Salsa Verde Recipe for Canning image

Canning salsa verde is the perfect way to preserve a bumper crop of tomatillos. Pull a jar out of the pantry for a tasty dip, use it as a tomatillo enchilada sauce, or add a jar to a hearty winter pork stew.

5 cups tomatillos, husked & chopped
1 1/2 cups bell pepper or other sweet pepper, chopped
1/2 cup hot peppers, chopped (such as jalapeno)
4 cups onion, diced
1 cup lime juice (or lemon juice)
1 whole garlic bulb, peeled and minced
1 Tbsp. ground cumin
3 Tbsp. dried oregano leaves
1 Tbsp. salt
1 tsp. black pepper

Steps:

  • 1. Combine all ingredients in a large stockpot and bring to a simmer on the stove. Simmer for 20 minutes to an hour to allow the tomatillos to break down and flavors to meld. Taste and adjust salt accordingly. 2. Ladle sauce into prepared pint mason jars leaving 1/2 inch headspace, and process in a water bath canner for 15 minutes for pints. (Adjust for altitude) 3. Remove from the canner and allow to cool at room temperature before checking seals to make sure all jars have properly sealed. Place any unsealed jars in the refrigerator for immediate use.

4 pounds tomatillos (peeled)
4 cloves garlic (optional)
6-7 jalapeño peppers
2 cups chopped Green peppers (bell, poblano)
1 cup vinegar
1 Tablespoon lime juice (fresh if you have it)
zest of the lime (if you are feeling fancy)
1 teaspoon salt

Steps:

  • Blanch the tomatillos in simmering water for 5 minutes.
  • Drop them in an ice bath to stop the cooking process.
  • Give them a rough chop and throw them in the food processor.
  • Process them until till they are thoroughly pureed.
  • Pour into a large bowl.
  • Puree together with the garlic, jalapeño peppers, and 2 cups of green peppers
  • Combine your tomatillo puree and pepper chop in a large pot.
  • Add 1 cup vinegar 1 Tablespoon lime juice, zest of the lime, 1 teaspoon salt
  • Stir till combine and slowly bring to a boil.
  • Boil 5 minutes.
  • Get a big spearing spoon and skim the white foamy stuff off the top of your salsa.
  • Pour your salsa verde into your hot jars.
  • Pop on a clean new lid.
  • Finger tighten a ring onto the jar.
  • Carefully lower the jars into the hot water bath with at least 1 inch of water covering the jars.
  • Process 10 minutes.
  • Remove from the hot water and allow to cool completely.

I wanted a good canning recipe (and a safe one) for all the tomatillos I have in my garden, so after much searching I found this one. It is posted by Nancy Castleman on the Good Advice Press site under the name of Marc and Nancy's Salsa Verde, and I just moved it over here. The lemon and lime juices add the needed acidity for canning.

2 lbs about 8 cups tomatillos
2 cups chopped onions
1 -4 hot pepper, seeded and chopped
1 cup fresh cilantro, minced
4 -8 garlic cloves
1/2 cup lemon juice
1/2 cup lime juice

Steps:

  • After removing husks, halve and then coarsely chop the tomatillos.
  • Lightly coat the bottom of a large pot with oil, turn the burner on high, and add all the ingredients. Stir frequently and bring to a boil. Lower the temperature and let the salsa simmer for about 20 minutes.
  • Other recipes call for cumin, oregano, water, oil, lemon thyme, salt, pepper, tarragon, cognac, sugar, tart apples, vinegar, and sweet red peppers. Feel free to add a bit of any or all of these to your salsa before you bring it to a boil.
  • Carefully fill sterilized pint or half-pint jars and process them for 20 minutes using the boiling-water-bath method. (For complete canning directions, she recommends The Big Book of Preserving the Harvest.).

I love this recipe, and I love Ball's new Big Book of Canning, where this has been hidden! I have used half the peppers called for, and the full amount called for in another batch, both are yummy! I omit the cilantro per the request of my husband, who seems to be able to find the smallest amount! Lovely, tart recipe.

5 1/2 cups chopped husked tomatillos
1 cup chopped onion
1 cup chopped hot pepper
1/2 cup white vinegar
4 garlic cloves, chopped fine
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon hot pepper flakes (optional)
2 tablespoons finely chopped cilantro (optional)

Steps:

  • Prepare canner, jars and lids.
  • In a large stainless saucepan combine all the ingredients.
  • Bring to a boil, reduce heat to medium high heat, stirring often to prevent sticking.
  • Cook for 10 minutes.
  • At this point I puree half the batch (I use an immersion blender).
  • Ladle hot salsa into hot jars leaving 1/2 inch head space.
  • Wipe rims, center lids and screw on band to fingertip tight.
  • Place jars in canner, cover and bring canner to a boil.
  • Process for 15 minutes.
  • Turn off heat, remove lid of canner and let jars sit for 5 additional minutes.
  • Remove jars, cool, label and store.
  • I get 2 full and 1 half pint from this recipe.

1/2 cup packed fresh cilantro (leaves and thin stems only)
1/2 poblano pepper, seeded and chopped
1/2 small red onion, minced
Juice of 1 lime (about 2 tablespoons)
Kosher salt

Steps:

  • Combine the tomatillos, cilantro, poblano, onion, lime juice and 1 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.

