Rice with amazing flavor is hard to come by but this recipe makes it so easy. Before roasting the pork shoulder, make slits to fill up with sofrito, sazon and adobo seasonings. Serve with the delicious homemade Spanish rice.

12 lb prime rib roast
2 tablespoons Paula Deen's House Seasoning
2 cups beef stock or canned broth
1 sprig fresh thyme or 1/2 teaspoon of dried thyme
2 tablespoons Paula Deen Merlot Wine Steak Sauce
salt, to taste
black pepper, to taste

Steps:

  • Preheat oven to 425 °F.
  • Rub the roast with the Paula Deen House Seasoning. In a roasting pan, place the roast, fat side up, so the ribs act as a rack. Roast for 30 minutes and reduce heat to 350 °F. Continue to roast for 2 hours or until the internal temperature on a meat thermometer registers your desired doneness. Transfer to platter and let rest for 15 minutes.
  • While roast is resting, prepare pan sauce. Skim off the fat from the pan drippings. place the roasting pan over medium heat and add the stock and thyme. Bring to a boil and simmer for 5 minutes.
  • Whisk in the Paula Deen Merlot Wine Steak Sauce. Salt and pepper to taste. Serve warm alongside the prime rib roast.
  • Note: Medium rare 140 °F, Medium 150 °F, Well Done 160 °F.

9 pounds skin-on, bone-in pork shoulder (picnic) roast
1 lime, halved
10 cloves garlic
2 ½ tablespoons salt
1 ½ tablespoons olive oil, divided
1 tablespoon dried oregano
1 ½ teaspoons ground black pepper
1 ¼ teaspoons adobo seasoning (such as Goya®)
1 teaspoon vinegar
¼ teaspoon sazon seasoning
2 (12 fluid ounce) cans or bottles beer (such as Budweiser®)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub pork shoulder all over with lime.
  • Mash garlic into paste in a mortar and pestle or pilon. Transfer to a bowl; mix in salt, 1 tablespoon oil, oregano, black pepper, adobo seasoning, and vinegar.
  • Lift skin off the pork to 1-inch from the narrow part of the bone. Make 3/4-inch slits all over the pork with a sharp knife. Stuff seasoned garlic paste into the slits. Pull skin back over to cover the pork.
  • Mix remaining 1/2 teaspoon oil and sazon seasoning together in a small bowl. Rub over the skin of the pork.
  • Transfer pork to a large roasting pan. Pour in beer. Cover with aluminum foil, sealing well.
  • Roast in the preheated oven until slightly pink in the center, about 3 hours.
  • Increase oven temperature to 350 degrees F (175 degrees C). Uncover pork and continue roasting until skin is golden brown and crispy, about 2 1/2 hours. Remove from oven and let stand for 10 minutes before carving.

1 small onion, chopped
2 tablespoons butter
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1-3/4 cups cubed cooked pork
1 cup uncooked instant rice
Optional: Lime wedges and minced cilantro

Steps:

  • In a large skillet, saute green pepper and onion in butter until tender. Stir in the tomatoes, broth, salt and pepper. Bring to a boil; stir in pork and rice. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° until rice is tender and liquid is absorbed, 20-25 minutes. Stir before serving. 2 tablespoons fresh cilantro, chopped to garnish

Steps:

  • In a food processor add green pepper, onion and cilantro. Pour in oil and mix well. Set aside 2 tablespoons for Spanish rice.
  • Cook's Note: Can keep in the refrigerator for up to 10 days.
  • Preheat oven to 300 °F.

Steps:

  • Rinse and pat roast dry with a paper towel. Carefully score skin into diamond shapes with small knife to make cracklings.
  • Sprinkle roast liberally w/ salt, around 2 ½ tablespoons Place roast upright on a plate, w/ the shank pointing straight up. Refrigerate, uncovered, at least 2 hours or overnight.
  • Heat oven to 325 degrees, remove roast from fridge; pat dry. Arrange on a rack in a roasting pan, skin side up and place in the oven. Roast to an internal temperature of 150 degrees, about 2 ¾ to 3 hours.
  • When meat is done, raise oven temperature to 450 degrees for 15 minutes to crisp the skin. Remove the roast from the oven and let stand at least 20 minutes to 1 hour.
  • To serve, use a carving knife to slice away the cracklings, keeping them in a single sheet as much as possible. Place on a separate plate. Slice away any thick pieces of fat that remain. Slice the meat from the bone in ¼ to ½ inch pieces. This is most easily done by slicing parallel to the main leg bone.
  • Arrange meat on a platter and place cracklings on top.

