CARAMELIZED VIDALIA ONION DIP

Steps:
- Heat the olive oil in a medium skillet over medium-high heat. Add the onion and saute until beginning to brown, 5 to 7 minutes. Stir in 1/4 cup water and scrape up any browned bits from the bottom of the pan. Turn the heat to low and cook until the onion is golden brown, 30 to 35 minutes, stirring occasionally. If the pan ever looks too dry, add a tablespoon of water. Let cool completely.
- Combine the cream cheese, mayonnaise, sour cream, Worcestershire sauce, garlic salt, onion powder and 1/2 teaspoon pepper in a medium bowl and beat with a mixer until smooth. Stir in the caramelized onion and the scallion. Chill until serving time. Top with more scallions and serve with vegetables for dipping.
VIDALIA® ONION DIP
A cheesy dip for the onion lover in all of us. I serve it with crackers but you can also use breadsticks. Be careful about over-baking as the cheese will harden and be difficult to dip crackers in.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a skillet over medium heat. Cook and stir sweet onion in hot butter until browned, 5 to 7 minutes; transfer to a bowl. Add mayonnaise to the onion and stir; pour into a 9x13-inch baking dish. Sprinkle Swiss cheese over the mixture.
- Bake in preheated oven until the top is bubbling and lightly golden, about 35 minutes.

THE BEST BAKED VIDALIA ONION DIP!
This is always a huge hit at my get togethers and everyone wants the recipe for it --- this takes only minutes to make and you may adjust the garlic amount as you wish, I would start with the 2 teaspoons for a milder garlic flavor or use garlic powder in place of fresh garlic --- this recipe can easily be doubled, you will *LOVE* this! :)

- Set oven to 375°F.
- Butter a 1 or 2-quart round or oval casserole dish.
- In a bowl combine all ingredients together together; mix well to combine.
- Adjust Tabasco and garlic to taste.
- Transfer to casserole dish.
- Bake for about 25 minutes or until browned on top.
- Sprinkle with grated Swiss cheese, then return to oven for another 4-5 minutes or until the cheese has melted.
- Serve hot or warm with assorted crackers.

- In a large heavy skillet, saute butter and diced Vidalia onion. Cook until lightly caramelized. Remove from heat and whisk in sour cream. Slowly whisk in evaporated milk. Whisk in dry soup mix until completely incorporated. Whisk in eggs. Mix in the shredded cheese until blended. Spoon mixture into an unbaked pastry. Place pie on a cookie sheet and place into oven.

- Cut remaining onion half into slices. Place onion slices and bell pepper halves, cut sides down, on a baking sheet lined with nonstick aluminum foil; drizzle with oil, and sprinkle with salt.

- Heat oil and butter in a large, deep skillet over medium-high until butter melts. Add sweet onion, yellow onion, red onion, shallots, and salt; cook, stirring occasionally and folding onions into each other, until barely softened and just starting to brown, about 12 minutes. Reduce heat to medium-low. Cook, stirring occasionally, until onions are caramelized, about 35 minutes, adding scallions halfway through cook time. If onions start to stick to skillet or brown too quickly, add a splash of water to skillet. Transfer mixture to a large bowl, and place cream cheese on top; let cool completely, about 30 minutes.
- Stir onion mixture until cream cheese is fully incorporated. Add sour cream, mayonnaise, garlic powder, and cayenne to onion mixture; stir well to combine. Season with salt and black pepper to taste. Cover and chill at least 3 hours or up to 8 hours or overnight.
- Let dip stand at room temperature 30 minutes. Serve with potato chips, toasted bread, and seasonal vegetables.
