CHICKEN ROTINI STOVETOP CASSEROLE

1 (12 ounce) package rotini pasta
2 cups half-and-half cream
½ cup butter
⅔ cup freshly grated Parmesan cheese
½ teaspoon dried basil leaves
½ teaspoon dried oregano
½ teaspoon chopped fresh chives
½ teaspoon chopped fresh parsley
4 skinless, boneless chicken breast halves - cubed
½ green bell pepper, chopped
½ red bell pepper, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Combine half-and-half and butter in a saucepan over medium heat. Boil gently, stirring, until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove pan from heat; whisk in cheese, basil, oregano, chives, and parsley. Cover, and set aside.
  • Saute chicken in a large skillet until lightly browned on both sides. Stir in green and red bell pepper, and cook until vegetables are tender, and chicken is no longer pink in the middle.
  • In a casserole dish, combine the hot cooked pasta, chicken mixture, and sauce. Mix well, and serve immediately.

2 cups water
3 cups rotini pasta, uncooked
1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 5 min. or until no longer pink.
  • Stir in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 min. or until pasta is tender.
  • Add remaining ingredients; stir. Cook, covered, 5 to 7 min. or until VELVEETA is completely melted and vegetables are crisp-tender, stirring frequently.

1 Tbsp. oil
1 pkg. (9.4 oz.) VELVEETA Rotini & Cheese with Broccoli
1/4 tsp. garlic powder

Steps:

  • Cook chicken in hot oil in large skillet for 3 to 4 min. on each side or until browned on both sides. Add 1 cup water; bring to boil. Stir in Rotini Pasta; cover and simmer 4 min.
  • Add contents of the Broccoli Pouch; cover. Continue cooking 5 min. Do not drain.
  • Stir in Cheese Sauce and garlic powder; cook and stir until heated through.

1 can (14.5 oz each) Hunt's® Diced Tomatoes, undrained
2 cups water
½ teaspoon dried basil leaves
½ teaspoon dried oregano leaves
3 cups rotini pasta, uncooked
1 cup ricotta cheese
½ cup Kraft® Grated Parmesan Cheese, divided
½ teaspoon parsley flakes

Steps:

  • 1. Crumble sausage into large deep skillet; cook 8 to 10 minutes or until evenly browned, stirring frequently. Drain sausage; return to skillet.
  • 2. Stir in tomato sauce, undrained tomatoes, water, basil and oregano. Bring to a boil. Add pasta; stir. Cover; simmer on medium-low heat 18 to 20 minutes or until pasta is tender, stirring occasionally.
  • 3. Mix ricotta, ¼ cup Parmesan and parsley; spoon over pasta mixture, then swirl gently with spoon. Sprinkle remaining Parmesan over top.

1 cup reduced-sodium chicken broth
3 ounces reduced-fat cream cheese
1 tablespoon lemon juice
1-1/2 cups frozen peas (about 6 ounces), thawed

1/4 teaspoon salt

  • Bake chicken: Preheat oven to 400 degrees and spray baking sheet with nonstick cooking spray. Place chicken breasts in medium bowl and add olive oil, salt, garlic, basil, and parsley; massage chicken with herbs. Place on baking sheet and bake for 15-20 minutes or until juices run clear and chicken is no longer pink. Allow chicken to cook for a few minutes then transfer to cutting board and chop chicken into small cubes; set aside.
  • To make the sauce: Heat olive oil in a large oven-proof skillet over medium-high heat. Add the garlic; cook until fragrant and golden. Add in tomatoes, parsley, basil, oregano, garlic salt, and some fresh black pepper. Cook over medium heat until tomatoes break down and become a little like sauce; about 5-8 minutes. Transfer to a food processor or blender and puree until smooth. Taste sauce and add more herbs or salt if necessary.
  • Return the sauce to the pan, add 1 1/4 cups of water, and stir in uncooked pasta. Bring back to a boil, cover, then reduce heat to medium-low. Cook pasta for 8-10 minutes or until al dente.
  • Once pasta is al dente, reduce heat to low and stir in mozzarella and parmesan cheeses and chopped chicken. Place burrata on top of pasta and place under broiler until burrata melts and is slightly golden. Garnish with basil leaves and extra parmesan, if desired. Serves 4-6.
