PECAN SANDIES

Pecan Sandies image

Provided by Food Network Kitchen

Time 3h20m

Yield 36 cookies

Number Of Ingredients 8

2/3 cup pecans, plus more for decorating
3/4 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 stick unsalted butter, at room temperature
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
Turbinado sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans on a rimmed baking sheet and bake until browned, 10 to 12 minutes. Let cool completely. Sift 3/4 cup flour, the salt and baking powder into a medium bowl.
  • Pulse the toasted nuts with the remaining 2 tablespoons flour in a food processor until finely ground.
  • Beat the butter, confectioners' sugar and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the flour mixture and stir with a wooden spoon until just combined, then stir in the nut mixture. Pat the dough into a rectangle on a piece of plastic wrap; wrap and refrigerate until firm, at least 2 hours or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat to 325 degrees F. Line 2 baking sheets with parchment paper. Roll out the dough between 2 pieces of parchment into a 9-by-6-inch rectangle, slightly less than 1/4 inch thick. Sprinkle the dough with turbinado sugar, then gently press the sugar into the dough using a rolling pin. Slice into sixths crosswise and lengthwise to make 36 rectangles. Arrange about 1 inch apart on the prepared baking sheets. Pierce each rectangle a few times with a fork, then press a pecan onto each. Bake, switching the position of the pans halfway through, until golden brown, 10 to 12 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

PECAN SANDIES

12 DISHES BEST SERVED COLD, LIKE REVENGE RECIPE | BON …

From bonappetit.com
Estimated Reading Time 5 mins
  • Olive Oil Ice Cream. You might be wondering, "Does this really taste good?" The answer is yes. It tastes almost as good as revenge. What wouldn't taste good, though, is if you also sautéed some onions and garlic and folded them into this ice cream, served it in a chocolate-dipped waffle cone with sprinkles, and let someone have at it.
  • Raspberry and Aperol Floats. Ice cream will make you forget all of the world's ills. So will Aperol. But what if you took your first sip of what looked like the world's greatest ice cream float, and instead of creamy vanilla ice cream, you stuck a straw into a giant frozen ball of ice?
  • Ice Cream Sandwiches. This recipe calls for baking one giant cookie. Try very hard not to forget your plans for revenge when baking a giant cookie. Like eating a giant cookie in front of those who've wronged you, and not offering them a bite.
  • Iced Cucumber Soup with Mint, Watercress, and Feta Cheese. You may feel hot under the collar, but this soup will keep you as cool as a cucumber (ha!). Let's be honest—this is not a recipe for weight loss (we still love ya though, feta!).
  • Ajo Blanco. This version of white gazpacho, traditionally made with green grapes, is brightened with the addition of green apple. You, however, can keep your mood stormy as you dig in.
  • Watermelon Gazpacho. It's pretty hard to stay in a bad mood when eating this bright pink, creamy, and sweet soup—but gosh darn it, you are going to try.
  • Potato Salad with Pickles and Dill. Potato salad is one of those foods best eaten straight from the fridge (definitely better than from a picnic table in the sun).
  • Curried Egg Salad in Mini Pitas. Egg salad's a summertime classic—all the more reason to eat it cold. And hey, not for nothin', but boiling a few extra eggs and hiding them in choice spots around your mortal enemy's house might be the most genius revenge plot, ever.
  • Creamy Summer Slaw. Same goes for slaw—chilled makes for a better crunch. The creamy texture of this dish makes it satisfying and enjoyable to eat. But that same texture would also make it awful to find in your sneakers when you slip them on in the morning.
  • Pico de Gallo. Pico de gallo should be made with in-season, ripe, juicy tomatoes. If you pull it together using hard, flavorless "winter whites," you're just asking for a bland, lackluster salsa.
