  • Pour the dry ingredients to the wet ingredients, then mix on low until combined. Add the pecans, then beat on low speed until combined. Dough will be creamy and soft.
  • Cover and chill the dough for 2 hours in the refrigerator (and up to 3-4 days). If chilling for longer than a few hours, though, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Roll cookie dough into balls, about 1.5 Tablespoons of dough per cookie. This cookie scoop is helpful. Bake each batch for 12-13 minutes until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven. If your warm cookies look puffy, lightly bang the pan on the counter when you remove it from the oven. That will help slightly deflate the cookies, creating lovely cracks as you see in the pictured cookies. Cool cookies on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the sifted confectioners' sugar. Taste. Add a pinch of salt, if desired. Drizzle over cooled cookies. Icing will set after about 1 hour.
  • Cookies stay fresh covered at room temperature for up to 1 week.

140 g (1 cup) all-purpose flour
5 g (1 tsp) baking soda
5 g (1 tsp) baking powder
110 g (1 cup) quick cooking rolled oats
1 large egg
150 g (1 cup) maple sugar
410 g (1 1/2 cup) sour cream
Maple nuggets, to taste

Steps:

  • Preheat oven to 180° C (350° F).
  • In a bowl, sift together the flour, baking soda and powder, then mix in oats.
  • In another bowl, beat the egg with the maple sugar. Add the maple sour cream.
  • Stir dry mixture into wet mixture.
  • Use a 50 g (about 2 oz) ice cream scoop to portion onto silicone baking sheet, spacing evenly.
  • Sprinkle each with a good amount of maple nuggets.
  • Bake 15 minutes.

3 cups old-fashioned rolled oats
1 cup all-purpose flour (spooned and leveled)
1 teaspoon fine sea salt
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
1/4 cup pure maple syrup
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, stir together oats, flour, salt, and baking soda. In a large bowl, using an electric mixer, beat butter and sugars on high until pale and fluffy, 3 minutes. Beat in maple syrup, egg, vanilla, and 1/4 cup water, scraping down bowl as needed. With mixer on low, beat in oat mixture in 2 additions until just combined.
  • Drop dough in rounded teaspoons, 2 inches apart, onto parchment-lined baking sheets. Bake until edges are golden, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets until set, about 2 minutes, then transfer to wire racks and let cool completely. (Store cookies in an airtight container, up to 1 week.)

1-1/2 cups packed brown sugar
2 large eggs, room temperature
1 cup sour cream
1 tablespoon maple flavoring
2-3/4 cups all-purpose flour

1 cup chopped nuts
FROSTING:
1/2 cup butter
2 cups confectioners' sugar
2 teaspoons maple flavoring
2 to 3 tablespoons hot water

Steps:

  • In a large bowl, cream together shortening and brown sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Stir in sour cream and maple flavoring. Combine the flour, salt and baking soda; add to creamed mixture and mix well. Stir in nuts. Cover and refrigerate for 1 hour. , Preheat oven to 375°. Drop dough by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake for 8-10 minutes or until edges are lightly browned. Cool completely on wire racks. , For frosting, in a small saucepan, heat butter over low heat until golden brown. Remove from the heat; blend in confectioners' sugar, maple flavoring and enough water to achieve spreading consistency. Frost cookies.

140g rolled oats
50g desiccated coconut
225g plain flour
140g salted pecans , roughly chopped
100g raisins
140g unsalted butter
225g light soft brown sugar
3 tbsp maple syrup
3 tbsp golden syrup
2 tbsp boiling water
1 tsp bicarbonate of soda

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line 3 large baking trays with baking parchment. In a medium bowl mix the oats, coconut, flour, pecans and raisins. Set aside.
  • In a small saucepan, melt the butter and sugar with the syrups, then remove from the heat. Combine the boiling water and bicarb, then add this to the butter mix. Pour over the oat mixture and stir to combine. Form balls using an ice-cream scoop of mixture and place on the lined trays, with lots of space around them, about 6 per tray. Flatten each ball slightly.
  • Bake for 14-16 mins, depending on how chewy you like them. Allow to stand for 1 min then transfer to a wire rack to cool. Keep in an airtight container for up to 1 week, or freeze for up to 3 months.
