1 large skinless salmon fillet (1 1/2 pounds)
Coarse salt and ground pepper
1 tablespoon unsalted butter
2 teaspoons all-purpose flour
1 cup dry white wine
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 450 degrees. Place salmon on a rimmed baking sheet; season with salt. Roast until opaque throughout, about 15 minutes.
  • Meanwhile, in a small saucepan, melt butter over medium. Add flour, and cook, whisking, 1 minute. Add wine, and bring to a boil; reduce to a simmer, and cook until liquid is reduced by half, 8 to 10 minutes. Stir in chives; season with salt and pepper. With a fork, gently break salmon into large chunks, and serve topped with white-wine sauce.

3 teaspoons Italian seasoning

  • Preheat oven to 400°. Place the first 6 ingredients in a roasting pan; toss with oil, garlic and seasonings. Roast until tender, 50-60 minutes, stirring occasionally. Cool slightly., Transfer half of the vegetables to a food processor; add 1 can of tomatoes. Process until smooth; remove to a 6-qt. stockpot. Repeat with remaining roasted vegetables and tomatoes., Add wine to sauce; bring to a boil. Simmer, uncovered, 10 minutes to allow flavors to blend, stirring occasionally., Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. 1/2 teaspoon basil

1 small eggplants or 1 small zucchini
8 garlic cloves, peeled (Wrap in foil)
2 (28 ounce) cans diced tomatoes (Italian flavored works well, but omit oregano or basil)

1/4 cup cups red wine

  • Mix veggies with marinade
  • place with the foil wrapped garlic in a jelly roll pan (or cookie sheet) at 400 for about 45 minutes, depending how small your veggies are cut (your garlic may need longer cooking time than the veggies).
  • After veggies are cooked, mash garlic with fork (or garlic press) and mix half in with the veggies and save half for the tomato sauce.
  • Mix sauce ingredients in large saucepan (including roasted garlic).

1 large green bell pepper, diced
1 large red bell pepper, diced
1 white onion, diced
1 garlic clove, crushed

Steps:

  • In a skillet over medium heat, warm up the olive oil.
  • Add the green and red bell peppers, onion and garlic and cook, stirring, for 4 minutes.
  • Add the zucchini and mushrooms and cook, still stirring, for a further 4 minutes.
  • Add the dry white wine and simmer uncovered for 4 minutes. By the end of the 4 minutes, the wine should have reduced a little.

  • Add the cream. Turn up the heat a little and simmer for 5 minutes, until the sauce has reduced and thickened.

1 tbsp olive oil
3 lbs chicken thighs (bone-in, skin-on)
Salt and pepper
Italian seasoning ((divided))
2 tbsp butter
1 medium onion (diced)
3 garlic cloves (chopped)
3-4 thyme sprigs (leaves only)
1 tbsp flour (for thickening the sauce)
½ cup white wine
1 cup chicken stock
½ cup heavy cream
Salt and pepper to taste

Steps:

  • Preheat oven to 400 F.
  • Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt, pepper and Italian seasoning.Cook chicken thighs on medium-high skin side down first to brown it for 4-5 minutes. Flip and cook on the next side for about 4 minutes, for a total of 8-10 minutes. Remove chicken from the skillet.
  • Add 2 tbsp butter, onion and sauté until the onion is browned, 3-4 minutes. Add chopped garlic, thyme and 1 tsp Italian seasoning and cook for another minute.Next add 1 tbsp flour and cook it in the oil of the pan for only a minute, until it's no longer white. Add the wine slowly to the hot pan, increasing heat from medium-high to high and cook for a few minutes.Now add chicken stock and heavy cream. Stir to combine and let everything cook until it reduces slightly, about 5 minutes. Make sure to taste the sauce and add salt and pepper, to taste.
  • Return chicken thighs back into the pan with sauce. Put in the oven uncovered and cook at 400 for 35 minutes. Once time is up, take the pan out of the oven, check if chicken thighs are done. Sprinkle with fresh thyme and serve with roasted vegetables, mashed potatoes or rice.

3.7 pounds/1.7 kilograms whole chicken (free-range, patted dry inside and out)
1 lemon (halved)
3 bay leaves
1 tablespoon olive oil
1 1/2 tablespoons fresh rosemary (​finely chopped)
1/2 teaspoon sea salt
13.5 ounces/400 milliliters chicken stock
3.38 ounces/100 milliliters white wine
20 cloves garlic (unpeeled)

Steps:

  • Heat the oven to 375 F (190 C).
  • Pat the chicken dry inside and outside. Place lemon halves and bay leaves in the chicken cavity. Tie the legs together with kitchen string.
  • In a small bowl, mix together the olive oil, rosemary, and salt. Rub mixture over the entire chicken.
  • Place the chicken in a large baking dish. Set aside.
  • Bring the chicken stock, white wine and garlic cloves to a simmer in a medium saucepan. Pour the liquid and garlic cloves into the baking dish around the chicken. Cover baking dish with foil, crimping the edges tightly around the dish so that no steam can escape. Roast for 1 hour 20 minutes.
  • After this time, remove chicken from oven and remove the foil. Place chicken back in the oven, and roast for another 20 minutes or until the chicken is golden brown.
  • Remove chicken from the oven and loosely cover it in tinfoil. Let it rest for about 15 minutes.
  • Spoon the sauce from the baking dish into a saucepan, and keep it warm. You can strain some of the garlic cloves into the sauce, or just keep the cloves whole.
  • Serve chicken with garlic sauce on the side. Place a few garlic cloves on each plate so that guests can squeeze garlic onto the chicken if they wish.

  • Make sauce:
  • Melt butter in a 3-quart heavy saucepan over medium heat and whisk in flour, then cook roux, whisking, 3 minutes. Add stock in a stream, whisking constantly to prevent lumps, then bring to a boil, whisking. Reduce heat and simmer, whisking occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper.
