TEXAS CHEESE STEAK SANDWICH
Everyone loves cheesesteaks, and there are many options and many ways of making them. Well this is one I had been thinking of doing for a while, and my family just loved it, so it's a keeper and going to be going onto our table quite often.

Steps:
- 1. You will want your steak slice paper thin if possible. Also slice pepper and onions. Drizzle with a little olive oil and cook until onions are tender.
- 2. Season beef with favorite seasonings, I use granulated garlic and black pepper. If cooking in a skillet remove cooked veggies and cook meat. If using a grill or griddle, move veggies to one side and place meat on and cook to doneness you prefer.
- 3. Mix veggies and meat together and place on toasted bun with cheese. Enjoy this simple but delicious "burger".
PORK STEAKS WITH HOMEMADE BARBECUE SAUCE, TEXAS STYLE YUKON GOLD POTATO FRITES, AND GRILLED CHAYOTE
Steps:
- Heat olive oil in skillet. Add the salt pork and cook over medium heat until crispy. Remove the salt pork and set aside. Add in the onion and shallot and cook until translucent. Add in the garlic, ginger, and ancho powder and saute until fragrant, about 2 minutes. Add in the beer, cook 5 minutes. Add in all other ingredients except 1 cup of chicken broth. Simmer for 15 minutes. If the sauce seems too thick, thin with the reserved chicken broth. Crumble the salt pork into the sauce. Set aside and wait for pork to grill. Season pork steaks with salt, pepper. Place on a medium-high grill and sear, 5 to 6 minutes on each side. Remove the steaks and dip in homemade BBQ sauce. Place back on the grill for 2 to 3 minutes, turning and basting to let the sauce caramelize on the pork steaks. Remove and let sit for 5 minutes. Serve with Yukon Gold Frites and Grilled Chayote and Tomatoes.
- Yukon Gold Frites: Thinly slice potatoes lengthwise to form a traditional thin chip. Toss into a hot pot of good frying oil (canola or peanut). Fry until partially cooked. Remove from oil and let drain on a paper-towel covered plate. Sprinkle with a homemade Texas-style dry rub spice (sea salt, white pepper, celery salt, ground cumin, paprika, black pepper, garlic powder, chili powder, lemon zest, cayenne pepper and dry mustard). Toss chips on a hot grill and cook through until brown, crispy, with nice grill marks. Serve with Chipotle Aioli to dip.
- Grilled Chayote: Slice 1 to 2 chayote lengthwise like the potatoes. Brush each side with melted butter and season with salt and pepper. Cook on a medium-high grill turning frequently to make crisscross marks on both sides. When fork-tender, remove from grill and season again.
- Grilled Roma Tomatoes: Slice 2 Roma tomatoes in half; core the center to remove seeds and to make a pocket. Sprinkle with salt and pepper. Brush with olive oil. Fill pockets with pesto, about 2 tablespoons each, and sprinkle on some grated Parmesan. Grill tomatoes until tender but not falling apart, about 5 minutes if grill is very hot. Sprinkle with a bit more grated Parmesan, and serve.
- Whisk all ingredients together.
SLICED STEAK
This is a really big recipe. But it is also very simple. My cousin came up with it, she made it origanaly for 2-3 people using only one steak. Then we made this for my uncles b-day, and everyone enjoyed it(all 18 people) we served it with sauted vegtables.

TEXAS STYLE SLICED STEAK
This recipe came from a McCall's B-B-Q cookbook published in 1966! My mother used to make this often, and we all loved it! Now it has become one of my family's favorites. It is also good with flank steak!! (I never use a 4 lb. steak, so we just have more sauce!)

- Easy Chili con Carne Recipe. Cut up as much beef, pork, or wild game as you think you will need in pieces about the size of a pecan. Put it in a pot, along with some marbled suet (enough so as the meat won't stick to the sides of the pot), and add a good amount of wild onions and garlic.
- Cornbread. I learned how to make cornbread when I was a child and I know my mother's recipe by heart: The Choctaw (Native American Tribe) invented a heartier variation on regular cornbread called Crackling Bread.
- Pinto Beans (The Best Thing to Eat With Cornbread) Even before the invention of crock pots, my mom made a pot of beans nearly every day. They simmered on the stove and smelled wonderful.
- Home Fries. If Texans ever needed another recipe for bacon drippings and onions, that recipe has to be home fries. My sister taught me how to peel potatoes at a very early age, probably because she got tired of that chore long before I grew up enough to be able to use a knife without cutting my fingers off.
- Chicken Fried Steak and Cream Gravy. Once you have had a real honest to goodness Texas style Chicken Fried Steak, you will never be able to eat those frozen breaded things they call food again.
- Barbecue Spare Ribs! I always wondered how a pig could "spare" his ribs, but I was always glad that he could! This is the very easy way to make barbecue ribs, not out on the grill as most Texans prefer, but in the oven!
- Brisket. Barbecue brisket is definitely cooked on the grill or smoked in a smoker. There is no other way to cook it. You can smoke a brisket on Sunday and eat great sandwiches all week long.
- Frito® Pie. I think the only place in the world you can get real Frito® Pie is in Texas! Maybe you don't even know what it is! You could be living in Cincinnati, for instance, and think you have some real chili.
- Enchiladas and State Fair Corn Dogs. I really had two choices here that I couldn't decide on. Tex-Mex food is really good, and homemade enchiladas are an excellent choice for the ninth best Texas food.
- Pecan Pie! I hear cute little cup cakes may be on their way out as a fad food and that pies are going to be the next big thing in bakery treats! Well, you don't have to go far to find the very best pie ever invented, the Texas Pecan Pie!
