CREAMY DIVINITY
A Divinity recipe without egg whites which is very easy to make. Also, there is no thermometer required! Sometimes the dry frosting mix is hard to find but it is available in many groceries.

- Line a 10x15 inch cookie sheet with parchment or waxed paper. Set aside.
- Beat frosting mix, corn syrup, vanilla, and boiling water in a mixing bowl until stiff peaks form, about 5 minutes. Mixture will be very thick, and it is helpful to use a stand mixer.
- Transfer to a large bowl and gradually beat in sugar; stir in nuts. Drop mixture by teaspoonfuls onto lined pan. Let stand about 4 hours or until firm. Turn candies over and dry at least 12 hours. Store in an airtight container.

SOUTHERN COCONUT LAYER CAKE WITH DIVINITY ICING
This recipe has been adapted slightly from the snowy white coconut cake that's long been served at Miss Mary Bobo's Boarding House in Lynchburg, Tennessee. Sprinkling the baked cake layers with coconut milk keeps them moist and adds another coconut dimension.

- For the cake: Preheat the oven to 350 degrees F. Butter and flour two 9-inch round cake pans; set aside. Sift the flour, baking powder and salt onto a sheet of wax paper; set aside. With an electric mixer at medium-high speed, cream the butter and sugar until very light and smooth. Add all of the egg whites and the vanilla and almond extracts; beat until well combined and smooth. Add ½ cup of the milk and mix well. Lower the speed to slow and add the sifted ingredients; mix just until blended, no longer. Fold in the remaining ½ cup milk. Divide the batter between the prepared pans; smooth the top. Bake until the cake layers are golden brown, the edges shrink slightly away from the sides of the pans, and a toothpick inserted in the centers emerges clean, 40 to 45 minutes. Cool the cake layers in their pans on a wire rack for 10 to 15 minutes. Run the tip of a knife around the sides of the cakes to loosen them; invert the cakes, turn right side up and cool to room temperature. For the divinity icing: Combine the sugar, corn syrup and cold water in a small, heavy saucepan. Bring to a boil over medium heat, stirring to dissolve the sugar. Boil, uncovered, until the syrup reaches a temperature of 240 degrees F, usually 3 or 4 minutes. (This is the soft-ball stage. If you don't own a candy thermometer, drop a small spoonful of the hot syrup into a cup of ice water; the mixture will form a soft mass when pressed between your fingers.) While the syrup is cooking, beat the egg whites, cream of tartar and salt with an electric mixer at medium-high speed until foamy. When the syrup reaches the soft-ball stage, slowly pour it into the beaten whites in a very slow, thin stream, beating all the time. (Try to pour the syrup into the center of the egg whites, so it doesn't spatter all over the sides of the bowl.) When all of the syrup has been added, add the vanilla and continue to beat until the mixture is fluffy and shiny and cools to room temperature, usually 7 to 8 minutes. Beat in the lemon juice and hot water. With a long serrated knife, split each cooled cake layer horizontally into 2 layers. Sprinkle the cut side of each layer with 1 tablespoon of the coconut milk or thinned coconut cream. Choose a layer with a flat surface and set it aside for the top. Place 1 of the layers, cut side up, on a serving plate. Spread it with a generous layer of icing; sprinkle on some coconut. Repeat with the remaining layers, spreading each with icing and coconut. Gently press the reserved layer, browned side up, on top. Spread the top and sides of the cake with the remaining icing. Sprinkle the top of the cake with coconut, and gently press more coconut into the icing on the sides.

- Combine sugar, water, corn syrup, and vinegar in a heavy saucepan over medium heat. Stir well. Heat, stirring occasionally, until the mixture reaches soft-ball stage or 235 degrees F on a candy thermometer. Remove from heat. In a mixing bowl, beat the egg whites until stiff. Beat in the cream of tartar and salt. With the mixer running, slowly add half of the hot sugar syrup to the egg whites. Add the marshmallows to the remaining hot sugar syrup in the saucepan and let it sit until they melt. Stir gently to combine. Combine the marshmallow mixture with the egg white mixture in the mixing bowl and beat until the frosting is of spreading consistency.

