ARUGULA AND ROMAINE SALAD WITH RED GRAPES

Arugula and Romaine Salad with Red Grapes image

I looked into my refrigerator to see what I had...and the ingredients jumped to my imagination. I thought: I think this has to taste good and go well with my baked grouper dinner...and it was not only good but great! The mild bitterness of the arugula and the sweetness of grapes and pickled veggies is a perfect combination. A cool crisp pinot bianco is the perfect match.

STRAWBERRY ROMAINE SALAD

Strawberry Romaine Salad image

Our good friend, Sandy Miller, made this salad when we were staying with them. I was surprised to see that peanut brittle was in the salad, but my husband and I were claiming that it was the best salad that we had ever eaten with the very first bite! We said that it might have been because we had not had any sweets since we had given them up for Lent, but we have had this salad many times since then and it is always a pleaser. The dressing is outstanding and I have made many variations using the dressing. I will say that peanut brittle is sometimes hard to get and I have substituted a peanut butter crunch that I found at one of our Kroger's. The recipe calls for 1 can of french fried onion rings, but that won't go through so I am putting the 3 oz bag and you can put on for the amount of salad. Also the original recipe called for a box of peanut brittle, but I just put some in a baggie and crushed it with a rolling pin. It makes a lot of dressing and when I make it for just my husband and I we can usually have 2 -3 salads from the 1 recipe.

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 10

1/2 cup mayonnaise
2 tablespoons red wine vinegar
1/3 cup sugar
1/4 cup half-and-half
1 1/2 tablespoons sour cream
1/2 teaspoon poppy seed
1 head romaine lettuce, cut
1 pint fresh strawberries, sliced
3 ounces French fried onion rings
1/2 cup of crushed peanut brittle

Steps:

  • Toss lettuce and strawberries.
  • Just before serving add crumbled onion rings and crumbled peanut brittle and toss with dressing.
  • I have used Mesclun from my garden (Spring mix) - mix of young tender lettuce varieties and a sprinkling of arugula and we love those flavors.
  • Another variation is that I substitute an apple for the strawberries and toasted pecans for the peanut brittle.
  • I have also used the dressing over fruit (strawberries, mandarin oranges, apples, etc.) and topped with toasted pecans.

CHOPPED ROMAINE & CUCUMBER SALAD WITH YOGURT DRESSING

Chopped Romaine & Cucumber Salad With Yogurt Dressing image

This crunchy, flavor-packed salad is one of the most-requested recipes at the award-winning restaurant, Oleana, and was printed in Chef Ana Sortun's cookbook, "Spice: Flavors of the Eastern Mediterranean".

Provided by blucoat

Categories     Salad Dressings

Time 30m

Yield 4 serving(s)

Number Of Ingredients 16

1 large head romaine lettuce, blemished outer leaves removed
1 English cucumber
1/2-3/4 cup walnut halves, lightly toasted (optional)
1 cup roughly chopped arugula, washed and dried well (about 1 small bunch)
1 tablespoon chopped flat leaf parsley
2 tablespoons chopped fresh dill
1 tablespoon chopped of fresh mint
1/4 teaspoon aleppo chile
salt & fresh ground pepper
1 teaspoon finely minced garlic (about 2 large cloves)
2 tablespoons fresh-squeezed lemon juice (about 1/2 lemon)
1 tablespoon champagne vinegar (avoid acidic brands like Heinz) or 1 tablespoon chardonnay vinegar (avoid acidic brands like Heinz)
1 1/2 teaspoons sugar
salt & fresh ground pepper
1/2 cup whole-milk plain yogurt or 1/2 cup sheep's-milk yogurt
5 tablespoons extra virgin olive oil

Steps:

  • Wash and dry the romaine leaves. Be careful to dry the greens thoroughly, or the dressing won't cling. Chop the romaine into fine shreds (1/4 inch) and place them in a large salad bowl.
  • Peel the cucumber and cut it in half lengthwise. Spoon out the seeds. Cut each half in half widthwise, making four long pieces, and grate the cucumber on the large holes of a box grater. Squeeze out any excess water with your hands.
  • Add the shredded cucumber to the chopped romaine. Combine the romaine and cucumber with the walnuts, chopped arugula, and herbs, and set aside or keep cold until you're ready to toss and serve.
  • Make the dressing by combining the minced garlic with the lemon, vinegar, and sugar in a small mixing bowl. Let this mixture sit for at least 10 minutes to soften the sharpness of the raw garlic.
  • Finish the dressing by whisking in the yogurt and then the olive oil, little by little. Season to taste with salt and fresh-ground pepper.
  • Just before serving, add half the dressing to the salad, salt and pepper taste, and toss. Romaine is thick and crunchy and needs more dressing than a delicate lettuce. Taste the salad, and if the dressing's too light, spoon on more. Sprinkle with chilies and serve immediately.

ARUGULA, PEAR AND GOAT CHEESE SALAD WITH POMEGRANATE VINAIGRETTE

Arugula, Pear and Goat Cheese Salad With Pomegranate Vinaigrette image

I think this makes a perfect holiday salad. I will be making it for Thanksgiving and will report back. Source: Food52. com / brigidc's. This is her description of the salad. Sweet, salty, tart, crunchy and spicy, this salad has perfect flavor and texture balance. The inspiration was pomegranate molasses, which I learned about when I worked on a Persian food class. I like how the molasses takes the acidic edge off the vinaigrette but it is still tangy and delicious. Be sure to try this no fuss, no muss recipe Recipe #446884 I made my own pomegranate molasses: Recipe #490458 It's easy and can be reduced to make a smaller amount. It can be stored up to 6 months.

Time 40m

Yield 6 serving(s)

Number Of Ingredients 12

1 large shallot, halved and thinly sliced
1 tablespoon pomegranate molasses
2 tablespoons sherry wine or 2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/3 cup extra virgin olive oil
4 cups arugula, lightly packed
4 cups romaine lettuce, torn into bite-sized pieces
2 ripe pears, cored and cut into 1/2-inch cubes
1/3 cup pomegranate seeds, Seeding a Pomegranate - Step by Step
3 ounces fresh goat cheese, crumbled
1/4 cup pistachios, toasted and coarsely chopped

Steps:

  • Vinaigrette Dressing:.
  • In a small bowl combine the shallot, pomegranate molasses, vinegar, salt and pepper and whisk until the salt is dissolved.
  • Whisk in the olive oil and let vinaigrette stand at room temperature until salad is assembled.
  • Salad:.
  • Combine the arugula, romaine, pears and half of the pomegranate seeds in a large bowl.
  • Crumble half of the goat cheese over the ingredients in the bowl (this works best if the cheese is very cold).
  • Whisk the vinaigrette until uniform and add all but 2 tablespoons of it to the bowl.
  • Gently toss the salad with your hands or salad tongs, coating the ingredients well with the vinaigrette. If the salad seems dry, add the vinaigrette in small increments until it is dressed to your liking.
  • Crumble the remaining cheese over the salad and sprinkle the remaining pomegranate seeds and the pistachios over the top. Serve immediately.

  • In a small bowl, combine garlic, anchovies and their oil, lemon juice, mustard, salt, and pepper. Using a fork, whisk in the olive oil until smooth; set aside.
  • Just before serving, combine the romaine and arugula in a large salad bowl. Pour the dressing over the greens and toss well. Add the toasted nuts and the parmesan cheese; toss again and serve on individual salad plates.
  • DO NOT OVERDRESS YOUR SALADS - Too much salad dressing will weight down the salad ingredients and mask their flavors. The dressing's role is to highlight not to overpower the salad ingredients. A general rule is 1/4 cup of dressing for 6 cups of greens. As soon as your salad is mixed, taste a leaf to see if there is sufficient dressing. If not, drizzle some more over the salad, a tablespoon at a time; toss and taste again.

  • Place the salmon on the prepared baking sheet. Coat the salmon with the spice rub then spray with the avocado oil spray. If you do not have avocado oil spray, place about one tablespoon of oil on the salmon BEFORE adding the spice rub. Rub the spices into the oil to create a moist coating.