  • In a blender combine the garlic, shallot, poblano, parsley, cilantro, oil, and lemon juice. Blend until smooth. Season with the salt and pepper.
  • Serve over grilled vegetables, rice or thin out with olive oil and serve as a salad dressing.

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

5 tomatillos
8 -10 serrano chilies (jalapeno can use as well for a milder taste)
salt
cilantro (optional)

Steps:

  • Remove husk from tomatillos and rinse well.
  • Remove top stem (may also remove seeds for a milder taste or leave them whole like i do) and rinse.
  • Place ingredients in pot and cover with water.
  • Bring to a boil for about 1-2 minutes.
  • Remove from boil and place tomatillos and chiles in a blender (DONT add WATER theres enough water to absorbs to tomatillos during the cooking process).
  • Blend until smooth, for a couple min or until desired texture occurs.
  • Pour into a container add a little salt and and chopped cilantro if desired!
  • May enjoy right away or may be placed in fridge for a couple hours to cool down!
  • Eat with tacos, enchilads, eggs, tortillas, chips, etc -- .

1 medium onion, quartered
3 scallions, cut into 4
4 cloves garlic
1/4 cup parsley
1/2 cup chopped cilantro leaf
2 small jalapeno peppers, leave seeds in if you like it very hot
1 teaspoon salt
1 tablespoon olive oil, if serving warm

Steps:

  • Drop the garlic through the feed tube of a food processor with the metal blade in place and motor running to chop finely (about 10 seconds.) Add the scallions, parsley, cilantro, and jalapeno and chop finely (about 6 pulses of the motor).
  • Add the tomatillos and salt and process until pureed, about 5 seconds.
  • Refrigerate, covered.
  • May be served warm In medium saucepan over medium heat, heat 2 tablespoon olive oil.
  • Add tomatillo mixture and simmer for 10 to 12 minutes, stirring frequently, until thickened.
  • Remove from heat and pour into serving bowl.
  • Cover and let stand 1-2 hours to blend flavors.
  • Serve warm.

A take off my recipe #389253. I wanted to roast (grill) the tomatillos, onions, chili's and garlic. So this is what I came up with. Yes you can roast in the oven. Make now and enjoy all year! Or give as gifts.

3 lbs tomatillos, cut into half
2 habanero peppers, seeds and all
4 green chili peppers
2 onions, skin removed and halved
1 garlic, bulb
2 limes, cut in half
1 cup fresh parsley (I used all three) or 1 cup fresh basil (I used all three)
1/4 cup bottled lemon juice
1 -2 teaspoon cumin
1/4 cup vinegar
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Preheat grill or broiler to high. Remove husks and wash the tomatillos and cut in half. Place the tomatillos, chili`s, onion, unpeeled garlic bulb, and lime halves on grates of grill or a cookie sheet pan put under the preheated broiler until the tomatillos are roasted and the chili`s peppers are slightly charred on all sides. Rotate the ingredients during cooking to make sure all sides are charred and remove each as they get chard. Cool all and then peel the chili`s (only remove seeds if heat is not desired) and garlic (you may have to squeeze the soft garlic out of the skin) and remove any extremely charred skin from the tomatillo, and onions is just fine! Cut the onions into 1/4`s.
  • Squeeze the limes into the food processor and add all remaining charred veggies, pulsing 4 to 6 times till combined.
  • In a large stainless saucepan combine all the ingredients.
  • Bring to a boil, reduce heat to medium high heat, stirring often to prevent sticking.
  • Cook for 10 minutes.
  • Ladle hot salsa into hot jars leaving 1/2 inch head space.
  • Wipe rims, center lids and screw on band to fingertip tight.
  • Place jars in canner, cover and bring canner to a boil.
  • Process for 15 minutes.
  • Turn off heat, remove lid of canner and let jars sit for 5 additional minutes. Remove jars, cool, label and store.
  • Use in 1 year. Store opened jars in the refrigerator.

3 unpeeled garlic cloves
1 pound fresh tomatillos, husked, rinsed
1 small onion, quartered through root end
3 to 6 serrano chiles or 2 to 4 jalapeño chiles
1/4 cup chopped fresh cilantro
1/2 teaspoon (or more) sugar
Coarse kosher salt
2 tablespoons olive oil
1 cup low-salt chicken broth
2 tablespoons (or more) fresh lime juice

Steps:

  • Prepare barbecue (medium-high heat). Thread garlic onto skewer. Grill garlic, tomatillos, onion quarters, and chiles until dark brown spots form on all sides, about 9 minutes for onion, 6 minutes for tomatillos and chiles, and 4 minutes for garlic. Cool. Peel garlic. Trim core from onion. Scrape some of burnt skin off chiles; stem. Seed chiles for milder salsa, if desired. Coarsely chop onion, chiles, and garlic. Transfer tomatillos and all vegetables to blender. Add cilantro and 1/2 teaspoon sugar; puree until smooth. Season to taste with coarse salt.
  • Heat oil in heavy large saucepan over high heat. Carefully add tomatillo mixture (juices may splatter). Stir until slightly thickened, stirring often, about 2 minutes. Add broth and 2 tablespoons lime juice. Bring to boil; reduce heat to medium and simmer until mixture measures 2 1/2 cups, about 10 minutes. Season to taste with salt and more sugar and lime juice, if desired. DO AHEAD: Can be made 1 day ahead. Cool slightly, then cover and chill.
