EASY CORN DIP

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
  • Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
  • Top with the cilantro and serve warm with the corn chips on the side.

S'MORES DIP

1 pound cream cheese, softened
One 14-ounce jar marshmallow cream
Five 1.86-ounce chocolate, peanut and caramel candy bars, such as Snickers, cut into 1/2-inch pieces
4 graham crackers, crushed
1 cup mini marshmallows
1/3 cup chopped honey roasted peanuts
1/4 cup chocolate fudge topping, warmed
1/4 cup caramel topping, warmed
Graham crackers, for serving

Steps:

  • Preheat a grill to medium-high heat. Coat a 10-inch cast-iron skillet with nonstick cooking spray.
  • Stir together the cream cheese and marshmallow cream in a large bowl until well combined. Spoon one-third of the cream cheese mixture into the skillet and spread into an even layer. Top with half the candy bar pieces, one-third of the crushed graham crackers and one-third of the marshmallows.
  • Spoon half of the remaining cream cheese mixture over the marshmallows and spread into an even layer. Top with the remaining candy bar pieces, half of the remaining crushed graham crackers and half of the remaining marshmallows. Spoon the remaining cream cheese mixture over the marshmallows and spread into an even layer. Top with the remaining marshmallows and crushed graham crackers. Sprinkle with the peanuts.
  • Place the skillet on the grill and close the lid. Cook until the center of the mixture is hot and gooey, about 20 minutes. Drizzle with the chocolate fudge and caramel toppings and serve with graham crackers.

Two 11-ounce cans Mexican corn, drained
Two 4.5-ounce cans chopped green chiles, drained
2 cups grated Monterey Jack cheese (about 8 ounces)
2/3 cup grated Parmesan
1 cup mayonnaise
Corn chips, for dipping

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- 13- by 2-inch casserole dish. In a medium bowl, mix the corn, chiles, cheeses and mayonnaise until fully combined. Spread the mixture in the prepared casserole dish and bake, uncovered, until bubbly around the edges, 30 to 40 minutes. Serve the dip warm from the oven with corn chips.

1 (12 ounce) bottle of medium taco sauce
1 head of shredded lettuce
1 (2 1/4 ounce) can black olives
1 medium tomatoes, seeded and chopped
1 (8 ounce) bag of shredded taco cheese

Steps:

  • combine cream cheese and taco sauce in a bowl and mix with and electric mixer on medium speed until well blended.
  • Spread cream cheese mixture into a dish with shallow sides (a pie plate works the best).
  • top cream cheese mixture with black olives in an even layer.
  • next add tomatoes in an even layer.
  • add a layer of lettuce.
  • add a layer of cheese.
  • any remaining "toppings" can be replenished as needed.

1 canned diced green chiles, not drained (2 oz)
1 (2 ounce) can chopped jalapeno peppers, partially drained
1 cup mayonnaise

Steps:

  • Mix all ingredients together and let chill to blend flavors about 2 hours. (If you like it spicier, don't drain the jalapeno's at all).
