RED WHITE AND BLUE SUGAR COOKIES
Sweet and buttery sugar cookies colored to celebrate the Fourth of July

Steps:
- In the bowl of a stand mixer (or use a hand mixer) cream the butter and sugar together until light and fluffy.
- Add the egg and vanilla and beat again until very smooth.
- In another bowl combine the flour, baking powder and salt.
- Slowly add the flour mixture to the batter and mix until the dough comes together.
- Divide the dough into three equal pieces.
- Add one piece of dough back into the mixer and add a drop of red color mixing on low speed until the dough has turned red.
- Repeat the process with another piece of dough except adding a drop of blue color.
- You should now have one piece of red dough, blue dough, and regular uncolored dough.
- Roughly flatten out each piece of dough to about 6 inches long and then stack them on top of one another.
- Roll the dough into a sausage shape about 8 inches long and 2 inches wide making sure it's nice and even.
- Lay the roll of cookie dough on a piece of wax paper and wrap up tightly like a tube.
- Let the dough rest in the fridge overnight or at least 6 hours to firm up.
- Preheat the oven to 400 degrees F and line a couple of baking sheets with parchment paper.
- Unwrap the roll of cookie dough and slice into discs about 1/4 inch thick.
- Lay each cookie onto the prepared pans and bake for 8-10 minutes depending on your oven, the edges and bottoms should be a light golden color.
- Transfer the baked cookies to a wire rack to cool and repeat until all the cookies have been baked.

Inspired by my Uncle Wayne, this pie is delightfully simple. Rhubarb and blueberries in a light oil-based crust, topped with vanilla frozen yogurt makes a perfect Fourth of July dessert.

- Preheat the oven to 400 degrees F (200 degrees C).
- Measure flour and salt into a bowl. Add oil and mix well. Sprinkle water in 1 tablespoon at a time, mixing until dough almost cleans the side of the bowl. Gather dough into your hands and press into a ball. Divide dough in half and flatten each piece into a 1/2-inch thick round. Let rest about 30 minutes.
- Meanwhile, combine sugar, flour, and cinnamon in a bowl to make filling. Fold in rhubarb and blueberries, and sprinkle with lemon juice. Stir filling to combine.
- Roll dough rounds out to the size of the pie pan and place 1 round into the pan for the bottom crust. Pour filling into crust and dot with butter. Cover with remaining dough round and flute edges together to seal. Use a knife to cut 1 or 2 steam holes in the top crust. Place aluminum foil around the edges of the pie to prevent burning.
- Bake in the preheated oven for 30 minutes. Remove foil and bake until crust is golden brown, about 15 minutes more.

- Heat oven to 350°F. Spray 9-inch pie plate with cooking spray.
- In large bowl, stir sugar cookie mix, 1/2 cup softened butter, egg and flour until soft dough forms. Stir in M&M's® and candy sprinkles. Press into pie plate.
- Bake 20 to 25 minutes or until golden brown. Cool 30 minutes.
- In medium bowl, beat powdered sugar, 1/2 cup softened butter, the vanilla and 2 tablespoons of the milk with electric mixer on medium speed about 3 minutes or until smooth and creamy. If needed, add remaining 1 tablespoon milk.
- Place mixture in decorating bag fitted with star tip. Decorate sugar cookie pie as desired. Cut into slices, and serve.

- Beat granulated sugar, butter, almond extract and egg in large bowl with electric mixer on medium speed 2 minutes. Stir in flour.
- Divide dough in half; cover half and set aside. Place remaining half on waxed paper or plastic wrap; press into 8-inch square. Sprinkle with 1 tablespoon each of the red sugar and blue sugar. Using waxed paper to lift, roll up dough. Repeat with remaining dough and colored sugars. Wrap rolls in plastic wrap and refrigerate about 1 hour or until firm.
- Heat oven to 375°F. Cut rolls into 1/4-inch slices. Place about 2 inches apart on ungreased cookie sheet.
- Bake 6 to 8 minutes or until edges begin to brown. Cool 1 minute; remove from cookie sheet to wire rack.

- In a medium saucepan, mix sugar, cornstarch, and water; cook, stirring, until thickened and clear.
- Stir in gelatin powder until dissolved, then divide this mixture into two equal portions.
- Add blueberries and lemon juice to one portion, stirring gently to coat.
- Spread blueberry mixture into the pie pastry, cover, and chill until set.
- Meanwhile, gently fold raspberries into the other portion of sauce and let stand, covered, at room temperature while you continue.
- Beat cream cheese and powdered sugar together until smooth.
- Fold in Cool Whip; spread over the blueberry layer.
- Chill until set, about 2 hours.
- Carefully spread raspberry mixture over the cream cheese layer.
- Cover and chill at least 4 hours.

This is the first cheesecake I've ever made. No need to find another recipe.(Ever again) It is from a Gourmet magazine (1993). I have made several variations with the topping, like caramel and peaches, but nothing to change on the main cheesecake recipe. Try it! You will never regret!

- Make the crust:.
- In a bowl stir together the cookie crumbs and the butter until the mixture is combined well and pat the mixture onto the bottom and 1/2 inch up the side of a 9 1/2-inch spring form pan. Chill the crust for 30 minutes.
- Make the filling:.
- Preheat the oven to 325°F In a bowl with an electric mixer beat the cream cheese until it is light and fluffy, add the sugar gradually, beating, and beat the mixture until it is combined well. Beat in the flour, add the eggs, 1 at a time, beating well after each addition, and beat in the sour cream, the zests, the salt, and the vanilla, beating the filling until it is combined well.
- Pour the filling into the crust and bake the cheesecake in a foil-lined shallow baking pan in the middle of the oven for 1 hour and 10 minutes. (The cheesecake will not be completely set; it will set as it cools.) Turn the oven off and let the cheesecake stand in the oven with the oven door propped open about 6 inches until it is cooled completely and remove the side of the pan.
- Arrange the raspberries on top of the cheesecake in a star shape and arrange the blueberries around the star to cover the top of the cheesecake.
