Ingredients

2 English cucumbers, thinly sliced
2 bunches French breakfast radishes, trimmed and thinly sliced on a mandoline
1/2 cup apple cider vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons minced shallot
2 tablespoons chiffonade fresh tarragon
1 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

Place the cucumbers and radishes in an ice water bath for 8 to 10 minutes.
Meanwhile, add the apple cider vinegar, oil, shallots, tarragon and sugar to a large bowl. Season with salt and pepper.
Drain the cucumbers and radishes and place in a bowl. Drizzle the vinaigrette over the top. Season with salt and pepper. Serve immediately.

3 tbsp rice vinegar
1 tbsp caster sugar
few splashes of toasted sesame oil
2 spring onions , finely sliced
1 large cucumber , halved lengthways
300g radishes , sliced
small handful coriander leaves

Steps:

In a large bowl mix together the rice vinegar, sugar, sesame oil and spring onion.
Use a teaspoon to scrape out the cucumber's seeds, then slice into halfmoons. Mix into the dressing with the radishes and scatter with coriander. Serve.

2 Tbsp fresh dill, finely chopped
salt, to taste

3. Serve immediately.

1 cucumber
500g radish , quartered
1 celery heart, sticks cut into 1cm pieces
1 large red onion , thinly sliced
bunch flat-leaf parsley , roughly chopped
3 tbsp lemon juice
6 tbsp rapeseed oil

Steps:

Quarter the cucumber lengthways. Cut each quarter into roughly 1cm chunks, cutting on the angle to give a more interesting shape. Scatter into a serving bowl or onto a platter. Add the radishes, celery, onion and parsley.
Put the lemon juice and oil in a glass jar with a lid, season and shake well. When ready to serve, pour the dressing over the salad and toss to combine.

1/2 medium cucumber, peeled, seeded and cut into 1-inch julienne strips
2 radishes, julienned
2 tablespoons chopped red onion
1 tablespoon olive oil
1-1/2 teaspoons lemon juice
1/8 to 1/4 teaspoon garlic salt
1/8 teaspoon lemon-pepper seasoning

Steps:

In a serving bowl, combine the cucumber, radishes and onion. In another bowl, combine the remaining ingredients. Pour over vegetables and toss to coat. Serve immediately.

Combine first 3 ingredients in large bowl. (Can be prepared 3 hours ahead. Cover; chill).
Whisk oil, vinegar, sugar and red pepper to blend in small bowl.
Season with salt and pepper.
Pour dressing over vegetables; toss.
