Steps:
- In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each).
- Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
- Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).
- While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil.
- Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.
- While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
- Serve salmon warm with coconut rice top with avocado mango salsa.

- Preheat a grill to medium-high heat.
- Crush the garlic clove, sprinkle with a pinch of salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.
- Pat the fish dry and sprinkle with salt and pepper. Lightly oil the grill grates. Place the salmon, skin side-up, on the grill and cook until well-marked, 3 to 4 minutes. Turn the salmon and continue to cook until the fish is just cooked through, about 3 to 4 minutes more.
- Serve the salmon with the salsa and a lime wedge.

- Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.

- Preheat a gas grill to high, build a fire in a charcoal grill or build a campfire and let it burn down to high heat (about 500 degrees F).

- Make the mango salsa. Defrost the mango in the microwave and chop the mango into smaller, bite size pieces. and red bell pepper into bite, red onion and cilantro. Add these ingredients to a bowl and squeeze lime juice and sprinkle with salt. Mix to combine.

- For the Salsa, put all the ingredients into a food processor and pulse until finely chopped; set aside.
- Heat the grill to medium high.
- Drizzle some olive oil over the salmon and season it with salt and pepper. Gently rub 2 tablespoons of the Spice Mix into the salmon. This is very versatile it can be served as a main course with a salad for a light, healthy summer time meal or it can be served as a appetizer, or as part of a buffet style meal along with other dishes. I have made this a few times now both as a main and also as part of a BBQ when I had 40 people over, it is always received well. I have listed the weight below as 1kg and I feel this would serve 4-5 as a main with a nice green salad and some crusty bread and about 10 as an appetizer or as part of a buffet style meal. Cooking time does not including resting time or chilling time if you choose that option.

- Make salsa first by combining lemon juice, dressing and honey in a screw top jar, shake to combine.
- Combine dressing with remaining ingredients in a glass bowl, refrigerate until needed. Salsa can be made up to 2 hours ahead of time and stored in the fridge.
- Salmon.
- Pre-Heat oven to 190 degrees Celsius.
- Place salmon in an oven proof dish, that has been lightly greased with either cooking spray or oil.
- Brush salmon with olive oil, squeeze lemon over salmon, Sprinkle with ground sea salt and pepper.
- Bake for 30-35 Min's or until fish flakes easily, cooking time will vary depending on thickness of the salmon.

SMOKED PAPRIKA SALMON RECIPE WITH MANGO SALSA

- Season the salmon fillets with the spice rub. Drizzle lime juice on the fillets.
- Heat olive oil in a frying pan and place the fillets skin side down. (Fry the fillets in batches so you don't overcrowd the pan.)

- Use a peeler to peel the skin from the mango. Slice around the largest diameter of your mango, avoiding the pit. Martha has a great video here. Add chopped cilantro, red bell pepper, radish, vinegar, and chopped shallot. If using jalapeno, remove the seeds and membrane first, then dice into small pieces. Here is a great link from the kitchn on how to do this, as well as getting the heat off your hands! If you'd like a little salt, I added about 1/4 tsp. You can taste it and see what you think it needs. Cover and place the salsa in the fridge. This can be made 1 day ahead. Be conscious of tyramine build up!
- Heat grill to 425-450 degrees (we use a charcoal grill, but a gas grill would be more accurate). Drizzle salmon with extra virgin olive oil, some kosher salt, and pepper.
- Once grill has reached desired temperature, place salmon on grill, skin side down. Close the cover to your grill. Allow Salmon to cook for 8-12 minutes
- If salmon has been cooked all the way through, serve immediately. If middle of filet is still raw, allow salmon to rest 5 minutes loosely covered in aluminum before serving.
