YUMMY MEATLOAF

Yummy Meatloaf image

What makes this meatloaf so good is how you cook it! It's very important to cook this in a baking dish rather than a loaf pan. The grease will drain from the meatloaf this way, and it will be firmer and taste better.

MEATLOAF RECIPE

Meatloaf recipe image

Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

Provided by Nagi

Categories     Main

Time 1h30m

Number Of Ingredients 14

1 cup panko breadcrumbs ((Note 1))
1 large onion (, grated (brown, yellow))
1 kg / 2 lb ground beef (mince) (, preferably not lean)
2 eggs
3 garlic cloves (, minced)
1 tsp Worcestershire Sauce
1/4 cup tomato ketchup
1/4 cup chopped parsley ((optional), or 2 tsp dried parsley or basil)
1 tsp dried thyme
2 beef bouillon cubes (, crumbled or 2 tsp beef powder (Note 2))
1 tsp black pepper
1/2 cup tomato ketchup
2 tbsp cider vinegar
1 tbsp brown sugar (, lightly packed)

Steps:

  • Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
  • Glaze: Mix together in a small bowl. Set aside.
  • Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
  • Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
  • Transfer into loaf tin. Brush generously with glaze, using about 1/2.
  • Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
  • Bake for a further 30 minutes. Remove from oven.
  • Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
  • Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

MINI MEATLOAF IN A MUFFIN TIN RECIPE

Mini Meatloaf in a Muffin Tin Recipe image

Meatloaf Muffins are a fabulous alternative to regular meatloaf. Kids just love them and mini meatloaf muffins cook much faster than traditional meatloaf.

Provided by Jamie Sanders

Categories     main dish

Time 35m

Number Of Ingredients 9

1 pound ground turkey or ground beef
1/3 cup breadcrumbs or oatmeal (Either works, but I now use oatmeal)
1/3 cup Parmesan cheese
1 egg
1 (8 ounce) can tomato sauce (Instead of the tomato sauce, I often substitute with around 1/4 cup of ketchup in the meat mixture and at least another 1/4 cup for the top. Personal choice to use the ketchup vs tomato sauce I do prefer the taste of ketchup - must be the added sugar.)
1/2 teaspoon garlic powder
Salt and pepper
several shakes of Worcestershire sauce (about a teaspoon)
A couple of handfuls of whatever other veggies you have on hand... (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils...)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.
  • Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).
  • Top with a dollop of tomato sauce/ketchup on each one.
  • Cook for 30-35 minutes.
  • Serve two per person.

19 PORTABLE MEALS YOU CAN MAKE IN A MUFFIN TIN - GREATIST

From greatist.com
Estimated Reading Time 6 mins
  • Breakfast Hash Brown Cups. Here the veggie omelet gets hit with a shrink ray, and the skillet gets replaced with little hash brown nests.
  • Granola Cups. Sweet and salty, nutty and fruity, granola is pretty much breakfast perfection. But it’s also made our “dangerfood” list thanks to the fact that the store-bought stuff can be overloaded with sugar and calories.
  • Paleo Omelet Muffins. In the whirl of the morning rush, finding the time to make a proper protein-packed breakfast can feel impossible.
  • Lemon Coconut Baked Oatmeal Cups. Yup, this is the flip side of omelets to go. Bake up a pan of oatmeal on Sunday, and you’ll have the trifecta of a perfect weekday breakfast—fast, healthy, delicious—all week long.
  • Bacon + Egg Toast Cups. Using a muffin pan to fashion toast cups is pretty much the best thing ever. And don’t fear getting piggy with it, saturated fat isn’t the nutritional monster it was once made out to be.
  • Crab Cake Appetizer. Frying crabcakes can be super frustrating—the cakes often fall apart and tend to soak up way too much oil. Result: grease stains on your cocktail napkin and a heavy belly.
  • Southwest Veggie Won-Ton Cups. Won-ton wrappers are perfect, crispy little vessels for all things made in a muffin pan. These cups are filled with corn, beans, cheese, and topped with a creamy chipotle yogurt sauce.
  • Spicy Sriarcha Party Meatballs. These adorable meatballs are the ideal one-bite snack (although we bet you won’t stop at just one). With an amazing homemade Sriracha dressing, the meatballs pack in tons of flavor.
  • Mac n’ Cheese Muffins. Anything made mini automatically becomes more playful. In this recipe, a portable, lightened-up version of mac n’ cheese (childhood favorite) mixed in with greens (not a childhood favorite) makes the most perfect bite-size treat for any age.
  • Gluten-Free Quinoa Pizza Bites. If you’re already on the mac n’ cheese bus, put the pedal to the metal by adding pepperoni and sauce.
