GRILLED LOBSTER TAILS WITH HERB BUTTER

- Preheat your grill to direct medium-high heat.
- In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve.
- Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste.
- Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.
- Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs.

I found this recipe that I had written down probably when I was in my late teens, so I'm not sure of its source. It's an quick and easy recipe...delicious too.

- Turn the oven on to"grill".
- Prepare sauce by melting butter and stirring in the lemon peel, green onion tops, and garlic.
- Keep it warm on minimum heat.
- Prepare lobster by cutting along edges on tail and under edge, cracking several joints in overshell to prevent it from curling.
- Grease a rack and place lobster shell side down, 4-6 inches above the top element.
- Brush tails with butter sauce.
- Cover with tin foil and cut a few slits for vents.
- Grill for 5 minute.
- Brush with sauce.
- Turn lobster over and grill covered for an additional 3-5 minutes or until the flesh is no longer opague.
- Serve with remaining sauce.
- Garnish with lemon wedges.

- In a small bowl, blend together the butter, garlic, and curry powder. Add a few dashes of hot sauce and season with salt and pepper.
- With scissors, cut down the center of the lobster tail shells on the top side and discard the dark intestinal vein. Loosen the meat from the shells and rub it with oil. Season the lobster lightly with salt and pepper. (I often don't do this step if your guests are cool).
- Light a grill. Grill the lobster tails over a medium-hot fire, meaty side down, until light grill marks appear, about 2 minutes. Turn the lobster tails and spread each with about 1 teaspoon of the butter. Turn the lobster meaty side down again and grill until golden brown, about 2 minutes. Turn the lobster tails shell side down and splash with SoCo. Add more butter, but not all, to the lobster tails, poking it in the shell under the meat and on top and let cook until the lobster releases juice and starts simmering, about 3 minutes. The lobster tails will continue to lose translucency until a thin band remains down the center of the tails, this should take about 3 minutes longer. Just before removing from the grill, spread the tails with the remaining butter. Serve right away.

BEST GRILLED TROPICAL CITRUS LOBSTER TAILS
Very easy grilled lobster tails. Keeping with the tropical theme, I love to serve this with my Recipe #407263 and grilled zucchini planks for a light healthy dinner. The grilled lobster is the star so I like to add dishes that will compliment the lobster and it's flavors. This is orange based butter vs lemon based, but equally as good.

- Lobster -- Take each tail, flesh side up and cut down the center of the tail. DO NOT cut all the way through the shell, you just want to cut the meat, so the good butter sauce can get all the way into the meat.
- Butter -- Simply mix the butter, orange lime and pineapple juice, orange and lime zest, shallot, honey, garlic and cilantro. If you want you can use a small food processor to do this, but I just mix it by hand. Transfer to a small bowl and set to the side. You will need to melt this to brush on the lobsters. I just melt mine in the microwave - 10-15 seconds is all you need.
- Grilling -- I start with the tails wrapped in a foil pouch so they don't dry out too much. Just add each tail to a piece of foil, shell side down, and butter the flesh side well. Wrap up each tail and put on the grill. I cook around 5-8 minutes (depends on the size of the tail) and then open up the foil pouch, remove the tail and finish on the grill. Brush again with the butter and put flesh side down on the grill. Cook 2 minutes, flip and finish cooking shell side down. When you flip the lobster, make sure to brush with the butter again. Cook another couple of minutes. You want the flesh opaque, firm to the touch and the shell red in color.
- Serve -- Serve a little extra butter on the side if you want. The lobster meat will pull right out of the shell. ENJOY!

BUTTERFLIED LOBSTER TAILS
Butterflying lobster tails is a presentation common in restaurants. It is a little more complex method of cooking a lobster tail but it is well worth the effort for this spectacular presentation.

Steps:
- Defrost the lobster tails.
- Preheat the oven to 450 degrees.
- Using kitchen shears cut down the center of top of each tail down to the base. Next grab each side of the shell and gently pry the shell away from the meat- leaving the meat at the base of the tail attached. Squeeze the shell together to close the gap and lay the meat on top of the shell. Gently slice the meat 3 times down the top- enough to be able to lay the meat over the sides of the shell. Repeat for the remaining tails.
- Place the tails in an oven safe pan and brush the top of each tail with the marinade. You will want to baste the tails again 2 or 3 times during the cooking process.
- Bake the tails for about 25 minutes. Cooking times may vary so make sure you keep an eye on the tails!

- Split the tails lengthwise with a large knife.
- Thoroughly mix all the other ingredients.
- Brush meat side of tail with marinade.
- Place the tails meat side down over medium coals and grill for 5-6 minutes.
- Turn over lobster and cook for another 5-6 minutes, brushing often with the remaining marinade.
- Do not overcook- lobster is done when it is opaque and firm to the touch.
- Serve with drawn butter and hunks of fresh lemon.

I found this recipe on AllRecipes. This one did not need to be changed at all. Sheer perfection and the only way we eat lobster in our house anymore. I highly recommend still dipping the lovely lobster meat in melted butter, but it's not necessary. The flavor here is wonderful.

- Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade.

- Make the butter by mixing together all the ingredients, then season and set aside. Can be made two days ahead. Remove from the fridge to soften before using.
- Use kitchen scissors to cut along the tops of the lobster shells, then flip the tails over and crack the ribs of the shell. Use your fingers to open the shell and loosen the meat keeping it attached at the base and pull it half out. Use a knife to cut along the top of the tail without cutting all the way through and remove the vein if you see one. Sit the tail in a shallow roasting tray and add some butter to each one. Tails can be prepared a few hours ahead and chilled.
- Heat the grill to high, then grill the lobster tails for 10 mins until cooked through. Put them on plates and drizzle with the butter from the pan, or pour the butter into a ramekin and put it in the middle of the table for dipping the lobster meat in. Serve with lemon wedges and scatter with extra parsley, if you like.

- Holding each lobster tail shell side down, cut away the ribbed membrane as close to the shell as possible with kitchen shears.
- Remove lobster meat in one piece from each shell, rinse and pat dry.
- Sprinkle each with lemon juice and set aside.
- In a small saucepan, melt butter with the minced garlic over low heat.
- Remove from heat.
- In a plastic ziplock bag, combine bread crumbs, herbs, garlic powder, cayenne and Parmesan cheese.
- Roll the lobster meat in the garlic butter and shake them in the plastic bag with the bread crumb mixture to coat.
- Return the lobster meat to their shells.
- Grill the lobster tails, shell sides down, on a rack 4-6 inches over glowing coals with some hickory chips added, turning from side to side but not turning over, for 10 minutes.
- Cover and grill another 5 to 10 minutes until they are just cooked through.

- In a skillet, spread a layer of rock salt and place the split lobster tails flesh side up. Add some lemon wedges to the skillet for juicing after. Lather the lobster meat in canola oil then season with my Chipotle Garlic or your favorite seafood seasoning.