- In a 2 quart saucepan combine sugar, corn syrup, water, and salt.
- Cook to hardball stage, (260 degrees), stirring only until sugar dissolves.
- Meanwhile, as temperature of syrup reaches 250 degrees, beat egg white till stiff peaks form.
- When syrup reaches 260 degrees, very gradually add the syrup to egg whites, beating at high speed with electric mixer.
- Add vanilla and beat until candy holds its shape, 4-5 minutes.
- Stir in the chopped nuts or cherries, if desired.
- Quickly drop candy from a teaspoon onto waxed paper, swirling the top of each piece.
- Let cool.
DIVINE DIVINITY

- In a small heavy-bottomed pot dissolve the sugar in the corn syrup and water. Bring to a boil. Boil to thread stage (the candy thermometer should read between 223 to 234 degrees F). Brush down the inner wall of the pot with a heat-proof pastry brush and a small amount of water to prevent crystal formation.
- In the meantime beat egg whites with mixer and whisk attachment until they hold stiff but not dry peaks. Pour 2/3 of the boiled syrup mixture in a thin stream over the beaten egg whites, whisking all the time on high speed. Put the remaining mixture back on the heat and cook to soft ball stage (the candy thermometer should read between 234 to 240 degrees F). Whisk into the egg white mixture with the mixer on high speed. Add extract. Continue whisking until mixture forms stiff peaks.
- Pour into a buttered 9 by 13-inch pan. Let cool and cut. Store in an airtight container for chewier divinity or leave uncovered for a crispier texture.

- Cook sugar, corn syrup, and water in a 2-quart pot over low heat, stirring constantly, until sugar is dissolved. (On humid days, use 1 tablespoon less water.) Cook, without stirring, to 260 degrees on candy thermometer (or hard ball stage).
- Beat egg whites in 1-1/2-quart bowl until stiff peaks form. Continue to beat while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for electric mixer). Fold in nuts (if you choose).

- Preheat oven to 350 degrees. Butter two 8-inch round cake pans and line with parchment; butter parchment and dust pans with cocoa.
- Whisk boiling water into cocoa until smooth; whisk in sour cream. In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
- In a large bowl, using a mixer, beat butter and 2 1/4 cups sugar on medium-high until fluffy and pale yellow. Beat in whole eggs, one at a time, until incorporated. With mixer on low, add flour mixture in 3 additions, alternating with 2 additions cocoa mixture, and beat until combined. Fold in 4 teaspoons vanilla.
- Divide batter among pans. Bake until a toothpick inserted in center comes out clean, 45 to 50 minutes, rotating pans halfway through. Transfer pans to wire racks and let cool completely. Remove cakes from pans and discard parchment. Trim cakes if desired.
- In a heatproof bowl set over (not in) a pan of simmering water, whisk together remaining 1 1/2 cups sugar, egg whites, and corn syrup until sugar is dissolved. Remove from heat; using mixer, beat on high until stiff, fluffy peaks form, about 5 minutes. Fold in remaining 1 teaspoon vanilla.
- Transfer a cake layer to a serving plate and top with 1 cup frosting. Stack second cake on top and cover top and sides with remaining frosting.

- Place water in a small sauce pan.
- Add Sugar but, do not stir.
- Place saucepan over medium-high heat, bring to 238º.
- While sugar is cooking, separate the egg whites from the yolks. Save yolks for use later.
- Place the egg whites in a large mixing bowl.
- Add the Cream of Tartar.
- Add the pinch of Salt.
- Use a blender, on high speed and beat egg whites until they form soft peaks.
- When sugar syrup reaches 238º, slowly add, in a small stream, to the egg whites.
- Continue to beat the egg whites on high speed while adding all the sugar syrup over about a 5 minute period of time. Careful, the sugar syrup is very hot.
- Add the Vanilla Extract and beat another minute or so to incorporate the vanilla. Continue to beat only as long as needed to form firm peaks.
- Work quickly to spread over cake as the egg whites may continue to firm up and set.

