These oven baked rainbow trout fillets are amazing! Such a tender fish, mouthwatering! All you need to do is season the trout, put it in the oven and bake! Super simple easy dinner!

Steps:

  • Preheat the oven to 425F. Line a baking sheet with parchment paper.
  • Put the rainbow trout fillets on a baking sheet in a single layer, skin side down.
  • Brush the rainbow trout fillets with melted butter and sprinkle with salt and pepper.
  • Put the baking sheet in the oven and bake for 10 minutes, or until the fish flakes easily with a fork.

50g breadcrumbs
1 tbsp butter , softened
1 small bunch parsley , chopped
zest and juice of 1 lemon , plus lemon wedges to serve
25g pine nuts , toasted and half roughly chopped
1 tbsp olive oil

Steps:

  • Heat the grill to high. Lay the fillets, skin side down, on an oiled baking tray. Mix together the breadcrumbs, butter, parsley, lemon zest and juice, and half the pine nuts. Scatter the mixture in a thin layer over the fillets, drizzle with the oil and place under the grill for 5 mins. Sprinkle over the remaining pine nuts, then serve with the lemon wedges and a potato salad.

1 cup sour cream
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
1 tablespoon finely chopped onion
1/2 teaspoon salt

  • Place fish in a greased shallow 3-qt. baking dish. In a small bowl, combine the sour cream, cheese, lemon juice, onion and salt; spread over fish. Sprinkle with paprika. , Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork.

This easy Oven-Baked Rainbow Trout is a flavorful and healthy way of preparing your fresh catch! Plus, it takes less than 20 minutes to get dinner on the table!

2 rainbow trout (gutted and cleaned, with heads still on)
2-4 teaspoons olive oil
1 lemon (thinly sliced)
2 cloves garlic (sliced)
4 sprigs each of fresh dill and parsley (or rosemary or thyme)
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. Tear a large piece of heavy duty aluminum foil big enough to go completely around both fish and set it on a baking sheet.
  • Place trout on foil and drizzle each trout with 1-2 teaspoons of olive oil. Season the inside and outside with salt and pepper.
  • Place a few slices of lemon, one sliced clove of garlic, and a couple sprigs of fresh dill or the herb of your choice inside each of the trout. Fold the foil over the fish, crimping the edges well to create an envelope for the fish to bake in.
  • Bake for 10-15 minutes, checking after 10 minutes to see if the fish is done. It will be opaque and flake easily with a fork when done.

Clearly this recipe can be done with salmon, kokanee, char or really any fish you want. I just like it with trout. The herbs are also open to improvisation; the combination I use is what I like. Serve these with a green salad or as the filling in a sandwich.

1 pound trout meat, (skinless and boneless)
1 cup minced onion
2 tablespoons butter
1 cup breadcrumbs
2 eggs, (lightly beaten)
1 tablespoon Dijon mustard
2 tablespoons mayonnaise
2 teaspoons Worcestershire sauce
1/4 cup chopped parsley
1/4 cup chopped chives
1/4 cup chopped tarragon or dill
1 teaspoon salt
1/3 cup vegetable oil, (for frying)

Steps:

  • Cook the minced onion with the butter in a small pan over medium heat until translucent, but not browned. Remove from the pan and let cool.
  • Chop the trout meat with a knife into bits. You can chop very roughly and then pulse a couple times in a food processor, but you want the trout in little pieces, not as a paste.
  • Mix all the remaining ingredients (except the frying oil) together in a large bowl. Form cakes with your hands. I like them about the width of my palm. You will need to wash your hands a couple times to remove debris; this helps you make cleaner, nicer cakes.
  • Let the cakes sit in the fridge for 20 minutes or so -- this lets the breadcrumbs absorb moisture, which helps your cakes hold together.
  • Heat the frying oil in a large, wide pan over medium-high heat. Fry as many cakes as will fit in one layer without touching. Cook them until each side is golden brown, about 4 to 6 minutes per side. Serve hot.

  • In a large bowl, combine tomatoes, olive oil, 2 tablespoons chopped parsley, and minced garlic. Spread evenly over the fish.