This recipe is for a bone-in pork shoulder, or pernil. It is marinated in a garlicky paste for 1 to 3 days; the longer the better. Unlike other recipes in the database, it is cooked at a relatively high heat so that the result is a tender roast with crispy crackling or chicharons. Adapted from Daisy Martinez. Cooking time is approximate. The original recipe called for a 4.5 lb pork shoulder. The smallest I found was 8.5 lbs.

12 garlic cloves, peeled (or one head)
1 1/2 tablespoons kosher salt
1 tablespoon black peppercorns
2 tablespoons dried oregano (or 3 tablespoons fresh)

Steps:

  • Using a mortar and pestle, pound the garlic and the salt to form a paste.
  • Add the pepper and oregano and pound well to incorporate; stir in the olive oil and vinegar, this called a wet adobo which will keep in the refrigerator for 5 or 6 days.
  • Place the roast skin side up and make several slits, about 1 1/2 inches long and as deep as possible; spoon some wet adobo into the slit.
  • Turn roast and do the same with the other sides, then rub the adobo all over.
  • Refrigerate, covered for at least one day, up to 3.
  • Turn once a day.
  • Preheat oven to 450 degrees F.
  • Roast, skin side up, on a rack in a roasting pan for 1 hour; reduce heat to 400 degrees F and roast until the skin is deep golden and crackly (160 degrees on an internal meat thermometer), about 3 hours.
  • Let rest at least 15 minutes before carving.
  • Remove the crispy skin and cut into smaller pieces (you can use kitchen shears).
  • Carve the meat, parallel to the bone, all the way through to the bone.

EASY ROAST PORK SHOULDER

2kg pork shoulder joint
1 tbsp vegetable oil
1½ tsp fine sea salt
1 large onion, sliced

Steps:

  • Heat the oven to 240C/220C fan/gas 9. Remove any packaging from the pork, retaining the string, and pat dry with kitchen paper - you want the skin to be as dry as possible. Score deep cuts into the skin in a diamond pattern using a sharp knife (you want to cut into the fat). If the skin is already scored, make sure each cut is dry and can be easily opened. Rub the oil into the skin, rubbing it well into each cut, then sprinkle the salt over in an even layer, rubbing this into the cuts, too.
  • Scatter the onion slices over the base of a large roasting tin and sit the pork joint on top. Roast for 20-30 mins, or until the skin starts to blister and bubble. Put the kettle on to boil.
  • Pour half a kettle of boiling water around the joint to cover the base of the tin, ensuring it doesn't drip onto the skin. Reduce the oven temperature to 180C/160C fan/gas 4. Roast for another 2 hrs 30 mins, or until the meat under the skin is very tender when pressed. There's a lot of fat in pork shoulder, so cooking at a low temperature this way ensures the meat doesn't dry out - if needed, it can cook for up to 3 hrs.
  • Turn the oven back up to 220C/220C fan/gas 7 and continue to roast the pork for 20-25 mins until the skin is very crisp and has started to harden - it should feel brittle when tapped with a knife. If needed, cook for 10 mins more to achieve this. Remove the pork from the oven and rest for 20 mins in the tin, loosely covering with foil. Remove the crackling in large pieces, then break into smaller chunks. Carve the meat and serve alongside the crackling and your favourite sides.

1 5 lb. pork shoulder

1 T. adobo seasoning
1/4 c. sofrito
1 green pepper, minced

SPANISH RICE:
1/4 c. diced pork

2 T butter
2 envelopes sazon seasoning

2 c. long-grain rice

  • SOFRITO: In a food processor add green pepper, onion and cilantro. Pour in oil and mix well. Set aside 2 T. for Spanish Rice. Can keep in refrigerator for up to 10 days. ROAST: Preheat oven to 300 degrees. Cut off 2 slices (about 1/4 c.) of pork and set aside for Spanish Rice.
