1 cup olive oil or regular mayonnaise
¼ cup fresh basil leaves
½ cup grated Parmesan cheese
2 tablespoons lemon juice
2 garlic cloves, peeled
1 (2 ½-pound) rotisserie chicken, skin and bones discarded, meat shredded into bite-size pieces (3 cups)
4 celery ribs, thinly sliced
2 Granny Smith apples, cored and diced
4 ounces (4 cups) baby arugula
Dried cranberries (optional)
Salt and pepper

Steps:

  • Process mayonnaise, basil, Parmesan, lemon juice, and garlic in food processor until smooth and pale green, about 10 second.
  • Combine chicken, celery, apples, and mayonnaise mixture in a large bowl. Gently toss arugula into salad and season with salt and pepper. Sprinkle with dried cranberries, if using.
  • Serve and enjoy!

3 quarts water
1 onion
2 garlic cloves
2 bay leaves
1 small bunch flat-leaf parsley, tied with kitchen twine
1 teaspoon salt
6 chicken breast halves, on the bone, with skin, 4 1/2 pounds total weight
2 garlic cloves
2 cups packed basil leaves
1 cup mayonnaise
3/4 cup freshly grated Parmigiano-Reggiano
Juice of 1 lemon
1 1/2 teaspoons freshly ground black pepper
1 teaspoon salt

Steps:

  • In a large heavy pot, bring the water to a boil. Peel, trim, and quarter the onion. Peel, trim, and smash the garlic.
  • Add the onion, garlic, bay leaves, parsley, and salt to the boiling water and boil for about 10 minutes.
  • Carefully slide the chicken breasts into the pot and return the water to a boil. Reduce the heat to low, cover, and poach the chicken for about 15 minutes. Turn off the heat, remove the cover, and let the chicken cool in the liquid.
  • When cool enough to handle, remove the chicken from the broth, skin and bone it, and shred into bite-sized pieces. Put in a large bowl. (Be sure to strain and reserve the broth for making soups or sauces.)
  • Make the dressing: Peel, trim, and chop the garlic as fine as possible. Rinse the basil leaves, pat them dry, and chop very fine.
  • In a bowl, combine the garlic and basil with the remaining dressing ingredients. If you would like a smoother sauce, blend all the ingredients in a blender or food processor until saucelike.
  • Spoon the dressing over the chicken, toss well to combine, and transfer to a serving platter. Serve within 1 hour of finishing.

WARM CHICKEN PARMESAN SALAD

2 tablespoons extra-virgin olive oil
6 chicken cutlets, about 3 ounces each
3/4 teaspoon salt
1/4 teaspoon red pepper flakes
1 1/2 cups store-bought marinara sauce
3/4 cup shredded mozzarella
3 cups baby arugula
1 cup small basil leaves
1/2 cup shaved Parmesan
1/4 cup chopped oil-packed sun-dried tomatoes
1 tablespoon extra-virgin olive oil
1 teaspoon Champagne vinegar
1/4 teaspoon salt

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Sprinkle the cutlets on both sides with the salt and pepper flakes. Place the cutlets in the skillet and cook, undisturbed, until golden brown on the first side, 3 minutes. Flip, and cook for an additional minute. Add the marinara sauce and turn the cutlets to coat in the sauce. Top with the mozzarella, reduce the heat to medium, and cover the pan. Cook for an additional 5 minutes to melt the cheese.
  • Meanwhile, combine the arugula, basil, Parmesan, sun-dried tomatoes, olive oil, vinegar and salt in a large bowl. Toss well to coat.
  • To serve: Place one piece of chicken on a plate and top with a spoonful of sauce. Add a bit of the salad right on top of the chicken, and serve.

4 teaspoons kosher salt
1 teaspoon black pepper
1/4 cup fresh lime juice (from 2 to 3 limes)
1 tablespoon white wine or 1 tablespoon rice vinegar
2 tablespoons light brown sugar
4 scallions, thinly sliced (white and light green parts)
2 granny smith apples, diced (peeled, if desired)
1/3 cup roasted peanuts, roughly chopped
2 tablespoons thinly sliced of fresh mint

Steps:

  • Rinse the chicken and pat it dry with paper towels. Pound it to an even thinness.
  • Place the chicken in a large saucepan and add enough water to cover by 1/2 inch. Add 3 teaspoons of the salt and 1/2 teaspoon of the pepper and bring to a gentle simmer.
  • Cook until no trace of pink remains, 8 to 10 minutes. Transfer the chicken to a bowl of ice water for 5 minutes.
  • Meanwhile, in a large bowl, combine the lime juice, vinegar, and sugar, stirring until the sugar dissolves.
  • Add the scallions and apples and toss.
  • Drain the chicken and pat it dry. Dice the chicken and add it to the apple mixture along with the peanuts, mint, basil, and the remaining salt and pepper.

1/4 cup flour
salt and pepper
4 tablespoons butter
1/4 cup minced fresh basil
1 tablespoon red wine vinegar
1/2 cup parmesan cheese
1 teaspoon sugar
1 cup cream or 1 cup milk

Steps:

  • Flatten breasts, dip in flour, salt and pepper.
  • Heat butter in 12in skillet.
  • Add breasts, cook for 4 minutes each side until browned and juices run clear.
  • Remove from pan.
