The saffron cream sauce makes this easy -to -make chicken scallopine dish very special. This dish is from Everyday Italian with Giada De Laurentis.

2 tablespoons olive oil
1 lb chicken cutlet (I used 4 boneless, skinless chicken breasts that I pounded flat to 1/4 inch)
2 shallots, sliced
1 garlic clove, minced
1/2 cup white wine
1 1/2 cups chicken broth
1/4 teaspoon saffron thread
1/2 cup heavy cream
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Warm the olive oil in a large skillet, over high heat. Season the chicken cutlets with salt and pepper. Cook the chicken until golden and cooked through, about 2 to 3 minutes per side.
  • Transfer the chicken to serving plate and tent with foil to keep warm.
  • Turn the heat to medium, add the shallots and the garlic and cook until tender, about 2 minutes.
  • Deglaze the pan with the white wine. Using a wooden spoon,scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated.
  • Add the chicken broth and saffron threads, bring to a simmer and reduce for 10 minutes. Add the cream, salt, and pepper. Stir to combine and simmer for 1 minute to blend the flavors.
  • Pour the sauce over the chicken. Sprinkle with parsley and serve immediately.

3/4 teaspoon saffron thread, crumbled
2 tablespoons extra virgin olive oil, divided
1 1/2-2 lbs boneless skinless chicken breast halves (4)
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon ground coriander
1 tablespoon butter
1 large shallot, finely minced
1/2 inch piece gingerroot, peeled and grated (about 1 tsp)
1 large garlic clove, minced
1/4 teaspoon freshly grated nutmeg
1 cup heavy cream
1/2 cup european style plain yogurt (whole or 2% fat)
1/4 cup cilantro leaf, chopped
1 teaspoon garam masala

Steps:

  • Put the saffron into a small bowl; cover with 2 tablespooons of very hot water.
  • Cover tightly, let steep at least 20 minutes but preferably 2 hours.
  • Drizzle one Tbs of the oil over both sides of the chicken, rubbing it in with the back of a spoon.
  • In a small bowl, combine the salt, pepper, and coriander.
  • Sprinkle the spices over the chicken; let stand 10 minutes.
  • Heat the butter and remaining tablespoon of oil in a large heavy skillet over medium heat; saute the chicken until lightly browned on bothsides.
  • Use tongs to transfer the chicken to a plate.
  • Add the shallot, ginger, garlic and nutmeg to the skillet; saute over low heat for 3 minutes.
  • Add the cream and yogurt; stir until well mixed. When the cream is steaming hot, return the chicken and its juices to the skillet; spoon the sauce over the chicen.
  • Cover and simmer over low heat, stirring occasionally, until the chicken is just done ( no longer pink in the center when cut into with a knife), 15 to 20 minutes.
  • If the sauce is too thick, add a splash of cream or milk.
  • Stir in cilantro, saffron/watter and garam masala. Adjust the salt to taste.

2 chicken breasts, halved lengthwise
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
2 tablespoons unsalted butter
1 (14.5-ounce) can chicken broth
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves
Serving suggestion: Roasted Garlic and Mushroom Risotto, recipe follows
1 head garlic
2 1/2 teaspoons extra-virgin olive oil
2 (14.5-ounce) cans chicken broth
3 cans water
1 medium onion, chopped
1 (8-ounce) package sliced mushrooms
Salt and freshly ground black pepper
2 1/2 cups long-grain rice
2 tablespoons unsalted butter
1/2 cup grated Parmesan

Steps:

  • Pound the 4 pieces of chicken between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.
  • In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken serve with the Roasted Garlic and Mushroom Risotto.
  • Preheat the oven to 350 degrees F.
  • Slice the top off the head of garlic. Put it on a large square of aluminum foil and drizzle 1 teaspoon of the extra-virgin olive oil over the exposed cloves. Wrap the foil around and over the garlic. Roast until it is soft, about 50 minutes to 1 hour. Remove from the oven and let cool.
  • Pour the 2 cans of broth into a saucepan, over low heat, and add 3 cans of water. Bring to a simmer.
  • In a large, heavy bottomed skillet, heat the remaining olive oil over medium-high heat. Add the onion and saute for 3 minutes. Add the mushrooms, season with salt and pepper, to taste, and cook until the mushrooms release their juices, about 5 minutes. Add the rice and cook for 1 minute to toast.
  • Add 2 ladles full of hot broth to the pan and gently stir the rice. Cook until most of the liquid has been absorbed. Adjust the heat so that the pan is just gently bubbling. Continue adding broth and stirring until all the broth is used and the rice is cooked but not mushy, about 20 to 25 minutes. Once the rice has absorbed all the liquid and is nice and creamy, stir in the butter, Parmesan and the garlic pulp. Cover and let rest for 2 minutes. Transfer to a serving dish and serve hot.
  • Reserve 3 cups for another use.

