SARDINE SALAD SANDWICH

Two 3.75-ounce cans oil-packed skinless, boneless sardines, drained
2 stalks celery, finely chopped
1/2 small red onion, finely chopped
1/4 cup low-fat mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon fresh lemon juice
1 teaspoon grated lemon zest
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper

8 slices whole-grain bread, toasted
Bibb lettuce, sliced tomato, sliced cucumber and alfalfa sprouts, for topping

Steps:

  • Combine the sardines, celery, red onion, mayonnaise, dill, lemon juice, lemon zest, mustard, 1/4 teaspoon salt, and pepper to taste in a large bowl. Mash well with a fork.
  • Sandwich the sardine salad between the bread slices along with the lettuce, tomato, cucumber and sprouts.

This Scandinavian-inspired spread is wonderful on dense, thin-sliced pumpernickel bread or whole grain crackers. Sardines are rich sources of omega-3 fatty acids, known to help reduce risk of heart disease, high blood pressure and cancer.

2 (3 3/4 ounce) cans sardines in oil, well drained (King Oscar's Brislings in extra virgin olive oil)
2 tablespoons mayonnaise
1 -2 teaspoon grated onion
1/4 teaspoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Finely mash sardines.
  • Combine sardines, mayonnaise and mustard.
  • Stir in lemon juice, grated onions and pepper.
  • Sprinkle with fresh minced parsley.
  • Serve with pumpernickel cocktail rounds, my Seasoned Party Pitas #146950 or crackers.

  • Preheat oven to 425°F (220°C). (A toaster oven can also be used for roasting the garlic.) Cut top off head of garlic to expose cloves and place on small piece of foil. Drizzle with olive oil; wrap foil to enclose garlic. Roast 25 min. until soft. Cool then squeeze out garlic cloves into food processor. Discard garlic skins.
  • Add sardines (including oil in tin), lemon juice, capers, red chili flakes and salt to food processor. Process into a coarse paste; scraping down sides as needed. Add parsley and dill; pulse until combined.
