HAWAIIAN GRILLED HAMBURGERS



Hawaiian Grilled Hamburgers image

This has oriental flavoring and a pineapple slice, moist and juicy and the flavors are addictive. Now I use turkey burger. Enjoy!

2 lbs ground beef or 2 lbs ground turkey
1 egg, beaten
1 tablespoon oil (if you use turkey burger)
1/4 cup brown sugar or 1/4 cup Splenda brown sugar blend
1/4 teaspoon ground ginger
1 1/2 teaspoons soy sauce
1 tablespoon pineapple juice
2 (12 ounce) cans pineapple slices in juice
1 cup mayonnaise
1 teaspoon celery seed
2 teaspoons pineapple juice
1 tablespoon ketchup
8 slices provolone cheese
8 romaine lettuce leaves
8 hamburger buns
1/2 cup margarine

Steps:

  • Open canned pineapple, drain juice and reserve amounts for recipe.
  • In large mixing bowl, add egg, (oil if using turkey burger only) brown sugar, ginger, soy sauce, 1 tblsp pineapple juice. Mix well. Set aside.
  • For dressing:.
  • In small bowl mix mayonnaise, celery seed, pineapple juice, ketchup.Taste. You may add a little more Ketchup by tsp if you prefer. Refrigerate.
  • Add ground meat to egg, brown sugar and spice mixture. Mix well. I use my fingers.
  • Form into 8 patties.
  • Put on the grill and cook about 6 minutes, then flip until done.
  • You may grill the pineapple rings on the grill for about 2 minutes.
  • Brush margarine on each side of buns.
  • Put on the grill the last two or three minutes to toast.
  • To Serve: Place one slice cheese on bun, then cooked pattie, add a spoonful of sauce on top, then romaine lettuce leaf, then one pineapple ring, top with other half of bun.
  • Serve with Taro chips, Hawaiian potato chips, pastachio nuts, and fresh coconut slices if you have. Dip the coconut slices in a mixture of vanilla and evaporated milk and Splenda before serving.
  • Note: I have not used fresh pineapple because there is intense natural acid. Some of the family cannot tolerate. You could substitute fresh pineapple, make sure you use some of the natural juice.

Kosher salt and freshly ground pepper
Vegetable oil, for the grill
4 soft hamburger buns

Steps:

  • Preheat a grill to medium high. Divide the beef into four 6-ounce portions. Gather each into a ball, then gently flatten into a 4 1/2-inch-wide patty about 3/4 inch thick. Press your thumb into the center of each patty to make a 1/2-inch-deep indentation (this prevents the patties from bulging as they cook). Season the patties on both sides with salt and pepper.
  • Lightly brush the grill grates with vegetable oil, then grill the patties indentation-side up until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness.
  • Remove the burgers to a plate and let rest 5 minutes so the juices redistribute. Serve the burgers on the buns; top as desired.

When making Hamburgers for the boys, I make mine a little different adding extra zing and spice. I also like to place my burger in a flour tortilla and grilled a little longer to let the cheese melt. YUM, my favorite way to eat a hamburger.... like a taco. These burgers have salsa right in them too.

1 cup breadcrumbs
1 egg
salt and pepper
1 dash dried chives
1 dash ground red pepper
8 tablespoons salsa
2 teaspoons fresh cilantro
1 cup romaine lettuce, shredded
1 small red onion, sliced
8 slices American cheese
2 roma tomatoes, sliced long ways
1 tablespoon ranch dip
8 flour tortillas (8 in)

Steps:

  • Place ground beef in mixing bowl and combine with the breadcrumbs, egg, salt, pepper and red pepper, and chives.
  • Divide into 4 sections, add the salsa and cilantro to each and shape making large circular patties. Cut in half. (to fit flour tortilla).
  • Place on a hot barbecue cook for 6 minutes on each side. Add each to a flour tortilla and add cheese, fold over. Grill a few more minutes until tortilla has grill marks and cheese has melted.
  • Add tomato, red onion and Romaine and a dollop of Ranch Dressing.
  • Eat like a taco. YUM!

Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.

Steps:

  • In a large mixing bowl add the ground beef and then sprinkle the remaining ingredients on top.
  • Fold the meat a few times to incorporate the ingredients. This should take only about 30 to 45 seconds. Do NOT overmix the meat.
  • On a large plate or serving tray lined with parchment paper place your meat in the center. Score the meat with the side of your hand into 6 evenly spaced sections.
  • Tear off each section and carefully form each into a patty that is approximately one inch thick and 4 inches across. As you form the patty, be sure to form it with a ½ inch indention in the center
  • Cover the formed patties with plastic wrap and transfer to the refrigerator until ready to grill.

But sometimes you want a smoky grilled burger. For that, a charcoal grill is best, but a gas grill can do the trick, too. Resist the temptation to press down on the burgers with a spatula, which only spews juice and fat on the fire, causing the flames to flare up and the burger to lose flavor. If you feel your burger is cooking too quickly, use the cooler sides of the grill to rest them. And remember: lowering the top on the grill helps cheese melt.

Cook the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
  • Add the cheese, if using, to the tops of the burgers during the last minute of cooking and top with a basting cover, close the grill cover, or tent the burgers with aluminum foil to melt the cheese.

  • In a medium bowl, mix together all burger ingredients and combine evenly.

  • Drizzle oil on both sides of the patties and season the outside with salt and pepper.
  • Place patties into the refrigerator for 30 minutes to set up.
  • Preheat barbeque to medium heat. (350- 375°F) (175C-190°C). Oil grill to prevent sticking.
  • Place burgers on the grill and cook for 5-6 minutes per side. Or until turkey is cooked through and nice char marks are achieved.
  • Remove the turkey burgers from the grill. Cool slightly and serve on buns with pineapple salsa. Garnish with burgers with lettuce, red onion and mayo if desired.
  • To prepare the salsa, combine all the ingredients in a medium bowl. Mix well until all ingredients are evenly combined. Reserve salsa.