- To prepare frosting, heat sugar, corn syrup and water in small saucepan over medium heat. Bring to a boil, but do not stir. Heat to 242°F on candy thermometer, about 4 minutes.
- In large bowl, beat egg whites until stiff. Pour a thin stream of hot syrup into beaten egg whites, mixing constantly at medium speed until whites become stiff again, about 5 minutes; beat in vanilla and almond extracts.

- In a small saucepan, combine 1 cup water, 1/2 cup of the sugar, the chocolate and the vanilla. Heat over medium heat, stirring constantly, until melted. Set aside to cool.
- Preheat the oven to 350 degrees F.
- Prepare three 9-inch round cake pans: spray the bottom and sides of each pan with cooking spray; line the pans with parchment paper; then spray again with cooking spray.
- Sift together the flour, baking powder and salt. In a stand mixer, cream the butter and the remaining 1 3/4 cups sugar until smooth. Add the eggs, one at a time, beating after each addition. Add the cooled chocolate mixture and beat until smooth. Add the sifted flour mixture alternately with the milk, starting with a third of the flour, then adding half the milk, and ending with the flour. Stir only enough after each addition to blend the ingredients. Pour the batter evenly into the cake pans and bake for 35 minutes, or until done. Judge doneness by appearancelayers will begin to pull away from the sidesor by inserting a toothpick into the center of a layer. The toothpick should come out clean. Cool the cakes in the pans for 10 minutes, then turn them out onto racks. Remove the paper and allow to cool completely before frosting. Spread the Divinity Icing between the layers and all over the top and sides of the cake.
- Pour the egg whites and salt into a stand mixer fitted with a whip attachment. Beat the egg whites until smooth but not stiff; they should not form stiff peaks.
- In a large saucepan, mix the sugar, 3/4 cup water, corn syrup and vinegar. Stir until the sugar dissolves, then heat the mixture until it reaches the hard ball stage (265 degrees F on a candy thermometer), about 12 minutes. When done, the syrup will spin a long thread when poured off the edge of a spoon. Remove the syrup from the heat and stir in the mini marshmallows. The mixture will be foamy. With the mixer running at high speed, stream the syrup into the egg whites. Beat well, and then beat in the vanilla.
DIVINITY ICING
This recipe has been in our family for several years. It is also known as Seven Minute Frosting or Sea Foam Icing. It is an ideal frosting for Caramel, White, Yellow or Devil's Food layer cakes.

- 1. Place oven rack in lowest position. Preheat oven to 325 degrees. Reserve 2 tablespoons of cherry juice and halve 6 cherries for icing; refrigerate. Add enough water to remaining cherry juice to make 1 1/4 cups. Chop the remaining cherries and drain; set aside.
- 2. In large metal or glass bowl, combine cake mix, liquid and almond extract. With electric mixer on low speed, beat 30 seconds; increase speed to medium and continue beating 1 minute. Fold in cherries. Pour batter into a 10" Angel Food Cake Pan. Bake for 47 minutes or until top is golden brown and cracks in cake are not sticky but very dry. Use a long metal spatula or knife to loosen sides of cake; remove from pan.
- 3. In large glass bowl, beat egg whites until soft peaks form. Place sugar, corn syrup, cherry juice and water in small sauce pan. Do not mix or stir. Cook on medium high heat. Bring to a boil and boil 2 minutes or until sugar syrup registers 240 degrees on candy thermometer. With mixer on high speed, beat the egg whites while slowly adding the syrup in a thin stream. Beat until mixture is thick and glossy. Add almond and vanilla extracts; just beat until blended. Immediately spread icing on cake before it sets up. Decorate with cherry halves.
- 4. Notes: Do not grease cake pan. The icing will be a light pink, add a few drops of red food coloring if you prefer a darker pink. Set out the egg whites about 30 minutes or an hour before using. Do not leave them out for an extended period of time.