This is a recipe of Giada De Laurentiis's from Foodnetwork.com (but I lessened the salt, added flour, upped the garlic, and added a sauce-thickening tip). It seems like it would be super hard, but it is really not that difficult. The first time I made it was for my husband on Valentine's Day. I had never cooked with several of the ingredients before, and except accidentally buying chicken tenders instead of chicken cutlets, it turned out just lovely. :) I also found saffron threads the cheapest at Whole Foods, almost $7.00 less expensive than the next cheapest place! I served this over angel hair pasta with green beans and garlic breadsticks, and we had Recipe #175610 for dessert.

This is a saffron cream souce I found elsewhere on the internet, I didn't really see any recipes I liked on here so I went to look elsewhere to find one. I found this one, tried it and it is great. I figured I would share it here since the place I found it didn't exactly have an easy way of printing it. This is great for crab cakes, salmon patties, mussels, or chicken.

1/2 cup shallot, finely minced
1/2 cup dry white wine
1 pinch saffron thread
2 tablespoons heavy cream
1/2 cup butter, cold and cut into pieces
2 teaspoons lemon juice, fresh
salt and pepper, to taste

Steps:

  • Measure ingredients ahead of time, there may not be much time in between directions to measure the amount you need.
  • Cut the butter into 8 pieces and put it back in the fridge, it has to be cold when you add it.
  • Add the wine and shallots to a small heavy pot. Bring the wine and shallots to a boil on medium-high heat until there is a bout 2 tablespoons left.
  • Turn the heat down to medium-low and add the saffron.
  • Now add the heavy cream and whisk in the butter. Be sure to add the next piece before the last one has completely melted, stirring constantly, be sure NOT to let the mixture come to a boil.
  • Add the lemon juice and salt and pepper to taste.
  • Put on whatever it is you would like to use it on, the shallots are only there for cooking flavor if you would like a smoother sauce feel free to strain the sauce before putting it on whatever it is you are using it for.

1 small onion (chopped very thinly)
1 garlic clove (chopped very thinly)
250 ml cream
125 ml white wine (chardonnay, good quality)
1 sachet saffron thread
1 tablespoon clarified butter
salt and pepper

Steps:

  • Melt clarified butter in a pan and add the onion.
  • When onion turns translucent add garlic and stir.
  • Add white wine and let simmer.
  • Keep one TB cream back, add the rest to the pan. Let reduce sauce until desired consistency is reached.
  • Dissolve the saffron threads in the remaining TB of cream and add to the sauce.
  • Salt and pepper to taste.
  • Serve.

1 lb veal (or boneless chicken breasts)
salt

2 1/2 tablespoons butter
2 tablespoons olive oil
12 ounces cremini mushrooms, sliced (or button mushrooms)
2 large shallots, finely chopped
3/4 cup dry white wine
1 cup broth (beef or chicken depending on meat)
1/4 teaspoon saffron thread
3/4 cup heavy cream (or half & half)
1/2 cup frozen green pea, thawed
1 lemon, cut into wedges

Steps:

  • Sprinkle the meat with salt and pepper.
  • Melt 1/2 T Butter and 2 tsp of oil in heavy frying pan over high heat.
  • Working in batches, add meat and saute until just cooked through and golden, about 45-60 seconds per side.
  • Transfer to a platter and tent with foil to keep warm. Repeat with more butter and oil as necessary.
  • Melt 1 T butter and add 1 T oil in same pan over high heat. Add the mishrooms and shallots, sprinkle with salt and pepper and saute until mushrooms are golden brown, about 8 minutes.
  • Add wine, broth and saffron and simmer until the liquid is reduced by half, about 5 minutes.
  • Add cream and boil until the sauce thickens slightly, stirring often, about 4 minutes.
  • Add peas and return the sauce to a simmer.
  • Season sauce with salt & pepper to taste.
  • Pour sauce over scaloppini and serve with lemon wedges.
